What is a citrus dry brine?
A Citrus dry brine is a rub for meat that infuses it with citrus flavor and pre salts it before cooking. It allows the extra moisture to be removed and the juice from the meat to be retained. You can find my recipe for it here. And it’s also yummy on chicken, pork, and fish! A dry brine is also more forgiving for time than a wet brine. Should I Spatchcock my tukey before cooking it? IMO (In my opinion) spatchcocking your turkey helps it to cook more evenly. I think it keeps the meat more juicy and delicious! If you need help learning how to spatchcock a turkey or chicken, you can watch my video on it here. It seems a little scary at first but once you’ve done it once it’s super easy! I recommend sharp kitchen scissors! How long will it take to cook my Citrus Dry Brined Turkey? It usually takes about 10-13 minutes per lb of turkey to smoke it in the following manner. I recommend smoking your turkey at 225 for the first 2 hours then turning it up to 350 for the remainder of the smoke for a 12-15 lb turkey. If you have a larger turkey, keep it at 225 for up to 3-4 hours then crank it up so the skin gets crispy but not overdone. You will want to make sure your turkey is cooked until 165 degrees. Then let it rest for a few minutes and it’s ready to carve! I recommend using the MEATER wireless thermometer! It has an app for your phone to monitor the temperature of the turkey. Gluten Free Citrus Dry Brine is super easy to make and it adds tons of flavor to turkey, chicken, pork, or fish!
What is a dry brine?
A dry brine is basically pre salting the meat before cooking it. It is usually a combination of salt, sugar, and seasonings. In this case, I used citrus peel to add a delicious flavor to the turkey! This is delicious on chicken, pork, and fish as well! I also used swerve brown “sugar” because we are following a ketogenic diet to lower the carb count. You rub the mixture on the meat and let it sit uncovered in the refrigerator for a period of time before you cook it depending on the type of food. What is the difference between and wet and dry brine? A wet brine uses a solution of water, salt, and seasoning whereas a dry brine uses salt, sugar, and seasonings without soaking it in water. The dry brine draws the natural moisture out into the meat and makes it juicy. A wet brine saturates the meat with the solution and you need to be careful not to dry out the meat. How long do I leave the dry brine on meat?
The type of meat you are using depends on how long to leave it on the meat. A dry brine is more forgiving with the amount of time left on the meat than a wet brine is. You can dry brine a turkey for up to 3 days ahead of time. A whole chicken is usually 8-24 hours. A skin-on chicken breast, thighs, legs, or wings is 2-12 hours. Skinless chicken is about 1/2 to 1 hour. Pork is similar to turkey and can be done for up to 3 days. Fish is about 30-40 minutes. You will want to cook the meat once it is finished brining to get the best flavor and to keep it moist. It is best to leave it uncovered in the fridge while dry brining. Do I need to rub the brine off before I cook the meat? You do not need to rub the brine off of the meat before you cook it. if you use the correct salt to herb and sugar ingredients it is not too salty. You also do not want to rinse the meat before you cook it. What do I need to make this Citrus Dry Brine? This recipe is super easy to make and only requires a few ingredients! You will need the following: Two oranges Three Limes Coarse salt Three lemons 1 TBSP Herbs De Province 2 TBSP Poultry Seasoning- if you are making fish I leave this ingredient out. 2 TBSP Brown Sugar- I used brown swerve to keep the carbs lower. You also need a bowl, spoon, and a Microplane grater.

I love to make my gluten free savory stuffing for Thanksgiving! We like meaty stuffing and this one is so delicious!
My gluten free savory stuffing is perfect for the Holidays!
