These Monster Cookie Bites are super easy and fun to make if you have kids who want to help in the kitchen! You can customize the ingredients to make them work for your likes!
HERE’S WHAT YOU NEED TO MAKE THESE MONSTER COOKIE BITES?
These gluten free monster cookie bites only require a few ingredients. You can also customize them based on what you have in your pantry or what you are craving most! You will need the following: 1 Cup of Purity Protocol Oats 2/3 Cup of Sun Butter or Peanut Butter 1/3 Cup of Enjoy Life Chocolate Chips 1/3 Cup of Chocolate Covered Nut Candies such as MnMs, Chocolate Covered Caramel Candies or other chocolate covered candies you enjoy! Here are some of my other favorite ingredients to add to these: Crushed gluten free pretzels, crushed gluten free cookies, peanut MnMs, peanut butter MnMs, dark chocolate cut into chunks, dried cranberries, and other dried fruit. WHY DO I USE PURITY PROTOCOL OATS? I personally choose to use purity protocol oats because I think they are safer for people with Celiac Disease to consume. Purity protocol oats are not farmed in shared fields and shared farming equipment. Mechanically separated oats could be farmed on the same field and use the same equipment as wheat, barley, or rye but use a machine to remove any grains that are not oats. HERE’S HOW TO MAKE THESE NO BAKE COOKIES.
This is why this recipe is super easy! Chop any candies that you want into smaller pieces. I recommend chopping up MnMs or things of that size. Add all ingredients into a bowl. This is one activity most kids love to do! Dump ingredients into a bowl. Mix everything together. Use a cookie scoop or your hands (using your hands are a little messier) to scoop the mixture into balls. Plop them on a baking sheet lined with parchment paper. Refrigerate them for 30 minutes or longer. Store them in an airtight container. Enjoy! INGREDIENTS

Does Peanut Butter ruin ketosis?
If you eat peanut butter regularly on keto, you may not be successful staying in ketosis. However, if you have peanut butter every once in awhile, you can stay in ketosis. For this recipe, you’ll be using 40 total carbs of peanut butter which is about 3 carbs per cookie. Eggs are only 1 carb so in total it’s about 3.5 carbs per cookie. I based this recipe on the one from Kirbie’s Cravings. Why do my keto peanut butter fall apart? When making a # in your cookies, be sure to do so gently or they may fall apart. If you don’t allow your cookies to cool after taking them out of the oven, they may fall apart. I had this happen to me when they were hot and I was trying to shove one in my mouth before it cooled! Preheat oven to 350°F. Grease an 8-inch pan or line it with parchment for easier removal. I used a brownie pan and highly recommend it for crispy edges all around if you have one. Gluten Free Vinarterta is an Icelandic layered cake. My Grandma would make it for Christmas and other celebrations and I looked forward to it every year!
What is Vinarterta?
Vinarterta is an Icelandic Celebration cake. It is made of flaky sugar cookie-like layers with a sweet prune filling. It is covered in icing glaze and sprinkles. This is how my family always made it, however, I have found that there are many different variations of this cake! Some use alcohol in the filling! Is it a fruit cake? My family’s version of this cake has a delicious sweet prune filling, so I guess it could be called a fruit cake. Although I am not a fan of traditional fruit cakes, I love this one! Don’t let the word prunes dissuade you from trying this Icelandic Delicacy! My Grandma’s Recipe from our family cookbook: My Grandma did not make a gluten free version of Vinarterta so I adapted her recipe to suit my cravings!

I am so thankful that my Auntie Hazel sent me these recipes! She also told me of a little cheat if you are in a time crunch and really need some Gluten Free Vinarterta! You can substitute sugar cookie dough for the layers. I have made it using a gluten free sugar cookie mix and adding in a little almond extract and they turned out fantastically!
What ingredients do I need to make this gluten free Vinarterta?
