My friend Roxy shared her Mom's Famous Enchilada recipe with me and I am sharing it with you! They are so delicious.. good luck eating just one! Who doesn’t want a delicious pan of saucy and crispy-edged enchiladas for dinner? These cheesy red chili sauce enchiladas are the perfect weeknight meal or add beans and rice and it’s a perfect weekend meal! My friend Roxy told me about her Mom Toni’s enchiladas and I was so excited to make them only in a gluten free version. We got together one Friday night with our friend Aimee and whipped these delicious morsels up! It was truly a team effort and I loved doing it. What Do You Need to Make These Enchiladas? To make these famous enchiladas you will need a few ingredients: 1 can Las Palmas Red Chili Sauce 1/4 Cup of Cornstarch 3 cloves of fresh garlic minced 1/4 Cup of Oil- I used Avocado 1 TSP Cumin 1/2 Can Water (about 1 cup) 5-6 Green Onions chopped 1 Pkg Monterrey Jack Cheese- Shredded 2 Small Cans of sliced Black Olives 2 Dozen Guerrero Corn Tortillas (or any gluten free version you like) Oil to fry the Tortillas- once again I used Avocado 1 Rotisserie Chicken Shredded Plus any other toppings you would like to add Such as sour cream, etc. I personally don’t think they need anything else at all! Besides a fork…hehe. How Do I Make These Delicious Enchiladas? These famous Enchiladas are really easy to make with just a few easy steps. To begin, I make a little tin foil pocket to put the tortillas in once they are fried to keep them warm. Heat a skillet over medium heat and drizzle with a little oil. Toast your tortillas on each side. Place them into the pocket to keep warm. Mix together in a bowl the cheese, green onions, olives, and 1/2 of the garlic In another pan, heat 1/4 cup of oil and make a rue with the cornstarch. Cook it for a few minutes to thicken. Stir in the red chili sauce and combine to make it thick. Add the water until it is a nice consistency. It should be like a chowder consistency, not play-dough. If it is too thick add more water to thin it out. Add the rest of the garlic. Stir. NOW FOR THE FUN PART! It’s time to assemble your delicious enchiladas! Bake them and then the best part! EAT them! Step one- take a fried tortilla and dip it into the sauce and coat it well on both sides. Place it on a plate and put some chicken and cheese mixture inside. Roll it up and put it seam side down on a baking sheet. We used a cookie sheet. Continue until all of your tortillas are used. Spoon a little more sauce on top of each enchilada. Top with additional cheese and an olive. To make it look pretty. Bake in a 375 degree oven for 10-15 minutes or until the cheese is melted and the edges are a little crispy on the tortillas. Why I Crave This Thai Cabbage Salad! This Thai cabbage salad is so easy to make and totally satisfies my craving for crunch! It is slightly salty and a little sweet so it is the perfect combination of delicious flavors! If you like a good salad and fresh flavors you will crave this thai cabbage salad too! I literally was driving home from an appointment today and stopped at the store for nappa cabbage to make this salad. I had all of the other ingredients but the napa cabbage. And Voila! Lunch was served. Yummy! I am excited to make it again. It has been cloudy and cool in Arizona lately and usually that means I crave comfort food. Stews and soups that are hearty and filling. Not today! I totally wanted something light and crunchy. We had some leftover rotissery chicken in the fridge and that is what I served with it for some protein. I also love this with Pecan Crusted Ahi Tuna with Mango Salsa! What Do You Need To Make This? This salad goes together in just a few minutes and is super easy to make! You will need the following ingredients to whip this up: One head of Napa Cabbage A bunch of green onions Shredded Carrots- you can buy them pre shredded or shred your own. A red, yellow or orange pepper or combination of them. Peanuts Gluten Free Soy sauce or Coconut Aminos Rice Wine Vinegar Sesame Oil Sesame Seeds Sugar or sweetener Optional ingredients: You can really add any veggies you would like to this salad. The Napa Cabbage makes it super crunchy and delicious. I sometimes add snap peas, apple, pear, or bean sprouts. First wash all your produce and allow to dry for a few minutes. Chop the end off the Napa Cabbage and separate the leaves. Slice the leaves of the cabbage the long way so they are bite sized pieces. This just makes it easier to eat. Then chop it up. Chop the rest of the veggies into bite size pieces. Toast the sesame seeds in a pan on medium heat. Stir so they don’t burn. Set aside. Make the dressing in a bowl. It has soy sauce or coconut aminos, rice vinegar, sesame oil and a little sugar in it. You could also add ginger or Chinese 5 spice to it if you want to spice it up. As