These gluten free BBQ Pressure Cooker Ribs are super delicious and fall off the bone! The Instant Pot makes them easy for a weeknight dinner! Gluten Free BBQ Pressure cooker or Instant Pot ribs are a quick weeknight meal! Did you get a pressure cooker or an Instant Pot this year? Are you looking for a fast and delicious meal for your family? I made these quick and easy pressure cooker ribs in less than 45 minutes! It was one of those days when I couldn’t decide what to make for dinner. I have that problem too occasionally just like everyone else. It was a lazy rainy day here and we had company in town. I couldn’t decide what I wanted to make for dinner. Should we go out to eat? What should we have? Finally, at about 3 p.m. it came to me Ribs! The only problem was they were in the freezer. So, I quickly took them out of the freezer and put them in a zip lock bag in a bowl full of cool water. I needed to thaw them a little so I could separate them. What do I Need to Make These Gluten Free BBQ Pressure Cooker Ribs? You will need a pressure cooker or an Instant Pot. Pork Baby Back Ribs BBQ sauce Dry Rub seasoning That’s it! Super easy! I finished the ribs in our smoker to add the smoky flavor and make the sauce sticky, but you could finish them in the oven. You really don’t want to cook them, just heat up the sauce. How Do I Make These Delicious Looking Ribs? So glad you asked! I would love to share that with you! To begin, remove the silver skin from your ribs. It’s kinda gross, but it makes a huge difference on how tender your ribs turn out! The best way I have found to remove it is to use a paper towel and grab it and pull. It should just pull off Here’s a YOUTUBE video on how to do it: Like I said it’s a little gross, but once you do it a few times it’s actually pretty easy. Rub your ribs with your favorite dry rub. I used Paleo Powder. Place your Ribs into your pressure cooker standing up so they curve around. You can cut them to fit. Add about 1/2 of a cup of water to the bottom of the pot. Put your lid on and turn the pressure cooker to manual pressure for 35 minutes. Now you have time to sit back and relax or make a side dish to go with the pressure cooker ribs. Once the pressure cooker is finished, CAREFULLY release the pressure. Open your lid and your ribs will be very tender. Carefully lift them onto a sheet pan and brush your favorite sauce on them. You can put them in a 350 degree oven for about 10 minutes to get the sauce sticky. I put mine in my smoker for about 15 minutes on 225 just to get the smokey taste and make the sauce sticky. They should be falling off of the bone and super yummy! I am seriously drooling right now typing this out. I might have to go heat some up…. hang on BRB. LOL. Pin Now Make Them LATER! Pressure cooker braised short ribs in red wine sauce is a meal that seems fancy but is casual! They are super easy to make in your Instant Pot or Pressure Cooker! Instant Pot or Other Pressure Cooker? There are many brands of electric pressure cookers out there. Personally, I don’t think you can go wrong with whichever one you purchase as long as you get the settings you need and will use. We purchased the Pampered Chef Quick Cooker for my oldest daughter for Christmas… if she’s reading this she will know what one of her gifts is…. but I decided on it because it is so easy to use. I hosted a party so I got it for the same price as the Instant Pot. THIS IS NOT SPONSORED. But I love my Instant Pot but thought the other version would be easier for her to use. It’s just about finding what works best for you! I knew it had to have the sautee setting because it’s essential to make braised meats. What you need to make pressure cooker braised short ribs:I made boneless beef short ribs for this recipe because they have more meat and less fat and bone. I wanted a higher yield of protein. Next time I might mix some boneless and some bone-in ribs for presentation. People like to see the meat falling off the bone. Boneless Beef Shortribs Tomato paste Mirepoix- carrots, onion, and celery chopped 1 garlic clove Tapioca starch Paleo powder or any beef seasoning mix Salt and pepper Beef Broth Avocado oil Red wine That’s it! It all goes into your Pressure Cooker or Instant Pot and Voila dinner is ready! I served these with mashed cheesy cauliflower but you could make them with mashed potatoes, sweet potatoes, rice or any veggie noodle you like. So many delicious options. Here’s the step by step for these yummy pressure cooker braised short ribs:Turn your Pressure Cooker on to the Sautee setting. Add a little oil to the pot. Add the Tapioca starch, Paleo Powder, Salt, and Pepper to a bowl that is big enough to put the ribs in. Dredge Shortribs in the mixture. Sear Ribs on each side in the Instant Pot. Work