This super easy gluten free chicken salad is one of my favorite summer lunches! It is quick to make and doesn’t require you to turn on the oven! Which I love since I live in AZ!
HERE’S WHAT I LIKE TO PUT IN MY GLUTEN FREE CHICKEN SALAD:
This version of my chicken salad is also keto but I have included optional add-ins if you like! 4 Cups of diced gluten free rotisserie chicken or precooked chicken 1/2 Cup diced pecans 1 Cup Mayo 1 TBSP Mustard 2 Stalks of Celery that are diced. 1 Pinch Salt (or seasoned salt) and Pepper 1 Pinch Herbs de Province 3 Green onions chopped Here are some other ingredients you might like to add: chopped grapes, dried cranberries, or chopped peppers. You can be creative and add any other ingredients you like! If you add a lot more items, you might have to add more mayo. Especially if you are like me and like it creamy! HERE’S HOW EASY IT IS TO MAKE THIS DELICIOUS CHICKEN SALAD: Chop all of the ingredients that need to be chopped. Put them all in a bowl. Add in the rest of the ingredients. Stir to combine. You can chill it in the fridge for a while if you like. However, you can also eat it right away too! Serve it with some gluten free bread for a sandwich, in between two big pieces of pepper for a lower carb sandwich, with sliced cucumbers to keep it low carb, or on it’s own in a bowl with a fork. ?

HERE’S THE INGREDIENT LIST TO MAKE THIS GLUTEN FREE ROLLED TAQUITOS:
Gluten-free Tortillas Cheddar Cheese Cumin Garlic or Garlic Powder Chili Powder SALSA CHICKEN 4 Chicken Breasts 11 oz jar of Salsa of your choosing Note: if you want you can use ground beef instead of chicken . HERE’S HOW TO MAKE GLUTEN FREE ROLLED TAQUITOS: First prep your Salsa Chicken. SALSA CHICKEN:Place your Chicken Breasts and Salsa into your Instant Pot on the poultry setting. Allow it to cook, release your steam, and set it aside. Shred the chicken with either two forks or a pair of kitchen shears. Add the spices and stir. Prepare a Baking Sheet with cooking spray. Warm your Tortillas with olive oil or avocado oil in a pan on medium heat but don’t make it crispy or you won’t be able to roll them. They will break. Fill your Warm Tortilla with drained Chicken and some cheese. You can also use dairy free cheese if desired. Roll your Tortillas. Place in the prepared baking sheet in a single layer seam side down. Top with cheese. Bake at 375 F until browned. Serve your homemade taquitos! I love to top them with Pico de Gallo and sour cream! SERVE WITH Sour Cream Black Beans or Pinto Beans Mexican Rice Refried Beans-my recipe is almost famous! Green Chiles Pico De Gallo Guacamole Cotija Cheese DO TAQUITOS HAVE GLUTEN IN THEM? I would be careful of the spices in the premade ones because those might not be GF. The big kicker is the tortilla. Make sure they are corn tortillas and not wheat flour tortillas if you have gluten sensitivity or celiac.

I originally had a variation of these wings at my BIL and SIL’s houses. They are my favorite gluten free and keto wings! I love to cook them on the grill! They have lots of flavor and are very mild. This is an easy recipe and the best part is that you can marinate them ahead of time and then grill, bake or air fry them later!
HERE ARE THE WAYS TO COOK THESE GLUTEN FREE AND KETO WINGS:
You can cook these wings in an oven on a sheet pan, in an air fryer basket in the air fryer or on a bar b q grill. The cooking time will vary depending on which way you choose to cook them. HERE’S THE INGREDIENTS TO MAKE THESE WINGS: You will need the following ingredients to make these delicious gluten free chicken wings . 3 lbs of wings- I like to mix drummettes and flats. 2 TBSP Italian Seasoning 1/3 cup of Tamari or gluten free soy sauce. 1/3 cup of Coconut Aminos 1/2 cup EVOO 3 TBSP Apple Cider Vinegar A TSP of Onion Powder 1 TSP Garlic Powder 1 Handful Fresh parsley Salt and Black Pepper to taste ARE THESE WINGS KETO, LOW CARB OR PALEO? Yes, they are! There is no added sugar in this recipe so they are keto and low carb. To make them paleo, switch out the tamari for extra coconut aminos. HERE’S HOW TO MAKE THESE GLUTEN FREE CHICKEN WINGS: The first step is to buy fresh wings or make sure they are thawed. Pat the raw wings dry with a paper towel and set them aside. Sprinkle them with Salt and Pepper. Combine all of the marinade ingredients into a bowl. Stir to combine. Put the wings into a large resealable plastic bag or a large glass dish with a lid. Pour the marinade over the wings. They can marinate for up to 24 hours. When you are ready to cook them, start your grill on medium heat to medium-high heat if you are grilling. You will need to watch them constantly because they can burn quickly. Turn them frequently to prevent burning. Once they are cooked you can move them off of the grill grates and keep them warm by covering them with aluminum foil until you are ready to serve. If you are cooking them in the air fryer, place chicken wings on a single layer. Fry them in batches to not over crowd the basket. Heat the air fryer to 350 degrees. Cook the wings for 20 minutes turning them every 5 minutes. If the air fryer chicken wings still have soggy skin, crank the temperature up to 425 and air fry them for an additional 2 minutes. If you are baking them in the oven put them on a sheet pan with nonstick foil lining at 400 degrees. They will cook in about 40 minutes. Turn them halfway through cooking. To get the chicken skin crispy, you can use a wire rack inside the baking sheet. Regardless of your cooking method, cook them to an internal temperature of 165 degrees Fahrenheit.

