What is a citrus dry brine?
A Citrus dry brine is a rub for meat that infuses it with citrus flavor and pre salts it before cooking. It allows the extra moisture to be removed and the juice from the meat to be retained. You can find my recipe for it here. And it’s also yummy on chicken, pork, and fish! A dry brine is also more forgiving for time than a wet brine. Should I Spatchcock my tukey before cooking it? IMO (In my opinion) spatchcocking your turkey helps it to cook more evenly. I think it keeps the meat more juicy and delicious! If you need help learning how to spatchcock a turkey or chicken, you can watch my video on it here. It seems a little scary at first but once you’ve done it once it’s super easy! I recommend sharp kitchen scissors! How long will it take to cook my Citrus Dry Brined Turkey? It usually takes about 10-13 minutes per lb of turkey to smoke it in the following manner. I recommend smoking your turkey at 225 for the first 2 hours then turning it up to 350 for the remainder of the smoke for a 12-15 lb turkey. If you have a larger turkey, keep it at 225 for up to 3-4 hours then crank it up so the skin gets crispy but not overdone. You will want to make sure your turkey is cooked until 165 degrees. Then let it rest for a few minutes and it’s ready to carve! I recommend using the MEATER wireless thermometer! It has an app for your phone to monitor the temperature of the turkey. Gluten Free Citrus Dry Brine is super easy to make and it adds tons of flavor to turkey, chicken, pork, or fish!
What is a dry brine?
A dry brine is basically pre salting the meat before cooking it. It is usually a combination of salt, sugar, and seasonings. In this case, I used citrus peel to add a delicious flavor to the turkey! This is delicious on chicken, pork, and fish as well! I also used swerve brown “sugar” because we are following a ketogenic diet to lower the carb count. You rub the mixture on the meat and let it sit uncovered in the refrigerator for a period of time before you cook it depending on the type of food. What is the difference between and wet and dry brine? A wet brine uses a solution of water, salt, and seasoning whereas a dry brine uses salt, sugar, and seasonings without soaking it in water. The dry brine draws the natural moisture out into the meat and makes it juicy. A wet brine saturates the meat with the solution and you need to be careful not to dry out the meat. How long do I leave the dry brine on meat?
The type of meat you are using depends on how long to leave it on the meat. A dry brine is more forgiving with the amount of time left on the meat than a wet brine is. You can dry brine a turkey for up to 3 days ahead of time. A whole chicken is usually 8-24 hours. A skin-on chicken breast, thighs, legs, or wings is 2-12 hours. Skinless chicken is about 1/2 to 1 hour. Pork is similar to turkey and can be done for up to 3 days. Fish is about 30-40 minutes. You will want to cook the meat once it is finished brining to get the best flavor and to keep it moist. It is best to leave it uncovered in the fridge while dry brining. Do I need to rub the brine off before I cook the meat? You do not need to rub the brine off of the meat before you cook it. if you use the correct salt to herb and sugar ingredients it is not too salty. You also do not want to rinse the meat before you cook it. What do I need to make this Citrus Dry Brine? This recipe is super easy to make and only requires a few ingredients! You will need the following: Two oranges Three Limes Coarse salt Three lemons 1 TBSP Herbs De Province 2 TBSP Poultry Seasoning- if you are making fish I leave this ingredient out. 2 TBSP Brown Sugar- I used brown swerve to keep the carbs lower. You also need a bowl, spoon, and a Microplane grater.

