You can serve it as a main dish, side dish or appetizer. So versatile and colorful. We had some friends from hockey over for the end of season party. I made layered bean dip, cheese nasty aka nacho cheese, and Texas Caviar. I love the citrus in the background of this dish. So yummy!
Since I am doing the two week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! It is delicious and I can’t wait to eat it. I feel like I have been eating a lot of beans these last few days. This is totally a new thing for me because I have been eating Paleo/Keto for so long I totally cut beans out of my diet. We will see what happens in a few weeks after the trial is over.