Hey there! Today we’re making Gluten Free Pork Shashlik, or pork skewers. Perfect for when you’re in the mood for delicious grilled kabobs. These have such a delicious flavor and are perfect to pair with grilled vegetables!
HERE’S THE INGREDIENTS TO MAKE THIS GLUTEN FREE PORK SHASHLIK:
2 1/2 LBS Pork Roast, cut into cubes (1) 12 oz jar of Mayo (10) small Yellow Onions, minced ~1 TSP Salt and Black Pepper, to taste HERE’S HOW TO MAKE GLUTEN FREE PORK SHASHLIK: Cut your pork into 1-inch cubes. Put your pork cubes, minced onions, and mayo in a Ziploc bag, bowl, or container and allow it to marinate for 1-2 days. If you are using a bowl, use plastic wrap to cover the opening or a lid. Put your marinated pieces of pork on wooden skewers, bamboo skewers, or metal skewers. Grill them on a gas grill until cooked on medium to high heat. Serve with grilled veggies! I like to grill summer squash, zucchini, eggplant, and peppers with it. WHAT IS SHASHLIK KEBAB? According to the Wiki, is grilled skewered cubes of meat. It’s similar to shish kebabs. It became popularly known as shashlik because of Russia and former Soviet Republics. Traditionally, it’s made with lamb, but you can use pork meat, beef, venison, chicken breasts, or whatever meat you desire! This recipe is not based on traditional Russian pork kebabs though. My friend Inna, who we sailed with a few years ago, told me about this recipe her family, who is from the Ukraine made. It is one of our favorites!
What pork meat is the best to use for shashlik?
You want tender meat like pork tenderloin or pork shoulder. Pork Chops will be good because we marinated it. Pork butts will work if you lower your heat from high heat to medium heat. I do not recommend pork belly for this recipe. My favorite is the pork shoulder with a little higher fat than the pork chop or tenderloin. What do you serve with shashlik? Bell Peppers- a classic kebab side. Spring Onion- for a more mild flavor than yellow onions. A medium onion will do. Red Onion- for a shaper, spicer flavor than yellow onions. Depending on how many you make, you may need large onions. Pineapple Chunks-for a more tropical twist on your shashlik. Fresh pineapple would be my preference but canned will do just fine. Potato Salad- easy to make. French fries- they go with everything! Check out my recipe for homemade fries, here. Gluten Free Bread Rolls- perfect if you are not doing keto or low carb. Gluten Free Homemade Bread- perfect for if you want a sandwich variation or your shashlik. Depending on what your sides are, this recipe is paleo and keto! How to prepare your grilled veggies?Olive Oil and S&P- slather them to get a nice grill on them. Lemon juice- this may not be an acidic marinade, but the lemon will bring out great flavor in your veggies. Salt and Pepper- to taste. Hey there! White Chicken Chili is perfect for cold days. I just made this for my daughter’s graduation from college and it was a crowd-pleaser! It’s super easy to make in your Instant Pot or Crockpot!
What Do I Need To Make This?
