Pumpkin Pie Coffee Creamer is one of my favorite things about fall! I love the smell of cinnamon and spices combined with coffee… yummy! It’s like eating pumpkin pie with coffee but it’s in one cup! Let fall come because I am ready for all of the pumpkin treats! Original Post was written 09/03/2014 and updated 1/24/22. WHY DO I MAKE MY OWN PUMPKIN PIE COFFEE CREAMER? I recently had to break up with a seasonal icon that signified fall for me. For many years when this latte came out, I knew it was fall! AKA- Starbucks. Due to the ingredients used by said company and because they possibly contain gluten (in some flavors) and not to mention gross chemicals I had to call it quits. See Food Babe. HOW DID THIS PUMPKIN PIE OR PUMPKIN SPICE TREND START? According to Corporate Coffee Systems, the trend started over a hundred years ago with Pumpkin Pie or Pumpkin Spice things but the Pumpkin Spice latte craze started here in the USA in 2003. Pumpkin Pie Coffee flavors started popping up at cafes in the late ’90s and it took off from there! I can’t say that I disagree with the trend that keeps on trending! I used to get a Pumpkin spice latte or Pumpkin spice Frappuccino often in the early 2000s! Pin me NOW make me LATER! Here is my take on Pumpkin Pie Coffee Creamer. It is not as sweet as said company’s but I don’t like sweet coffee. If you like your coffee sweeter you can add more honey. Happy Pumpkin Season! WHAT DO I NEED TO MAKE PUMPKIN PIE COFFEE CREAMER? Gluten Free Pumpkin Pie Coffee Creamer: 1 can coconut milk (full fat) 2 cups unsweetened almond milk 1/2 can pure pumpkin 3 – 4 teaspoons pumpkin pie spice 1/2-1/3 cup honey 2 vanilla bean pods split and eseeded with a knife. HOW DO I MAKE THIS? Heat all ingredients in a pot until warm. The honey should melt and the vanilla should fragrance the milk mixture. I whisked to combine as it got warm. Place in a BPA Free container and store in your fridge! Mason Jars work great for storing coffee creamer. I made enough for 2 mason jars. I decided to keep one and give one to a friend for taste testing. Thankfully, she does not like sweet coffee as well! Split the vanilla beans and scrape the seeds into the heated milk. Gluten-Free Philly Cheesesteak Stuffed Potatoes are a delicious appetizer! They are fun to make and are not too labor-intensive! You can make them using mini potatoes like I did or make them with larger potatoes and have them as a meal. Either way, they are delicious! September is here and September brings Fall! I am very excited about cooler weather and all things pumpkin! (Spoiler alert… pumpkin recipes are on the way) Today’s recipe is one I made to take to a BBQ this weekend. It would also be a great recipe for tailgating since football has started. It is definitely a crowd pleaser! Original Post was written 09/02/2014 and updated 1/24/22 WHAT DO I NEED TO MAKE PHILLY CHEESESTEAK STUFFED POTATOES? To make this recipe you will need the following ingredients: Green Peppers Yellow Onions Mushrooms Pastrami Sliced Provolone Cheese Potatoes- I used mini potatoes for appetizers but you could use big potatoes for lunch or dinner. HOW DO I MAKE THEM? The first step is to chop all of the veggies and the pastrami into small pieces so they are easy to stuff into the potato. The next step is to sauté all of the veggies and then add in the pastrami. Bake the potatoes, either in the microwave or oven. Cut them in half then scoop out the middle. Save the middle for hash browns tomorrow :) Drizzle the potatoes with oil and broil them in the oven to make them crispy. Lay a small piece of sliced provolone cheese in the bottom of each potato. Put the toppings into the potatoes and put another slice of provolone cheese on top. Put them in the oven to melt the cheese. When it’s brown and bubbly, they are ready to eat! XO, Michelle I love how easy this gluten-free buffalo chicken dip is to make! You just dump a few ingredients into a crockpot, stir it up, heat it up, and enjoy! I think it’s the perfect party appetizer because it doesn’t take a lot of time to make it and it’s a crowd-pleaser! This recipe makes a large crockpot full of dip. You can cut it in half to make a smaller amount. Original Post was written 09/01/2014 and updated 1/24/22 WHAT DO I NEED TO MAKE GLUTEN FREE BUFFALO CHICKEN DIP? You will need the following ingredients: 4 cups diced cooked chicken- I like to use a gluten free rotisserie chicken. 1 large container of greek yogurt. A bag of shredded cheddar cheese (I used white cheddar). 1 container gluten free blue cheese (I always look at the manufacturer’s website to see if it contains gluten). 1/2 container buffalo sauce. You can choose mild to spicy. I like to use a Paleo Buffalo sauce. 4 green onions diced Place all ingredients except the green onions into the crockpot and stir to combine. Add green onions before serving. You can serve it with celery sticks, tortilla chips, gluten free crackers, gluten free baguette slices or carrots. I like to chop up the rotisserie chicken in small pieces to put in the dip. Chop Chicken. Add to the crockpot. If I am taking the dip to a party, I put the chopped green onions in a bowl to take along. I sprinkle them on top right before serving. Once you have all of the ingredients in the crockpot, stir it all together. Once it is nice and hot get your chips, celery, carrots or crackers ready to dip in! Sprinkle onions before serving. Yum!