I love to pair this stuffing with turkey on Thanksgiving! It is also really yummy in the middle of a pork crown roast! Heck, we like to just eat it on its own too since it has sausage in it! If you are following a ketogenic diet, I have added an option for how to make it lower carb! I know that I don’t want to feel like I am missing out on holiday foods, but I don’t want to be sad looking at the scale in January! What do I need to make this recipe? For this gluten free savory stuffing, you will need the following ingredients: Gluten free bread or keto bread, such as Unbun or fathead dough made into bite sized squares or my keto cornbread. Pork sausage- gluten free Baby portobella mushrooms Dried Cranberries- leave out for keto. Yellow Onion Garlic cloves Italian seasoning Red Pepper Flakes Parmesan Cheese- add extra for keto White Wine- use a low carb wine like Secco Wine Club for keto. Chicken Stock Salt and Pepper How do I make this recipe? The first thing is to toast the bread. (If you are using my keto cornbread, you would want to make it the day before) You can butter it or drizzle it with olive oil and toast it under the broiler. Flip it over so both sides are toasty. Cook the sausage so it is crumbled like ground beef. Add the other ingredients to the pan except for the bread, wine, cheese, butter, and chicken stock. Saute until the onions are soft. Add red pepper flakes to taste. In a large bowl, combine the warm ingredients with the bread. Pour the wine and stock over and stir to combine. Butter a large baking dish. Pour the bread mixture into the baking dish. Cube butter and put squares over the top. Sprinkle parmesan over the top. Bake in a 375 degree oven for about 45 minutes. This gluten free and keto cornbread is delicious to eat on its own with butter, or dunk it in soup, or to make my gluten free savory stuffing!
What makes this gluten free cornbread keto?
Truthfully, there is no corn in this cornbread! However, it tastes like cornbread to me and it works perfectly for my gluten free savory stuffing recipe! We also like to pair it with soup or have it as a breakfast with butter and keto syrup! I can remember my Mom making cornbread for breakfast with lots of butter, syrup, or honey. So yummy! This grain free version takes me back to those mornings! My favorite was a mixture of all three- butter, syrup on some, and honey on some. It was even better if you microwaved it after adding the toppings to create a crusty sugary edge….. my things have changed in the way I eat since then lol! Since there is no corn in this cornbread, I use lower carb ingredients to make it keto friendly
What do I need to make this gluten free and keto cornbread?
You will need the following ingredients to make this cornbread: Almond flour Baking Powder Eggs Butter Swerve or your favorite Keto sweetener I have seen other recipes that use Artificial Corn Flavoring, but I don’t think it needs it and it sounds gross to me. I like to spatchcock turkeys or chickens when I smoke them on my smoker! I love how it is less time to cook it and the meat stays juicy and delicious!
What does Spatchcock mean? To spatchcock means to split open meat to prepare it to grill according to the dictionary on google! When I spatchcock a turkey or chicken, I start by removing the spine. I find that sharp kitchen scissors work the best to do this. Be careful to not cut yourself as the ribs and spine bones can be sharp once you cut them. After you remove the spine, flip the bird over and splay the legs outward. Tuck the wings under. Now for the fun part, you will need to break the breast bone so it lays flat. Try to do so without bruising the meat. Feel free to use your kung fu skills! Hehe! This gluten free clam chowder is packed full of delicious flavor! It is also perfect for a keto diet with one modification! We like the keto version as much as the carby version!
What do I need to make this gluten free clam chowder? You will need the following ingredients to make this recipe: Heavy cream Chopped clams Salt and Pepper Butter Parsley Clam juice Chicken stock or broth Garlic Clove Yellow Onion Celery Bacon Potatoes, Radishes, or Celery Root- Our favorite version is radishes! Mascarpone cheese or Creme fresh Olive Oil How do I make this clam chowder recipe? In a deep pot, cook the bacon on medium heat until crispy. Once it’s crispy, transfer the bacon to a plate lined with a paper towel and set aside until the end. Drizzle olive oil into the pot to add to the bacon fat. Add the onion, chopped radishes or celery root, or potatoes, and saute for a few minutes until they start getting soft. Add in the garlic and celery. Saute until softened. Add in the chicken broth and clam juice. Stir to combine. Simmer with the lid cracked for about 20 minutes or until the radishes, potatoes, or celery root are the desired doneness. Stir in the heavy cream. Add the clams with the juice. Stir. Add in the mascarpone cheese or creme fresh. Stir until it melts. Simmer a few more minutes until heated through. Add salt and pepper to taste. Remove from the heat and stir in the butter to finish the soup. Ladle into a bowl and garnish with the crispy bacon and chopped parsley if desired. Enjoy! Since this recipe is keto, there is no flour to make a roux so it is not as thick as traditional chowder. However, it checks all the boxes for flavor and craving satisfaction!