I love to pair this stuffing with turkey on Thanksgiving! It is also really yummy in the middle of a pork crown roast! Heck, we like to just eat it on its own too since it has sausage in it! If you are following a ketogenic diet, I have added an option for how to make it lower carb! I know that I don’t want to feel like I am missing out on holiday foods, but I don’t want to be sad looking at the scale in January! What do I need to make this recipe? For this gluten free savory stuffing, you will need the following ingredients: Gluten free bread or keto bread, such as Unbun or fathead dough made into bite sized squares or my keto cornbread. Pork sausage- gluten free Baby portobella mushrooms Dried Cranberries- leave out for keto. Yellow Onion Garlic cloves Italian seasoning Red Pepper Flakes Parmesan Cheese- add extra for keto White Wine- use a low carb wine like Secco Wine Club for keto. Chicken Stock Salt and Pepper How do I make this recipe? The first thing is to toast the bread. (If you are using my keto cornbread, you would want to make it the day before) You can butter it or drizzle it with olive oil and toast it under the broiler. Flip it over so both sides are toasty. Cook the sausage so it is crumbled like ground beef. Add the other ingredients to the pan except for the bread, wine, cheese, butter, and chicken stock. Saute until the onions are soft. Add red pepper flakes to taste. In a large bowl, combine the warm ingredients with the bread. Pour the wine and stock over and stir to combine. Butter a large baking dish. Pour the bread mixture into the baking dish. Cube butter and put squares over the top. Sprinkle parmesan over the top. Bake in a 375 degree oven for about 45 minutes. This gluten free caramel apple martini is a festive cocktail for Halloween! You can easily make it a mocktail by leaving out the vodka!
What’s in this caramel apple martini? Since Ultima Electrolytes came out with an apple martini flavor this year, I thought it would be fun to make a Caramel apple martini with it! It has a fun green color and it’s bursting with apple flavor plus its gluten free!
The flavor in the Ultima Replenisher reminds me of a jolly rancher candy! It’s perfect for this cocktail! I also added Gluten free vodka to make it a cocktail. If you want it to be a mocktail, just leave out the vodka! I used a maraschino cheery for a garnish in the middle….you could also use a candy eyeball or something more spooky! You will also need some gluten free caramel sauce. I found it in the ice cream cone area at my local Fry’s grocery store. How do I make it? It’s actually a super easy cocktail to make! Mix your Appletini Ultima packet in 6 oz of water. Stir until combined. It will be a really bright green color. If you are leaving it as a mocktail, use 8 oz of water. Pour it into a martini shaker. Add in 2 oz of vodka. I like Titos but you can use your favorite gluten free vodka. Drizzle caramel sauce on the inside of the martini glass. Add ice to the shaker and give it a good shake so it’s nice and cold. Pour into the martini glass. Add a maraschino cherry or candy eyeball for a garnish! Enjoy!

Gluten free Mummy Dogs are a super cute and easy dinner or appetizer for Halloween! They are ready to eat in less than 30 minutes!
How do I make these super cute gluten free mummy dogs? These dogs are so easy to make! I whipped up a batch of my FATHEAD dough to keep it keto, and wrapped them around all-beef hot dogs to make the mummies! You can use olives or capers to make the eyes:) I tried this recipe first with the thicker sausage and it didn’t work out well. I found that you need to roll the fathead dough pretty thin for it to stay in the mummy shape. Protip- put a little olive oil on your hands before rolling out the dough so it doesn’t stick. If you wanted them not to be keto or low carb, you could use a premade gluten free pie crust and cut it into strips and wrap them around as well. It would also be delicious! What do I need to make this recipe? You will need the following ingredients: All ingredients for fathead dough- cream cheese, mozzarella cheese, almond flour, and an egg. Gluten free hot dogs- just the regular size not the sausage ones. Olives with pimentos. Capers Any dipping sauces you like.

These gluten free spooky calzones are fun to make for dinner on Halloween! I made them low carb and they are delicious!
