Gluten free Scotch Eggs are pretty easy to convert from traditional Scotch Eggs by removing the breadcrumbs or by substituting for gluten-free ones! What Are Scotch Eggs? Scotch Eggs are hard boiled eggs wrapped in sausage and then fried or baked in the oven. You get your eggs and sausage for breakfast all in one cute ball! Need an Easy Make Ahead Breakfast? Look no further! Scotch Eggs are my go-to quick make-ahead breakfast! I sometimes buy pre-hardboiled eggs from Costco to make the process even faster. These are perfect for weekday breakfasts when you are in a hurry or need portable protein. I also use them during the holidays. They are awesome for Christmas morning so I am not stuck cooking while everyone is waiting to unwrap the gifts. I am starting to plan my Christmas morning menu, as it is only a couple of weeks away. I know these will for sure be included in it because of their ease of preparation! That is as far as I have gotten though….. hehe…. I am a planner at heart but we had a crazy week so didn’t get as much done as I had hoped. Family and the Holidays: I am reflecting on our week and I am reminded to enjoy every day in your life. You never know when it’s your time or a loved ones time to go. My Sister In Law’s Step Dad passed this week as well as my Cousin’s almost wife’s Dad. My heart hurts for them to lose a loved one near Christmas, but there really isn’t ever good timing. I pray that the love they had and great memories will flood over them. I hope this super easy recipe saves you time and helps with your meal prep! If you don’t want to use Jimmy Dean sausage, you can also buy pork sausage and season it yourself. If you don’t like pork, turkey sausage will work, it’s just sticky and harder to roll around the egg. You might have to add some extra fat to the pan so it doesn’t stick as well. You can cook it in a multi cooker, crockpot (you have to cook the meat first) or Instant Pot! Bolognese sauce is so delicious! Eat it with pasta, zoodles or just by itself. I make this in my multicooker in the morning so it simmers all day. It fills our house will delicious aromas all day. This recipe makes a big batch so I usually freeze half of it for a later date or give it to a friend or family member. This is often my go-to meal to deliver to friends or family when they need a meal. You can also make this recipe in your Instant Pot. The steps are the same except instead of simmering all day, you cook it under pressure and Voila it’s done after 30 minutes! If you Google Bolognese here is the definition: Bolognese sauce, known in Italian as ragù alla bolognese, ragù Bolognese, or simply ragù, is a meat-based sauce originating from Bologna, Italy, hence the name. Wikipedia I use three types of meat for my recipe. If you don’t like one type of meat just substitute it for another type. We love the taste of lamb and I feel it adds so much flavor to the dish. You can put all of the ingredients into your crockpot in the morning and when you are ready to eat shred the pork. You can also cook it in the Instant Pot or a Pressure Cooker! I serve it with cauliflower rice or rice and veggies. Another option is to serve it with grilled veggies or a big salad! It is so versitle! We eat it like a burrito bowl. I hope you love this super fast and easy meal as much as we do. The first time I had Kalua Pork was at my friend Dee’s! She made it and it was so delicious! That was before I knew that I had Celiac Disease and couldn’t eat gluten. So I switched out the regular soy sauce for coconut aminos or Tamari and boom here’s the gluten free version!
