It is the same recipe as my Taco meat pie, only you add the pastry crust to the top and omit the bacon. If you want to keep it lower carb, use the Fathead dough recipe to make the crust on the top! Halloween is a busy day if you have littles to take trick or treating and you can make this ahead of time then bake it when you are ready. A big salad or zoodles would be perfect with this. I love having a big protein before candy lol! Mummy Meatloaf is loaded with protein so it will fill you up before the sugar brings you down. Our kids are 19 and 16, so we won’t be taking them trick or treating tonight. Our oldest lives on her own and the youngest doesn’t go trick or treating anymore. She will help us hand out the candy in our neighborhood. I have an exciting Halloween puzzle to do and the Blackhawks play hockey, so that is no doubt what will be going on at our house. We have hosted Halloween parties and Halloween night at our house with food, family, and friends but now that our girls are older, we enjoy handing out candy to the cute princesses and Marvel characters that come by. Beef tips with coconut cream mushroom sauce is a one pot gluten free and dairy free meal! This was my first time making beef tips with coconut cream mushroom sauce. I have a go-to way of making my sauce for other meats so I incorporated it here! We ate it over arugula, but you can serve it with mashed potatoes, sweet potatoes or rice if you like.
It only took one pan to make this meal so dishes were a snap! I love when that happens. Beef tips are parts of the steak, but not necessarily all the same cut of meat. I was concerned it would be chewy so I marinated it during the day in a quick sauce of coconut aminos, avocado oil, garlic, Italian seasoning and balsamic vinegar. I honestly didn’t measure the ingredients, I just poured it into a ziplock bag and put the meat in. Once I sealed it I squished the liquid onto the meat and put it in the fridge. You can substitute your favorite marinade ingredients if you would like. The marinade made the steak sear a pretty color of brown as the vinegar carmelized in the pan. I love the tangy flavor it gave this dish. This keto zucchini noodle lasagna recipe came to be out of necessity to use up items in my fridge and the fact that I wanted to try a new product!
Kitchen Aid veggie slicer attachement uses:I was super excited to try my new toy, which is a KitchenAid mixer attachment that slices veggies into thin sheets for pasta, wraps or sushi. It was my friend’s birthday and I was going out with the girls for dinner, so I wanted to make something easy and yummy for my family to have while I was gone. The zucchini in my fridge was starting to look a little sad so I landed on using the zucchini as the noodle in my lasagna! So Yummy! The attachment for my mixer took a few minutes to figure out but once I got it assembled I was off and running. It has two blades, one for thick and one for thin slicing. So, I used the thin blade for the zucchini noodles. Now I am trying to figure out what veggie I want to use it on next. It would make super fun french fries from potatoes or sweet potatoes so, I might have to make some different veggies and air fry them and see how they turn out. Carby veggies for the family and low carb veggies for me. You could make my Fathead dough recipe into garlic bread to go with it! Roll the dough into breadsticks and top with garlic butter instead of bagels! I served this with a big green salad. So cheesy and delicious! The smell of grilled onions, peppers and meat make me happy. Sometimes, it even makes the house full of smoke from the indoor grill pan but I don’t mind because I love the flavor. They also play nicely into a ketogenic or paleo lifestyle. If you are following a ketogenic diet, just add guacamole, cheese and eat them without a tortilla, or over a bed of cauliflower rice. If you are eating paleo, eat them with an almond or coconut flour tortilla and skip the cheese and sour cream.