How do I make these Spooky Calzones? These spooky calzones are super easy to make and fun to get creative with what spooky shape you are going to make! I made mine into little ghosts and I attempted to make some into Mummys, but they didn’t look as cute. I used my FATHEAD DOUGH recipe for the crust. It’s super easy to make and only takes a couple of minutes to whip up! You can fill them with your favorite pizza toppings! I kept these simple and just used pepperoni and cheese. Some of our favorite fillings are: Ground Beef Yellow Onion and Saurkraut Ham and Green Olives Tomato Basil Mozzarella Fig Chicken and Brie All the Italian meats What are some of your favorites? Pro Tips: If you put a little bit of olive oil on your hands before you start handling the fathead dough it will stick less to your fingers. These super cute Gluten Free Mini Mummy Stuffed Peppers are a delicious Halloween appetizer!
Halloween is just around the corner! I love whipping up cute foods for the evening! Since it can be a super busy day with getting the kids out trick or treating, I usually make a few appetizers to have out for snacking. I love to make a big pot of instant pot chili or my Mummy Meatloaf. Both are protein-packed and perfect for a night of sweet treats! Here’s what you need to make these Mini Mummy Stuffed Peppers: Mini peppers Cream cheese or dairy free cream cheese. Shredded cheddar cheese or dairy free shredded cheddar cheese. Taco seasoning- a gluten free variety. Thick shredded cheese for on top to make the mummy look, or pull apart string cheese. Use dairy free if you want them to be nondairy. A jar of gluten free capers. Optional ingredients- green onions, chopped cooked bacon, hot sauce, chopped chicken breast, etc.
Here’s how you make them:
Wash and dry your peppers. Cut them in half the long way. Don’t remove the stem otherwise, the filling can ooze out the top. Remove the seeds. Mix the other ingredients together in a bowl except for the thick shredded cheese. Scoop the filling into each mini pepper. Put two capers on each pepper to make eyes. Arrange the thick shredded cheese or string cheese on the pepper to make it look like a mummy. Bake in the oven for about 15 minutes or until the cheese starts to melt. Serve with your favorite Spooky Halloween foods. Pin now and make it later.

Irish Coffee is a delicious sweetened coffee drink with whiskey topped with unsweetened whipped cream. So Yummy!
I can still remember the first time I tried it! We were in Vegas for my sweet friend’s 40th Birthday! We stayed in downtown Las Vegas and there was an Irish Pub right by our hotel. Her birthday is the day before St. Patty’s Day and there was a big parade for St. Patty’s. We sat in the pub and had Irish Coffee listening to the bagpipes rehearse before the parade. It was so cool!
Have You Tried Irish Coffee? I think it’s a fantastic drink to warm you up on a cool day or to add another adult beverage to your brunch routine. It is super easy to make and tastes fantastic! You only need 4 ingredients to make this beverage! Irish Coffee contains coffee, sugar, whiskey and whipped cream. It’s not overly sweet but it is creamy and delicious! If you find it is too much whiskey feel free to cut back on the pour. Is Whiskey Gluten Free? Whiskey can be made from grains, however, the distillation process removes the gluten according to the Beyond Celiac Website. Most Whiskies are gluten-free after distillation as long as they don’t add anything back into them such as flavors. However, if you react to it please don’t drink it. To make Irish Coffee, I used an Irish Whiskey known as Jameson. You can find it in almost any store that sells alcohol. How Do I Make Irish Coffee? It is super easy to make Irish Coffee! You are only a few minutes away from enjoying this delicious drink! First thing is to brew some coffee. I have a Keurig, so I made 1 cup of coffee. Place the coffee in a small pot and put it on the stove on low. Add the sugar to the coffee. Whisk it in until it dissolves. This gives the coffee a delicious sweet flavor. Remove from heat. Whip your cream. I used coconut cream and put it in my blender for a few seconds until it was thick. You can buy a can of coconut cream or refrigerate a can of full-fat coconut milk in the fridge and then scoop out the solid part. You want to whip the solid part and it makes perfect whipped cream! If you want to use dairy cream whip it until it has soft peaks. If you like sweet coffee drinks, feel free to sweeten the whipped cream or coconut cream! Pour the shots of whiskey into the coffee and stir to combine. In a coffee cup or decorative coffee glass, pour in some of the coffee and whiskey mixture. Scoop a little cream onto the top.