in batches until all are done. Add Mirepoix and garlic. Sautee until the vegetables start to get soft. Add tomato paste and red wine. Continue to simmer so it reduces in volume. It smells delicious at this point in the recipe! Add the meat back to the pot and snuggle it down into the sauce. Add additional beef broth to cover the ribs. Shut the sautee mode off. Put the lid on and turn it on to manual mode for 75 minutes. It will be worth the wait! I promise! Listen for the cooker to seal and you are on your way to a delicious dinner. Make your side dishes and Voila! Fancy, not fancy dinner is served! YOUTUBE: If you would like to watch this recipe being made here it is! I hope you enjoy this recipe as much as we do. As Always, Best Wishes for Gluten Free Dishes! XO, Michelle This Instant Pot Fajita Chicken can be served over rice, cauliflower rice, zoodles or a salad or eaten as a soup! It is very versatile based on your needs. I love that it is made in one pot and the pressure cooker makes it cook quickly. And only one pot to wash is awesome! I don’t’ really like washing dishes so the less to wash is better!
We had Bible study last night and this is the dish I made this fajita chicken for our potluck. Some people ate it over a salad and others ate it like soup and added rice. It was cool and rainy here so comfort food hit the spot. The Phoenix area had more rain in the last 3 days that it has all year! We didn’t get much flooding in our part of the Valley, but other parts have lots of flooding. I love having a break from the hot weather and hope the fall temperatures are here to stay! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle This gluten free bacon, corn, and potato chowder is my gluten free version of one my Dad makes. It’s been cool in the morning and evening in AZ so I was craving my Bacon Corn and Potato Chowder. It’s the perfect comfort food. I made this version dairy free because our oldest daughter can’t eat dairy and I am giving her some of it to take home Our whole family has been cutting back on dairy actually. I find my seasonal allergies are better when I don’t eat a lot of it, and since I cook everyone else gets to follow along.
I love chowder when the weather is cool. It is so filling and warm. My Dad used to make a version of this when I was growing up. It stands out in my mind because my Mom did most of the cooking when I was younger, but I remember him making chowder. So, part of my love for it is nostalgic and part of it is just because it tastes so yummy. If you are feeding a crowd, this is a great recipe to double and you can feed a lot of people. Pair it with a big green salad and or hot biscuits and voila you have a perfect meal. In fact, let me know when you are making it and I will come over. haha! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Beef tips with coconut cream mushroom sauce is a one pot gluten free and dairy free meal! This was my first time making beef tips with coconut cream mushroom sauce. I have a go-to way of making my sauce for other meats so I incorporated it here! We ate it over arugula, but you can serve it with mashed potatoes, sweet potatoes or rice if you like.
It only took one pan to make this meal so dishes were a snap! I love when that happens. Beef tips are parts of the steak, but not necessarily all the same cut of meat. I was concerned it would be chewy so I marinated it during the day in a quick sauce of coconut aminos, avocado oil, garlic, Italian seasoning and balsamic vinegar. I honestly didn’t measure the ingredients, I just poured it into a ziplock bag and put the meat in. Once I sealed it I squished the liquid onto the meat and put it in the fridge. You can substitute your favorite marinade ingredients if you would like. The marinade made the steak sear a pretty color of brown as the vinegar carmelized in the pan. I love the tangy flavor it gave this dish. If you love this beef tips recipe, you might also like: Instant Pot Terriyaki beef Wine Braised Beef Short Ribs I hope you love this recipe as much as we did. As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Gluten Free Tom Kha Gai is a comforting creamy and delicious Thai soup. You can use chicken or shrimp or a combo if you like! This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. But we don’t love super spicy food so feel free to spice things up a bit! Tom Kha Gai One Pot Meal! Creamy and delicious. Tangy and comforting Thai soup. INGREDIENTS

As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Tuscan Chicken is full of flavor and delicious coconut milk makes it creamy! This Tuscan Chicken is creamy and delicious. I served it with spaghetti squash “noodles” and it was perfect! You could serve it with rice or pasta as well. It is comfort food that is healthy too!