If you are going to make the cheat version of the sugar cookie, you will need a package of gluten free sugar cookie mix. Follow the directions on the package and then skip to the filling section :) To make them from scratch here are the ingredients: 1 1/2 Cups White Sugar 1 Cup Butter 3 Eggs 1/2 Cup Milk 1 Tsp Almond extract 1 Tsp Vanilla 5 Cups Gluten Free Flour Mix- such as Cup for Cup or similar. 4 Tsp Baking Powder 1 Pinch Salt Here’s how to make the cookie layers:
Here’s how to make the prune filling: If you are making the gluten free Vinarterta using sugar cookies, use 1/2 of this recipe. You will need: 2 lbs Prunes- pitted 2 1/2 Cups Sugar Water- 2 Cups 1 TSP Cardamon 1 TSP Vanilla
Here’s how to make the icing: Make a simple icing out of confectioners sugar and water with almond extract in it. 2 Cups Confectioners Sugar 2 TBSP water 1 TSP Almond Extract
Now it’s time to put the gluten free vinarterta together! I think this cake is actually better eaten the day after you make it! I love how the cookie layers soften into the sweet prune filling! Dirty Shamrock Shakes are the adult version of Shamrock Shakes with a few bonus ingredients!
Do You Love Chocolate and Mint? I am a mint chip lover! That’s why I wanted to share my dirty shamrock shake recipe with you all! The new gluten free Oreo cookies came out at the perfect time and allows me to add them to the shake for extra deliciousness! I have also added some vodka and creme de menthe and Andes Mint Chocolates for added fun. When I was younger, I remember my family going to McDonald’s for milkshakes occasionally when we went to the city. I lived in a town about 2 hours from a major city. If it was near St. Patty’s Day, I would always get a Shamrock Shake. Obviously now that I can’t eat gluten or ice cream, I had to modify it a little. Do you have a favorite milkshake flavor? How Did The Shamrock Shake Begin? I didn’t know this answer so I had to look it up on good ole Google! HA! HA! It started before I was born and instantly became a hit. McDonald’s owner Hal Rosen created it to celebrate St. Patty’s Day back in 1967. The company debuted it in 1970 and it became a hit! It started out as Lemon Lime Flavored but eventually became Mint flavored. I am glad the flavor was changed. You can read all about it here.
What Makes These “Dirty” Shamrock Shakes?
The dirty part of these shakes is the added vodka and creme de menthe as well as the gluten-free Oreo cookies. It makes them adult only and the added chocolate from the Oreos is amazing! These are definitely a once-a-year treat! This recipe makes 2 drinking glass size Dirty Shamrock Shakes and is best made in batches. You could get 4 tiny shakes out of the batch depending on how much sweet treat you want.
What Do I Need To Make These:
You will need a blender and a few ingredients: 4 Cups of Vanilla Ice Cream- I used non dairy but you can use your favorite brand. 1/4 Cup of Milk- I used Coconut but you can use cow or your favorite nut milk. 2 oz Creme De Menthe 2 oz Vodka- I used Titos but you can use your favorite brand. 5 Andes Mints 6 Gluten Free Oreo Cookie or your favorite sandwich cookie. Whipped Cream- I used almond whipped cream. Maraschino Cherries- I used the real ones without dye but use your favorite ones. To make them fancy, you can melt chocolate ahead of time and dip the glasses in it and roll them in chopped up Andes mints. Put them on a baking sheet and place in the fridge to harden the chocolate. Put all of the ingredients in a blender and blend until smooth Pour into your glass and top with whipped cream and a cherry if you desire. I prefer a fat straw so it doesn’t get clogged while slurping this delicious shake! Pin Me Now Make Me Later!