1 Small Yellow Onion, diced 1 TBS Olive Oil 2 cloves of Garlic, finely minced (2) 14.5 oz cans of Chicken Broth (1) 7 oz can of Diced Green Chiles 1 1/2 TSP Cumin 1/2 TSP Sweet & Smokey Paprika 1/2 TSP Fresh Cilantro 1/4 TSP Cayenne Pepper 1/2 TSP Dried Oregano Salt & Pepper to taste (1) 8oz package of Cream Cheese cut into small cubes 1 1/4 c of fresh Corn or frozen corn (2) 15 oz cans of Cannellini Beans 2 1/2 c of Shredded Cooked Rotisserie Chicken 1 TBS Lime Juice Here’s How To Make This Recipe: Put your Olive Oil, Onions, and Garlic in your Instant Pot on “Saute” mode or ~5 minutes until the onion and garlic start to turn soft. Add Chicken Broth, Green Chilies, Cumin, Paprika, Oregano, Cayenne Pepper, Salt, and Pepper. Turn the Instant Pot off of saute mode. Put the lid on and start it on Manual Pressure but turn the time down to 10 minutes. Once it is finished, release the pressure carefully. Drain and rinse Beans in a fine mesh strainer or colander. Measure out one cup of the beans and set aside. Puree the one cup of beans and a little broth from the soup until nearly smooth. This will thicken the soup. Add it to the instant pot with the non pureed beans. Add Cream Cheese, Chicken, Corn, and Lime Juice to the instant pot. Stir. You can serve the soup now, or close the lid and keep on the warm setting until you are ready to eat! Serve with toppings of your choice. How to make White Chicken Chili Dairy Free? This recipe calls for cream cheese but you can substitute it for dairy free cream cheese if you need to. Top it with your favorite shredded dairy free cheese as well! Can I make this White Chicken Chili with frozen chicken? Yes, just increase the time you cook it in the instant pot but I don't recommend it. I think the flavor is better with rotisserie chicken and highly recommend it! Pin it for later!

I love this spicy Sicilian chicken soup when I am craving comfort food or if I am not feeling well! There’s something about eating a little spice if you have a stuffy nose that helps IMO!
I used to love getting this soup before I knew that I had Celiac Disease! It was perfect on a cold day or if I was feeling under the weather!
I no longer eat at Carrabba’s because I have been glutened there twice! So, I no longer trust them. This lead me to create my own version from my memory of what it tasted like! What do I need to make this Spicy Sicilian Chicken Soup? You will need the following ingredients to make this recipe: 1 bag of frozen mirepoix or fresh mirepoix olive oil red pepper 2 medium sized red potatoes or 1 cup of diced radishes if you are eating keto. Tomato paste chicken stock- homemade or from a store. chicken breasts or rotisserie chicken can of chopped tomatoes parsley pepper salt Italian seasoning red pepper flakes garlic cloves and an instant pot or a crockpot.
How do I cook it in the Instant Pot VS the Crockpot? I cooked it on the soup mode of my instant pot. I made it with raw chicken and it turned out perfectly. If you use the rotisserie chicken you would not need to cook it as long. Probably only 10-15 minutes. If you are using a crockpot or slow cooker, I would cook on low for 8 plus hours. Tips for making this Spicy Sicilian Chicken Soup- If you are using raw chicken, it will take longer to cook. I removed the chicken after it was finished cooking and shredded it and returned it to the pot. If you use rotisserie chicken, it will cook faster. You can shred it before adding it to the instant pot or crockpot. If you want it spicier, add more red pepper flakes and black pepper. I did not add pasta to mine as we are eating keto, however, you could add pasta to your soup if you like. I also substituted radishes for the potatoes to make it keto friendly. I like to spatchcock turkeys or chickens when I smoke them on my smoker! I love how it is less time to cook it and the meat stays juicy and delicious!
What does Spatchcock mean? To spatchcock means to split open meat to prepare it to grill according to the dictionary on google! When I spatchcock a turkey or chicken, I start by removing the spine. I find that sharp kitchen scissors work the best to do this. Be careful to not cut yourself as the ribs and spine bones can be sharp once you cut them. After you remove the spine, flip the bird over and splay the legs outward. Tuck the wings under. Now for the fun part, you will need to break the breast bone so it lays flat. Try to do so without bruising the meat. Feel free to use your kung fu skills! Hehe! I like to roast my spaghetti squash in the oven and cook the bacon at the same time. While it is roasting, I make the alfredo sauce and chop my veggies so it’s all done at about the same time! Here’s what you need to make this gluten free spaghetti squash alfredo: You will need the following ingredients: chicken or shrimp bacon tomatoes spinach a spaghetti squash cream cheese heavy cream garlic powder salt and pepper shredded parmesan cheese fresh basil to garnish if you’d like Here’s how to make it: I like to cut my spaghetti squash in half (remove the seeds) and put a little olive oil on a sheet pan and roast it cut side down in the oven. Roast it at 350 degrees for about 30-45 minutes. It’s done when you can easily poke a fork in it. Set it aside to cool. While the squash is roasting, make your alfredo sauce. You can find my ALFREDO SAUCE recipe here. Chop up the other veggies. When the bacon is finished cooking, chop it up as well. I like to use rotisserie chicken in this recipe, but you can precook some chicken and chop it up too. If you are using shrimp, you will want to precook it too. Carefully, scoop the hot spaghetti squash into a large bowl. I like to use a fork to shred it so it looks like spaghetti. Put the other veggies into the bowl. Add your chicken or shrimp. Pour the sauce into the bowl. Use as much of as little as you’d like. Crumble the bacon on top… I’m drooling now! Garnish with fresh basil! Voila! You are ready to eat! This gluten free avgolemono soup is creamy and delicious and a perfect comfort food!