We just got back from vacation and I was craving a meal made in my own kitchen! IT was nice not to have to cook as much but I honestly missed it. I love that our families try so hard to cook safely when we visit. It is so nice to enjoy everyone and have safe food to eat too! So thankful! Plus they are mostly just really great people. We miss them since we live so far away so try to enjoy every minute with them when we are there. This dish makes me think of our trip to Italy. Creamy sauce with fresh green and red. Yum! Makes me wish there were more leftovers to eat! The next time I make this I will definitely double the recipe for leftovers. Pro Tips for this Tuscan Chicken: If you want to make it with dairy, you can substitue the coconut milk for heavy cream. You would use about 1 cup of heavy cream. I think that would be delicious as well! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle This gluten free Greek Chicken cooks in your Hot Logic container while you are traveling, working or busy doing other things! What is a Hot Logic?
When I first heard the term hot logic, I thought it was some kind of trendy phrase about using your smarts.. as in logic. LOL! A hot logic is an insulated bag with a heating element in it that cooks and heats up the food. I found mine on AMAZON- of course because most things come from there lol. Here’s How the Hot Logic Works: You can put food in a glass pyrex container with a lid into the hot logic bag and plug it into an outlet or cigarette lighter to cook or warm the food. The best thing is that it brings food up to temperature but does not burn it! I have made greek chicken in it from raw chicken and also heated up precooked scrambled eggs when traveling. It’s so versatile! We have both sizes so we can make more or less food depending on if our girls are with us. Where Can I Use It? This invention just made potlucks, tail gaiting, travel, RVing, Boating, Camping, and meal prep so much easier! I am going to buy one for our youngest daughter when she goes to college to cook gluten-free food in her room. It will be convenient to meal prep for her and she can cook it in this baby! Hopefully, the apartment won’t consider it a hot plate? We will keep our fingers crossed! What Have I Cooked In It? In the mini: Burritos, taquitos, chicken and vegetables, scrambled eggs, omelets, leftovers, etc. In the Family Size: Greek Chicken Breasts, Lasagna, Taquitos, Nachos, Burritos etc… You can even purchase a pre made freezer meal in cardboard and it will cook that! I haven’t tried it yet, however that is mostly because it’s hard to find gluten-free versions of those. Here’s Where You Can Find it On AMAZON: Find It HERE! If you purchase an item by clicking through my blog I may get paid a small commission, however it doesn’t affect the price you pay. Here is my disclosure policy. Here’s The Greek Chicken Recipe: Greek Chicken in my Hot LogicAdd your raw ingredients, plug in your Hot Logic and it does all of the hard work. SERVINGS 2 INGREDIENTS

I hope you enjoy this recipe and try the Hot Logic cooker! As always, Best Wishes for Gluten Free Dishes! XO, Michelle Gluten Free Vegan Chili is a hearty bean chili with lots of delicious smoky flavors! I never thought I would make Vegan anything. I, however, love this Chili. Many of you know that I love meat. I love almost every kind of meat except liver unless it’s Foie Gras. I love that kind of liver. Crazy I know. Anyway, you didn’t look at a vegan chili recipe to hear me talk about meat. I have been vegan for two weeks to see if it would affect my blood work for the positive.
I actually really enjoyed the food and it made me realize a few things. Things I discovered by being Vegan for two weeks:
