This gluten free breakfast frittata is made with spinach, mushrooms and onions! You can customize the ingredients to whatever you have on hand. I am doing a 21-day sugar detox “cleanse” before the holiday season is here and now that the summer pool parties are winding down, it’s a perfect time. Sugar is a powerful drug and man oh man my body wants carby snacks and wine right now, well not right now because it’s not even 8 a.m. but you get what I am saying.
I am looking forward to next week when I am past the cravings and in the routine of detox. We don’t eat a ton of carby snacks and junk food, but I do enjoy wine more than I probably should and occasionally popcorn. I can turn down chips, chocolate, and other snacks but popcorn gets me every time! haha! I think it is good to reset your body and eat a certain way for a time. We usually eat paleo/keto most of the time. Recently, I have been having an issue with dairy and so have cut it out of my diet, unless I am somewhere where gluten free and dairy free are not available. I am always gluten-free. If you can eat dairy I recommend adding feta cheese to this breakfast frittata and it would be ah-mazing! Feta has that delicious salty taste that would make this frittata pop! Are you a breakfast person? Breakfast is probably my favorite meal of the day. I have tried fasting but my body really enjoys breakfast and the energy I get from eating it. We are usually mostly protein and some fruit or veggies in the morning people. We don’t usually eat a pastry or other sugary breakfast items unless it’s Christmas morning. Gluten Free donuts are a thing on Christmas morning. It’s a tradition. Here are some other ingredient ideas for a breakfast Frittata! Denver- green pepper, ham, onion Sausage and Cheese Bacon, Spinach and tomato Caprese Use your imagination! That’s the best part about having a frittata for breakfast! Mushroom Spinach Onion Fritatta Easy and delicious breakfast frittata that’s ready in just a few minutes. INGREDIENTS

Gluten Free Fathead Dough Cinnamon Rolls are a super good stand-in for regular cinnamon rolls! Especially, if you are eating a low carb diet! Who doesn’t love hot gooey sweet cinnamon rolls right out of the oven! However, if you follow a ketogenic or low carb diet you haven’t had these delicious carby treats in a while! Not to worry! My Fathead dough cinnamon rolls to the rescue! These are delicious and have an amazing consistency! You can’t even tell that the main ingredient is cheese! I tested this recipe out on my inlaws on Sunday after church. Alas, They couldn’t guess that they were basically eating cheese dough. When pulled apart the dough even looks like the real deal. I was impressed that the swerve sweetener made the cinnamon butter mixture taste just like the one with sugar! My favorite part of cinnamon buns when my Mom would make them was the crusty sugar and cinnamon on the bottom, and I was super happy this recipe had that too! What is fathead dough? Fathead dough is dough made from basically cheese, almond flour, and eggs, and it has a lower carb count than traditional dough. Fathead dough is so versatile, and I am in love with it. Sorry honey- I might be in love with this dough. You can make this basic cream cheese frosting to go on top of them using swerve sweetener to keep the carb count low. Plus it is delicious and I could honestly eat it on its own. I doubled my Fathead dough recipe because one batch wasn’t going to be enough! Everyone in my family, including my in-laws, loves cinnamon rolls. They are the perfect bunch to recipe test with. However, my FIL asked if I have any other recipe testing to do because he will volunteer to try it. Haha! Love them! I love the smell of cinnamon buns baking in the oven! I am craving these now while typing this recipe up since I love the smell and the taste so much! I hope you enjoy these gluten free low carb cinnamon rolls! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Gluten Free Fathead Dough is a keto diet lover’s best friend! It can be made to replace quite a few “bread” or “crust” foods but with lower carbs! I love to use it for bagels, pizza crust, cinnamon rolls and so many more options! My kitchen smells so good right now! This Fathead dough smells like bread baking. I might be salivating. I am currently fasting in the mornings until around 10 or 11 to add to my ketogenic diet results. We are going to Mexico in a few weeks and I wanted to kick it up a notch for bathing suit wearing. Not to mention, we had 6 weeks of company and I wasn’t strict with my keto. Ugh, the struggle is real! Anyways, back to keto and feeling better. Fathead Dough-Fathead dough can be used as a delicious substitute for bread while on a ketogenic or low carb diet. I have been craving a bagel with cream cheese and smoked salmon so I made bagels today. You can shape the fathead dough into any shape you want. I made one big thin sheet so I can break it up into crackers later. You can use it as a pizza crust, wrap, taco shell, burrito wrapper, etc etc etc. You can find variations of this recipe all over Pinterest, Instagram, and Facebook. It is super easy to make and goes together really fast. I find that using my hands to mix in the egg and almond flour make it go the easiest. You will often see me using my hands to mix things though, but if that grosses you out feel free to use a spoon! I am not sure who first made this dough, but I am definitely not the original on this one. I think I got the recipe from www.ditchthecarbs.com but have tweaked it slightly. Here's The Recipe: Fathead Dough Low Carb Ketogenic dough that can be used as a bread substitute. Add toppings, use as a wrap, pizza dough, cinnamon rolls, or however you can imagine it! INGREDIENTS

Best Wishes for Gluten-Free Dishes! XO, Michelle These gluten free breakfast egg roll ups are so delicious! I change the filling depending on what I have in my house! Feel free to experiment with what you fill them with! I seriously think this may become my new favorite go to egg breakfast ever!
I saw the original recipe from The Castaway Kitchen and had to make it! It was so yummy! I love everything about it. I am not a good recipe follower so I made up my own version. The best thing is, that it is totally customizable and you can put whatever works for your diet and whatever you have in the fridge in this. We loved these breakfast egg roll ups and hope you do too! I made these when we went sailing in California, because they are easy to make ahead and you can eat them hot or cold. Everyone on board loved them! So that was a blessing! I was happy that they are also good cold, because I didn’t realize that when we left the shore power, the only way to warm things up were with a propane burner! I really lucked out there! Hehe! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Crab stuffed mushrooms are easy to make and perfect for dinner or as an appetizer! Or if you are like my husband, for breakfast with eggs..like a benedict! Can’t say I don’t join him! CRAB STUFFED MUSHROOMS:
These were the BOMB!!! I thought I would have an extra one for my lunch the following day but NO- The Family ate them all! I can’t say that I blame them as these were delicious! My oldest daughter does not like mushrooms so she just ate the filling cold with chips. She said it was delicious that way too. You can also make it as a dip for crackers or chips if you don’t cook it in the oven. It is more like a crab salad. If you don’t like mushrooms I have baked the filling in a glass pan and served it as a hot dip. You can also top chicken breasts with it and bake them together that way! I would prebake the chicken a little before adding the crab mix to the top so it doesn’t get over done. HERE’S WHAT YOU NEED TO MAKE THIS RECIPE: You will need the following: lump crab meat A package of cream cheese Mayo Garlic Powder Parsley- fresh is better Yellow onion Hot sauce Shredded Cheddar Cheese Portobello Mushrooms Proscuitto I always rinse my crab when it comes in a jar or can and pick through it to make sure there are no shell pieces. Mix all of the ingredients together except the mushrooms and proscuito. Scoop the crab mix into the mushrooms, after they are washed and the inside is scooped out. Bake them in the oven. Top with crispy proscuitto. Enjoy! If you like these crab stuffed mushrooms, you might also like this Crab Stuffed Lobster or Crab Cakes! As Always, Best Wishes for Gluten-Free Dishes! XO, Michelle Gluten Free Meaty Egg Casserole is a fantastic way to add protein to any brunch or breakfast! Happy Boxing Day to all of my Canadian friends and family! Or Happy Day after Christmas to everyone else! I hope you all had a wonderful day with your families and friends!
We had a wonderful day that started with our family snuggling on the couch and ended with our family snuggling on the couch! I treasure those times as it won’t be long until our children have families of their own! We had family and friends over for brunch yesterday. I made my meaty egg casserole, gluten free donuts ( I purchased from Gluten Free Creations Bakery and Sprouts), fruit, and mimosas! It was a delicious start to our Christmas day! I love making egg casseroles because they are wonderful to warm up as leftovers and feed a crowd! MEATY EGG CASSEROLE: 18 eggs- cracked and beaten One box organic egg whites- beaten 1 organic ham steak- cubed 1 pkg organic sausage cooked and crumbled. One pkg hash browns. I used Oreada as they are gf. I didn’t get organic as I couldn’t find any. 1 pkg shredded cheddar cheese. A stick of butter. 1. Spray your deep baking dish with coconut oil spray. 2. Preheat the oven to 350 degrees. 3. Layer hash browns in a baking dish. Put small pieces of butter over the hashbrowns . Be your own judge on how much butter you would like to use. 4. Bake hash browns until browning slightly. 5. Remove hash browns and top with meat and evenly distribute it over the area. 6. Pour eggs over the meat and hash browns. 7. Top with cheese. 8. Bake in 350 degree oven for about 45 min- 1 hr. The eggs will get fluffy. You should be able to insert a knife in the center and it will come out clean when the eggs are cooked. You can add whatever you would like to this egg casserole. I have made a vegetarian version, a combo meat and veggies, and used sweet potato hash browns instead of potato. As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Gluten Free Breakfast Pizza is a fun way to make breakfast or brunch! It would pair nicely with some mimosas! Happy Monday! I hope you are all rested after the weekend and are enjoying your Monday! It feels like December is flying by! Soon we will be in 2015! This past weekend I felt a bit old as our youngest daughter was gone to winter camp and our oldest daughter was at Winter Formal! So it was like being an empty nester! It is crazy to think that we are only a few years away from that! It is the blessing of getting married young and having kids young. We will be young when they leave us!
I made my Gluten Free Breakfast Pizza for brunch yesterday! I used a Pesto Pizza from Against the Grain. Added chopped ham and eggs. You could add whatever toppings you have in your fridge. I even broke 2 yolks and it was still delicious! First I pre-cooked the pizza until it was almost all the way done. Then I added my toppings. I wanted to make sure it has a crunchy crust without overdoing the eggs. Gluten Free Breakfast Pizza: 1. Preheat the oven to 425 degrees. I put my stone in the oven so it is nice and hot for the pizza to go on it! 2. Bake pizza for about 15-18 minutes. 3. Add your toppings. Crack eggs and drop on the pizza however you would like them arranged. 4. Bake pizza until eggs are firm but not over done. I was impatient so I turned the broiler on for a few minutes to finish them. 5. Slice and enjoy! I hope you have a great Monday! I love to make mine with eggs, spinach, garlic, onion, and feta. It reminds me a little bit of the filling of spanakopita but with eggs which is so delicious! Original Post was written 09/08/2014 and updated 1/24/22. It is Raining here like CRAZY! It’s beautiful outside but scary to drive! I made it to the gym and back with little problems but other parts of the valley have motorists stranded in standing water! Some schools are closed and people are being advised to just stay home! It reminds me of the first big snowstorm of the year growing up. It is always crazy here when we get a lot of rain because we just don’t have the drainage on our streets for it. People drive into large amounts of water and get stuck or washed away. I am sure there will be someone in need of a helicopter rescue from driving into a flooded area… I hope everyone stays safe out there today! I’m going to stay home and make soup for supper… Stay tuned for that recipe:) Since we had a weekend of eating carbs I decided to make a healthy protein-packed breakfast to start off our week on the right track! It is fast to make so a perfect breakfast on a work or school day! HERE’S HOW I MADE THESE DELICIOUS EGGS FLORENTINE: 1. Mince 1 garlic clove. 2. Chop 1/2 yellow onion. 3. Saute garlic and onion in a pan with coconut oil. 4. Chop fresh spinach (about 2 handfuls) and add to garlic and onion. 5. Beat 8 eggs and add 1 TBSP water. 6. Once Spinach is soft add eggs and cook until scrambled. 7. Sprinkle with Feta Cheese. 8. Season with Salt and Pepper. 9. Enjoy!!