Do you crave soup when it’s cool and rainy? I do! This Avgolemono soup was perfect for the cool and wet weather we have been having in Phoenix lately!
I love almost anything with lemon in it and my friend gave me some lemons from her tree. I was debating making lemon bars or this avgolemono soup and with the weather the soup won! According to Wikipedia: Avgolemono (Greek: αυγολέμονο or αβγολέμονο)[1] or egg–lemon is a family of sauces and soups made with eggyolk and lemon juice mixed with broth, heated until they thicken. They are found in Greek, Arab, Sephardic Jewish, Turkish, Balkan and Italian cuisine. I can’t actually remember when I had this soup for the first time, but I find it so comforting. What Do I Need to Make This Soup? I used homemade chicken bone broth that I had frozen, if you do not have that on hand, chicken broth is just as yummy. Jasmine Rice or cauliflower rice Carrots Onion Celery Chicken breasts or rotisserie chicken Green onion Parsley as a garnish Lemons Eggs Olive Oil Salt and Pepper Directions: I am going to give you two options to make this soup. I have done it both ways. They are equally delicious. Use a medium-sized pot and turn the stove on to medium heat. Add a drizzle of olive oil. Saute your chopped onion, celery, and carrots until tender. Add the broth to the pot. Stir. Juice 1 lemon into the broth. Add the chicken breasts to the liquid. Simmer until they reach an internal temperature of 165 degrees. Remove them from the pot and shred the meat with a fork. Add it back into the pot. OR This is where you get to choose a different option if you would like! You can add in shredded rotisserie chicken meat if you would like to save time! Stir in the rice. Let it simmer for about 15-20 minutes until the rice is tender. OR You can keep it low carb and use cauliflower rice. If you use cauliflower rice you only need to simmer for a few minutes until the cauliflower is soft. In a separate bowl, scramble the eggs. Add the lemon juice to them and whisk to combine. Temper the eggs by adding a ladle full of broth to the eggs while whisking. Pour the eggs into the soup while whisking. Remove from heat. You are ready to garnish with chopped green onions and parsley. The eggs will make it thick and creamy. So yummy! ENJOY! Pin THIS now Make it Later!

This Gluten Free Mediterranean Chicken Salad makes me dream of eating it overlooking the Mediterranean Sea! My daughter requested a recipe for my mediterranean chicken salad so this is for her. As a foodie Mom it makes my heart happy that both of my girls like to cook and are pretty darn good at it! It’s super fun to watch what they make and honestly we send each other food pictures… totally nerdy I know! But I love it. I know most of the world is eating everything pumpkin but it’s still almost 100 degrees in Arizona and it doesn’t feel like fall yet… unless you are up at the crack of dawn and then it’s beautiful outside. Just ask my hubby! lol I love this Mediterranean chicken salad because it is a fast lunch or dinner and most of the ingredients are staples in my kitchen so that makes it easy. What Ingredients Do I Need To Make This Mediterranean Chicken Salad? This is what I love to put in my salad, however if you don’t like anything you can leave it out or substitute it for your favs! Chicken breasts Greek Seasoning S & P EVOO Balsamic Vinegar Garlic Cucumber Tomato Red Onion Roasted Red Peppers Feta Arugula Kalamata Olives Artichoke Hearts To start off this recipe, you will need to cook the chicken. Put the chicken breasts in a baking dish that you have drizzled with olive oil. Lay the breasts in the pan. Drizzle with a little balsamic vinegar. Sprinkle with greek seasoning and S & P. Bake in a 350-degree oven for about 30 minutes or until they reach an internal temp of 165 degrees F. While the chicken is cooking, I like to start on the chopping of my salad. I start with kitchen shears and the arugula, so the pieces aren’t so big. Lay the arugula in the bottom of a bowl. Use kitchen shears to chop it up a little. Arrange the rest of your chopped ingredients into sections on top of the arugula. Make a simple dressing in a bowl of EVOO, red wine vinegar, greek seasoning, garlic powder and S & P. Whisk it all together. Once the chicken is cooked, slice it into pieces and arrange it on your plate. Serve with the salad. You can toss the salad so you get a little bit if each topping…. unless you are like me and just want to eat feta lol.
