She did great! The event she was at ran late and her phone was off…. SO- that put us into slight panic mode! But it all turned out just fine! I sure was a praying Mama last night though! It is so hard to believe she is driving! Just another stepping stone to adulthood!
I hope you enjoy my super easy recipe for Baked Orange Salmon! I served it with brown rice and a Green Salad with pomegranates. Yumm! Baked Orange Salmon: 1 fillet of Salmon- wild caught and deboned. 1 Orange- sliced 3 Tsp Olive Oil. S & P 1. Place a small amount of olive oil in a baking dish to coat the bottom. 2. Place Salmon fillet in pan. 3. Mix olive oil and juice from half the orange with S & P in a small bowl. 4. Pour oil mixture over Salmon. 5. Slice remaining orange and lay over salmon. 6. Bake in oven until Salmon is opaque. 350 degrees for about 30 -45 min. Enjoy! Gluten Free Ahi Poke is super quick to make! You can even make it in the morning and it will be deliciously marinated in the fridge by the time dinner comes around! This recipe reminds me of all of the delicious Poke we ate while we were in Hawaii in October! I went to Whole Foods this week and picked up 2 Ahi Steaks. They were sushi grade so I decided to make Poke! I served it with brown rice and avocado. It was so yummy! I am blessed to have children who like sushi HERE’S HOW TO MAKE GLUTEN FREE AHI POKE- 2 Ahi Steaks- sushi grade. Cut into small bite sized pieces. 1 handful green onions finely chopped. 3 tbsp gluten free soy sauce or coconut amino. 3 tbsp toasted sesame oil. I used a lemon grass sesame oil that is made at our local olive oil place. Salt You can add shallots and garlic as well if you like. I make it both ways Mix all ingredients and serve or chill in the fridge for the flavors to blend:) YUMMMM!!!! Sushi grade Ahi Marinade ingredients Yum! Delicious Ahi Poke I have served this as an appetizer in fancy glasses at dinner parties as well as the main dish like I did last night. It is very versatile! We like to eat it with rice and avocado however, some people like to eat it with corn chips or in lettuce cups. It is yummy no matter what you eat it with! Other sides I like to serve it with are cauliflower rice, roasted potatoes and butterey green beans. You could use it is a Salmon Nicoise salad too! Today started out as a beautiful sunshiny day here in AZ, but the clouds have now moved in and it looks like rain is on the way! My bestie came over this morning to lay out and enjoy the pool before it gets too cold to use it! October is approaching and for us Arizonans the water is cold by the end of the month. I wanted to make us a healthy lunch that was easy to prepare and grill while we were by the pool. I made us a green salad with cucumber and peppers as well as Quinoa to go with the Cedar Plank Salmon. HERE’S HOW TO MAKE CEDAR PLANK SALMON: You will need, 1 wild caught fillet of Salmon S & P 1/2 c Balsamic vinegar 1/2 c white wine 1/2 c olive oil 2 tsp Italian seasoning 1. Slice fillet into serving size pieces. 2. Mix marinade in a pan. 3. Place fish in marinade. Let soak 30 min or longer. 4. Heat BBQ to around 350 degrees. I use the two outside burners and shut off the middle one. I soak my cedar plank for at least 4 hours ahead of grilling. 5. Place salmon on cedar plank. Place in indirect flame on grill. 6. BBQ until fish is firm. About 25-30 min. 7. Serve with Salad and Quinoa Enjoy!!! Cedar Plank Salmon

It is pretty easty to make too which is a blessing! It is almost the weekend! Yay! I like to reflect on my week and look at how many of my goals I accomplished this week. Today, I am feeling pretty good about the week considering Monday was out of the game! I am looking forward to spending time with the fam on the weekend! We have lots of busy stuff scheduled but I always enjoy any moments we can have! Usually our together time is at the table eating a meal. Most days we are blessed to have two meals together! Our oldest daughter is wanting to get a job- soon! She doesn’t understand why that makes me slightly sad…. less time for her at home… I know this is a natural progression towards adulthood, but I don’t have to like it! I am sure if you have teenagers you can relate. GLUTEN FREE MACADAMIA CRUSTED MAHI MAHI Todays Recipe is Gluten Free Macadamia Crusted Mahi Mahi. I chopped up peppers and onions and pan cooked them to go along side as well as a baked sweet potato. I hope you enjoy it! Macadamia Nut Crusted Mahi Mahi: 4 Mahi Mahi Fillets 1/2 cup macadamia nuts. I used a hand chopper and made them into a fine meal. 1/4 cup coconut flour An egg- beaten in a shallow bowl 1 tsp garlic powder 1 tsp dried parsley or italian seasoning S & P 1. Dry Mahi fillets with a paper towel to remove any excess moisture. 2. Mix macadamia nuts, coconut flour and seasonings together on a plate. 3. Heat skillet with a little coconut oil. 4. Dip Mahi in egg and then roll in flour mixture. 5. Fry Mahi in coconut oil until brown on all sides. Fish will be flaky when it is done. 6. Enjoy HAVE YOU EVER SEEN A MAHI MAHI? Originally released August 27, 2013, and updated January 24, 2022. WHY SHOULD YOU TRY FISH TACOS? My number one reason you should try fish tacos is that they are delicious! IMO- of course. However, if you do not like fish then you might want to stick to beef or pork or chicken tacos. Reason number two you should try these fish tacos is because they are light and flakey from the Mahi Mahi and the fish is mild and allows the flavor from all of the spices to shine. The third reason you should try them if you have never had a fish taco is because you might like them! We have always had a one bite rule in our house. One of my friends calls it the no thank you bite.. but you never know you could want the whole taco…not just one bite! THE INGREDIENTS YOU NEED TO MAKE THESE GLUTEN FREE FISH TACOS ARE: Wild-caught Mahi Mahi Almond flour Coconut flour Smoked paprika Sweet paprika Chipotle seasoning Cumin Salt and pepper. You also need either a lettuce wrap or corn tortillas to put the fish in.
