Peanut butter oatmeal chocolate chip cookies with a side of MNM’S please!
These cookies were the first sweet thing my husband fed our oldest daughter when she was 9 months old and I was at the gym!
LOL, We joke about it now but at the time I was like …… that’s it.. we’ve ruined the baby! HAHA!
I usually make some kind of chocolate chip cookie for back to school every year (Thanks to my friend Christine, who did this for her boys and my girls found out and now it’s been a thing since they were little :)), but this year is a little different. We are moving our youngest daughter to her apartment for college this weekend. Insert crying face. Insert excited face.
Bring on Empty Nesting! We have talked about it coming up for like a year, but now it’s only a few days away! I may need to make these cookies for emotional eating support. Just kidding…
Let’s Talk About Gluten Free Oats-There are many kinds of gluten free oats out there.
There are basically 2 different kinds to my knowledge. Mechanically or Optically sorted and Farmed Gluten Free using the purity protocol. I personally only eat oats that are purity protocol because I don’t trust the mechanically sorted ones. But, everyone is different and you have to do what is best for you.
The brand I use is Montana Gluten Free. They ship their purity protocol oats right to your door! I love food delivered to my door. I have used their products for over a year and have never had a reaction to them. The Oats I buy from them are tested to be less than 3ppm gluten. This is not a paid endorsement
An example of mechanically or Optically sorted oats are Bob’s Red Mill. They say on their website that they won’t contain any more than 19 ppm of gluten.
The oats used in Cheerios and other cereals are sketchy and I would not recommend eating them if you have Celiac. See what the Gluten Free Watchdog says HERE.
Some people cannot handle oats at all because they contain Avenin. It can cause similar symptoms to someone who is celiac when they eat wheat. That’s no fun!

How Do I Make These Cookies?
You will need the following ingredients and some willpower as to not eat all of the dough before you bake them Ha Ha!
In the above pictures of these delicious morsels, I added MNM’s too. You can add them if you want or leave them out either way they are yummy!
1 Cup Butter- softened
1 C Raw Sugar
1 C Coconut Sugar or Brown Sugar
1 Cup Peanut Butter or Almond Butter
11/2 Cup Gluten Free Flour- I used Jovial Pastry Flour
2 C Oats- purity protocol
1 TSP Baking Soda
1 Pinch of Salt
2 TSP Vanilla
1 TSP Baking Powder
2 C Chocolate chips/MnM’s or combo
Oh wait you have to bake them… resist the cookie dough……
Preheat your oven to 350 degrees F.
Start by Creaming together your butter and sugar in a mixer. Add the eggs one at a time. Add the vanilla and peanut butter.
Slowly add the dry ingredients and mix to combine.
Stir in the chocolate variety.
Scoop onto a Silpat lined baking sheet. I use a cookie scoop.
Bake for 12-14 minutes or until just turning brown.
Remove from oven, let cool …if you can wait.
Try Not to lick the spatula…..