My personal favorite is on a plate with sour cream, cheese, and guacamole. Yum! Feel free to make these gluten free fajitas with your own fajita seasoning. They have lower carbs than the regular rice filled ones to keep it keto! When I woke up this morning it was only 68 degrees outside! My first thought was yay fall is coming! I wanted to make something delicious and comforting for my family to eat. This was the perfect choice. When I was little I didn’t really like peppers and I only ate the inside lol! I was the same with cabbage rolls too! Hehe! I made this version of stuffed peppers keto but you can modify the recipe to add in rice if you are eating carbs, or omit the cheese and use no sugar added tomato sauce if you are eating Whole 30 or Paleo or Keto. I get excited every time I turn my smoker on! I love the big billowing smoke cloud that comes off of it in preparation for cooking! Smoking tri tip is one of my favorite things to smoke! I want to love brisket but I just can’t get it to go the way I like it and I find that tri tip is more tender and my family loves it. This recipe is perfect for Father’s Day! Let’s Cook! Any Dad will love this smoked tri-tip with chimichurri cooked for him with his favorite side dishes! This is how we do it: I cook tri tip for about 1 hour 30 minutes for a 3 lb roast. It’s about 30 minutes per pound. We use a thermometer and take it off when it reaches 125 degrees F hours total. I leave it unwrapped and flip it over once at about the half way point. I also spray it with a mixture of apple cider vinegar, water and coconut aminos. After that, you have a choice. You can crank up your smoker to 450 degrees to create a sear to the outside, or finish it in a pan in the oven under the broiler, or could also sear it on your BBQ grill to keep the heat outside! You just want to sear it enough to get a yummy crust on it. Let it rest for a few minutes then slice it up and serve it with chimichurri sauce and your favorite side dishes. I am writing this gluten free taco meat pie recipe out as our house is under renovation! Four guys are here installing new windows which will take them 3 days. Apparently, when the gas leaks out from between the panes of glass it makes your windows less effective. Our house is almost 20 years old so it needed some TLC when we bought it. We have been putting off doing the windows but decided to bite the bullet this year. The front door will be replaced this week as daylight comes through the wood and all around the frame which is not good. My kitchen is a disaster, so I am only dreaming of making something yummy to eat like this Taco meat pie. I am in my office listening to the sound of hammers and drills. It is exciting to get the windows fixed so they all shut and don’t leak our valuable air conditioning outside since we live in Arizona! Hopefully it will improve our power bill, we are keeping our fingers crossed. The temperature is rising hotter here everyday and I am reluctant to turn on my oven. We are lucky enough to have friends that hunted last fall for an elk and shared some meat. Even thought the weather today in Phoenix is in the 90’s I thought Elk Chili sounded yummy. A cold front with rain is supposed to move in so this will be great as left overs this week. I did not grow up eating wild game so sometimes I am a little afraid of how it will taste. Let me tell you that this was delicious! Our friends had it mixed with pork so I didn’t have to add any extra fat to it since elk is so lean. My hubby, BIL, FIL and daughter went along to help them spot the elk. Sadly, we all had to go home before he shot it. Thankfully we still got to share the experience and family bonding time together. I am not a big wall mount girl. My hubby just hung a giant Wahoo mount on our wall and I have to say that I am glad he didn’t shoot the elk or our Wahoo would have had a friend! Haha! Tested the elk meat since it was mixed with pork at the processing facility. I just wanted to make sure there was no gluten in it. I have been testing a lot of food with my Nima Sensor. It’s a handy little device that detects gluten in food. It has been eye opening to the amount of gluten I find in foods labeled gluten free. If you want to make this chili and don’t have any elk meat handy you can substitute ground beef. Paleo Elk Chili Delicious Paleo elk chili. I put the beans on the side for those who wanted to add them. It was delicious and I wish I had more elk meat in the freezer! I used ground Buffalo meat but you can use whatever kind of ground meat you like! I used Veggie Chips instead of corn chips but you can substitute whatever kind of chips you like. I’ve also made these nachos using Inka Plantain chips…yumm! I like the spicy chili ones. Sorry, I am not a huge football fan although, I know many of you are. I like going to Super Bowl parties to hang out with family and friends, eat and watch the commercials! It will be a fun time!

GLUTEN FREE NACHOS: 1 lb ground buffalo or ground beef A yellow onion- diced 2 tsp chili powder 2 tsp garlic powder 1 tsp smoked paprika A tsp sweet paprika 1 tsp Italian seasoning S & P Shredded sharp cheddar to taste- If dairy doesn’t bother your belly! 1 can drained and rinsed black beans. A handful of diced green onions for garnish. 1/2 cup chopped tomato. A dollop of sour cream. Your favorite Salsa to dip them in. I used my cast iron skillet to make these nachos. Add 1 tsp coconut oil to your pan. Add chopped onion. Cook until soft. Add ground buffalo and seasonings. Cook until the buffalo is cooked through. Add black beans. Combine. Turn off the heat and add chips and cheese. Stir to coat chips in meat. Add additional cheese to the top if you like it really cheesy as we do! Put in the oven on broil for a few minutes to melt the cheese. That bubbly cheese deliciousness is almost ready to eat! Add your other toppings! Enjoy!
