Look no further! Scotch Eggs are my go-to quick make-ahead breakfast! I sometimes buy pre-hardboiled eggs from Costco to make the process even faster. These are perfect for weekday breakfasts when you are in a hurry or need portable protein. I also use them during the holidays. They are awesome for Christmas morning so I am not stuck cooking while everyone is waiting to unwrap the gifts. I am starting to plan my Christmas morning menu, as it is only a couple of weeks away. I know these will for sure be included in it because of their ease of preparation! That is as far as I have gotten though….. hehe…. I am a planner at heart but we had a crazy week so didn’t get as much done as I had hoped. Family and the Holidays: I am reflecting on our week and I am reminded to enjoy every day in your life. You never know when it’s your time or a loved ones time to go. My Sister In Law’s Step Dad passed this week as well as my Cousin’s almost wife’s Dad. My heart hurts for them to lose a loved one near Christmas, but there really isn’t ever good timing. I pray that the love they had and great memories will flood over them. I hope this super easy recipe saves you time and helps with your meal prep! If you don’t want to use Jimmy Dean sausage, you can also buy pork sausage and season it yourself. If you don’t like pork, turkey sausage will work, it’s just sticky and harder to roll around the egg. You might have to add some extra fat to the pan so it doesn’t stick as well. This gluten free pressure cooker or Instant Pot creamy spicy soup should have a more creative name but I didn’t feel well enough to come up with one. The theme of my week was spicy foods since I have this darn sinus cold. I made this pressure cooker creamy spicy soup for dinner because it was warm and felt like comfort food and two because it is spicy and I can taste it. I am still sounding like I smoke 23 packs of cigarettes a day but I think I am on the upswing!
This creamy spicy soup was invented with basically what I had in my fridge lol. I didn’t really feel like cooking so I threw a few ingredients into my Instant Pot and voila! Soup that is yummy! I have the older version of the Instant Pot but it works amazingly so I probably won’t upgrade until I have to. When I am not feeling well I always crave spicy soup. My Mom always said Chicken Soup is good for you when you are sick. I always keep frozen chicken bone broth in the freezer to heat and sip on too. It’s not spicy but you can add a few drops of Tabasco to spice it up. I hope you are all staying healthy this Holiday Season.