well as Chili sauce if you really want to kick up the heat. Add the chopped veggies to the dressing in a big bowl. Toss. Add the peanuts and toasted sesame seeds. Voila! You are ready to eat. You need these honey garlic chicken thighs in your life! Throw everything in the crockpot in the morning and let the crockpot do all of the work! The sauce gets sticky and delicious! It’s not too sweet so that is awesome! You are not over powered by all of the cloves of garlic either. Even though there’s 5! No warding off vampires here! The garlic slowly roasts in the sauce and is more sweet than pungent. I needed a fast crockpot meal tonight for dinner. I am not sure about you but gosh this time of the year feels so busy! Our oldest daughter was home today and wanted to go to Costco to stock up on some items. I really don’t like going to Costco this time of the year but it wasn’t bad at 4:30 p.m. In fact, it might be my new favorite time to go! We got her restocked on bulk items and back to her house she went. What can you serve with these Honey Garlic Chicken Thighs? I made a few things to go with them because everyone in my family wanted slightly different things. My hubby wanted the leftover cheesy polenta from last night. (recipe coming soon) Our daughters wanted it with rice. I microwaved a few mini potatoes and then roasted them to make them crispy in the oven. We also had a big cabbage salad on the side Yummy! Easy Mashed Cauliflower What is the difference between a slow cooker and a crockpot anyway? To me they are the same thing….. What do I need to make this recipe? There are only a few ingredients in this recipe! Most of which you probably have on hand. You need 5 cloves of garlic, peeled 1 pkg of Chicken Thighs skin removed 1/2 cup of honey, slightly melted 1/4 cup of avocado or olive oil 1 tsp Italian seasoning or Herbs De Province S & P The instructions are really easy too! Put all ingredients into the crock pot and stir to coat the chicken. Put on low for 6-8 hours and enjoy! Serve with your favorite side dish or choose one of mine above. We had Bible study last night and this is the dish I made this fajita chicken for our potluck. Some people ate it over a salad and others ate it like soup and added rice. It was cool and rainy here so comfort food hit the spot. The Phoenix area had more rain in the last 3 days that it has all year! This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. We just got back from vacation and I was craving a meal made in my own kitchen! IT was nice not to have to cook as much but I honestly missed it. I love that our families try so hard to cook safely when we visit. It is so nice to enjoy everyone and have safe food to eat too! So thankful! Plus they are mostly just really great people. We miss them since we live so far away so try to enjoy every minute with them when we are there. This dish makes me think of our trip to Italy. Creamy sauce with fresh green and red. Yum! When I first heard the term hot logic, I thought it was some kind of trendy phrase about using your smarts.. as in logic. LOL! A hot logic is an insulated bag with a heating element in it that cooks and heats up the food. I found mine on AMAZON- of course because most things come from there lol. Here’s How the Hot Logic Works: You can put food in a glass pyrex container with a lid into the hot logic bag and plug it into an outlet or cigarette lighter to cook or warm the food. The best thing is that it brings food up to temperature but does not burn it! I have made greek chicken in it from raw chicken and also heated up precooked scrambled eggs when traveling. It’s so versatile! We have both sizes so we can make more or less food depending on if our girls are with us. Where Can I Use It? This invention just made potlucks, tail gaiting, travel, RVing, Boating, Camping, and meal prep so much easier! I am going to buy one for our youngest daughter when she goes to college to cook gluten-free food in her room. It will be convenient to meal prep for her and she can cook it in this baby! Hopefully, the apartment won’t consider it a hot plate? We will keep our fingers crossed! What Have I Cooked In It? In the mini: Burritos, taquitos, chicken and vegetables, scrambled eggs, omelets, leftovers, etc. In the Family Size: Greek Chicken Breasts, Lasagna, Taquitos, Nachos, Burritos etc… You can even purchase a pre made freezer meal in cardboard and it will cook that! Halloween is next week and this recipe full of garlic is guaranteed to ward off Vampires! Haha! The garlic carmelizes and gets soft. It is perfect to smash into the chicken or mashed cauliflower that I paired it with. You could also smear it on some bread with butter and that would be delicious. My freezer had a whole chicken in it so I cut it into pieces, but you could use chicken pieces to make it faster.