These double chocolate banana muffins are the answer to overripe bananas! If you have a bunch of bags of frozen bananas in your freezer these are the perfect recipe to use them up! I always seem to have bananas on hand that ripen too fast… or we eat them too slow… however you want to look at that! There are other variations of this recipe you could make as well. If you don’t want double chocolate, use a vanilla cake mix and add nuts or chocolate chips. Create your custom muffin with your imagination! What Do I Need To Make These Double Chocolate Banana Muffins? You will need 4 overripe bananas….. I like to freeze them first so they smush easier, but you can use fresh ones too. One gluten free chocolate cake mix. 1 Cup of Gluten free chocolate chips. 1 TSP Vanilla. A little water if the mix is too dry… Start with 1 TBSP. 1 TSP Cinnamon. 1/8 TSP Cayenne Pepper. More if you like it spicy! That’s it! Very few ingredients. Super Easy! Add all of the ingredients to a bowl and mix it up! Bake at 350 degrees for about 30 minutes, or until a knife comes out clean. Store in the fridge. Why I Like Frozen Overripe Bananas:I like using frozen overripe, peeled bananas because they produce a little more syrupy liquid when they are thawed and I think it makes the banana muffins or banana bread more delicious! Here’s how I like to mash my bananas: Peel them and put them in a ziplock bag. Freeze them. When you are ready to make these double chocolate banana muffins, thaw them. When they are thawed, smoosh them between your fingers! Boom-smashed bananas! When I was making this recipe I was thinking of my girls who are both in college. They have limited storage in their kitchen, so it would be easier to make muffins out of a cake mix rather than have baking powder, gluten-free flour, sugar, etc. Plus this makes it super easy! These cookies were the first sweet thing my husband fed our oldest daughter when she was 9 months old and I was at the gym! LOL, We joke about it now but at the time I was like …… that’s it.. we’ve ruined the baby! HAHA! I usually make some kind of chocolate chip cookie for back to school every year (Thanks to my friend Christine, who did this for her boys and my girls found out and now it’s been a thing since they were little :)), but this year is a little different. We are moving our youngest daughter to her apartment for college this weekend. Insert crying face. Insert excited face. Bring on Empty Nesting! We have talked about it coming up for like a year, but now it’s only a few days away! I may need to make these cookies for emotional eating support. Just kidding… Let’s Talk About Gluten Free Oats-There are many kinds of gluten free oats out there. There are basically 2 different kinds to my knowledge. Mechanically or Optically sorted and Farmed Gluten Free using the purity protocol. I personally only eat oats that are purity protocol because I don’t trust the mechanically sorted ones. But, everyone is different and you have to do what is best for you. The brand I use is Montana Gluten Free. They ship their purity protocol oats right to your door! I love food delivered to my door. I have used their products for over a year and have never had a reaction to them. The Oats I buy from them are tested to be less than 3ppm gluten. This is not a paid endorsement An example of mechanically or Optically sorted oats are Bob’s Red Mill. They say on their website that they won’t contain any more than 19 ppm of gluten. The oats used in Cheerios and other cereals are sketchy and I would not recommend eating them if you have Celiac. See what the Gluten Free Watchdog says HERE. Some people cannot handle oats at all because they contain Avenin. It can cause similar symptoms to someone who is celiac when they eat wheat. That’s no fun! Pin These COOKIES NOW make them Later! You will need the following ingredients and some willpower as to not eat all of the dough before you bake them Ha Ha! In the above pictures of these delicious morsels, I added MNM’s too. You can add them if you want or leave them out either way they are yummy! 1 Cup Butter- softened 1 C Raw Sugar 2 Eggs 1 C Coconut Sugar or Brown Sugar 1 Cup Peanut Butter or Almond Butter 11/2 Cup Gluten Free Flour- I used Jovial Pastry Flour 2 C Oats- purity protocol 1 TSP Baking Soda 1 Pinch of Salt 2 TSP Vanilla 1 TSP Baking Powder 2 C Chocolate chips/MnM’s or combo BOOM- delicious Oh wait you have to bake them… resist the cookie dough…… Preheat your oven to 350 degrees F. Start by Creaming together your butter and sugar in a mixer. Add the eggs one at a time. Add the vanilla and peanut butter. Slowly add the dry ingredients and mix to combine. Stir in the chocolate variety. Scoop onto a Silpat lined baking sheet. I use a cookie scoop. Bake for 12-14 minutes or until just turning brown. Remove from oven, let cool …if you can wait. Enjoy! You can make them as boozy as you’d like by controlling the amount of vodka you add to them. 1 bottle of Prosecco or champagne (substitute with lemon-lime soda for a nonalcohol version) 1/4-1 Cup of Vodka (leave out for a nonalcohol version) 1 Cup of cut up Strawberries 1 Cup of blueberries A Bottle of Lemonade 1 Cup of cut up Blackberries 1 Cup of Raspberries 1/4- 1/2 Cup Simple syrup or honey simple syrup if you want them sweet. You can make them ahead of time and pull them out of the fridge when you are ready to enjoy them! I had so much fun making these boozy balls with my friend Jamie today! I am not a huge sweet eater, but I do like to have little bites of deliciousness around during the holidays when company comes over. These FOUR recipes are really easy to make and go together pretty easy. The truffles are a little labor intensive with having to cool them in between each step. If you want the fastest and easiest of the recipes I would recommend the cake balls over the truffles, only because you need to use a double boiler for the truffles. What are some of your favorite holiday desserts? Do you like quick and simple desserts like these or more elaborate ones like Buche De Noel?
