For this recipe, we are baking them uncovered. Because we already pan-fried them and are baking them in a sauce, they won’t dry out. That’s part of what makes this recipe so great. Is this recipe also keto? Yes it can be! You would need to choose a lower carb tomato sauce and add the cheese for added fat! I love eating this recipe on the keto diet! What do I need to make this Proseccorita Cocktail?
This cocktail is super easy to make! You only need 4 ingredients and voila it’s time to cheers! Margarita mix without the tequila- I like to use Tres Agaves Organic Lime Margarita Mix. Tequila A lime Wedge Prosecco- La Marca is my favorite for this cocktail but you can use whichever one you’d like! A cocktail shaker with ice. Here’s how to make this yummy drink: Pour the margarita mix and tequila into an ice filled shaker. Shake it up… Pour into a glass. Fill the glass with Prosecco. Garnish with a lime slice. These are the best gluten free and keto wines in my opinion! I have sampled quite a few for research purposes for this post…just for you! HAHA!
Isn’t all wine gluten free?This is my favorite answer… YES! Well, most of the time. If it is wine without any additional flavorings it is naturally gluten free. Those pesky natural or unnatural flavorings can contain hidden gluten! If you want to check out my list of hidden gluten in foods you can read more about it here.
Is all wine Keto or Paleo? Unfortunately, no. Some wines have added sugar to them. When you are following a ketogenic diet, you want to avoid all added sugar and consume low sugar or low carbs. Since sugar equals carbs, you can see where I am going with this. Paleo diets, in general also avoid added sugar that is not from honey or fruit. Which wine is best to drink on a ketogenic diet? If you are going to drink on a ketogenic diet you need to know your carb counts for each drink. One bottle of wine can easily push you over your daily limit on carbs! Here are my top favorites to drink that are not “dry farm wines or low carb wines”. They also now have other Italian varieties you can order. Each varies on the carb count but they are all low carbs! I think the name is super cute! They ship you mini bottles of wine. Each bottle is about 1 1/2 glasses and about 1.5g Carbs per bottle. They are perfect if you don’t want to open a full bottle of wine. To be honest, we usually end up opening two of them and in that case, it would be more cost effective and carb effective to open a bottle of Palo61 or Dry Farms Wines.
But if you have more self control than I do and are only looking for one serving they are perfect! Check them out here. They are natural wines with no additives farmed in California. Avaline-
Avaline was founded by Cameron Diaz and Katherine Power. It is 100% Organic with no added sugar or colors. It has less carbs per glass than traditional wines but it is not as low carb as the Secco Wine Club or the Dry Farms Wines.
I found them to be enjoyable but the other ones are still my favorite! Those are my top 4 ketogenic, gluten free, and paleo wines. Preheat oven to 350°F. Grease an 8-inch pan or line it with parchment for easier removal. I used a brownie pan and highly recommend it for crispy edges all around if you have one. Add all the ingredients to a bowl or your stand mixer. Mix to combine.Spread evenly in the pan and smooth it down. Bake for 15-20 minutes. Watch them so they don’t burn. Take them out of the oven and let them cool so they firm up. 1 c Sour Cream 16 oz Cream Cheese, softened 2 c Shredded Cheddar Cheese 1 c Shredded Parmesan cheese 4 slices of Bacon, cooked and crumbled 5 Jalapenos, destemmed, deseeded, and diced- save one Jalapeno or use an additional for garnish if desired. 1 Cup Mayo 1 Cup Shredded Mexican Blend Cheese Note: you can also use (1) 4 oz can Diced Jalapeno Peppers, drained if you can’t find fresh Jalapenos What can I scoop my dip with? Pork rinds– I call them Porkie Puffs, they are delicious! Cucumbers-low carbs, perfect for keto. Crackers-the tried and true classic and luckily, you can find keto-friendly crackers. Hey there! Crockpot Mississippi Pot Roast is super easy to make and full of flavor! I think you are going to love it!
HERE’S THE INGREDIENTS TO MAKE THIS Crockpot Mississippi Pot Roast!
(1) 3-4 LBS Chuck Roast Flavor God Ranch Seasoning- or any other gluten free ranch you like such as Hidden Valley. (1) 1 oz packet gluten free Brown Gravy 1/2 c Butter (1) 16 oz jar whole or sliced Pepperoncinis, drained 1 Yellow Onion, sliced Pepper to taste. Note: the gravy and ranch are salty so you will not need salt for this recipe. Here’s How to Make it:Add the sliced onions to the bottom of your crockpot. Put the roast on top of them. Pour the ranch and gravy on top of the roast. Add the butter on top in cubes. Pour the drained Pepperocinis in there. Cover and cook on low for 8 hours. Shred it and serve it with your favorite sides! Why is it called a Mississippi Pot Roast? Robin Chapman created this recipe by modifying a recipe from her aunt in the 1990s to make it less spicy for her kids. Her family loved it then she gave it to a friend where it became famous. Both of them called it “pot roast” but it got passed around by a couple of bloggers. One of them called it Mississippi Roast and the name stuck. You can read more about it here. What makes this gluten free? Most dried gravy packages have flour in them as a thickener. I used an organic one that is certified gluten free. Also, I chose to use Flavor God Ranch Seasoning, because it has cleaner ingredients and it is also gluten free. Hidden Valley Ranch dried seasoning is also labeled gluten free and can be used in this recipe if you like. What to serve with Mississippi Pot Roast? Gluten Free Beer can only mean one thing in my mind and that is that it’s made from 100% gluten free ingredients and is Celiac Safe!
However, not everyone advertising gluten free beer agrees with me! There are brands out there that claim to remove gluten from the brewing process, but I don’t trust that! They brew the beer with gluten-containing ingredients and use a chemical to “remove” the gluten. The Gluten Intolerance Group published a study The Celiac Patient Antibody Response to Conventional and Gluten-Removed Beer and it showed that some patients with Celiac Disease react to gluten removed beer. I happen to be one of those people… I drank an Omission beer once and that was enough for me! After that experience, I went back to the trusted 100% gluten free beers available. How it started: When I was first diagnosed with Celiac Disease, I used to love having the occasional Guinness. Once I found out that I could no longer drink the dark coffee flavored deliciousness, I was on the hunt for a gluten free replacement! At the time, there were none to be found. The only gluten free beer I could find at Whole Foods was: Red Bridge and New Grist. And neither one of them resembled Guinness. The First Gluten Free Stout that I tried: Glutenberg Beer was actually the first gluten free stout that I tried! It’s made in Canada and it is ELISA tested to make sure it is Celiac Safe! I had heard about this beer but could not buy it in Arizona, so we went to visit our family in Canada and there it was on the shelf! We even went to California to buy it when it was available there first! I love their Stout :)

What I learned from my visit to Holidaily in Colorado: When we visited Holidaily, we learned how they use 100% gluten free ingredients to brew their beer! This makes them Celiac Safe! They have a super cute location in Golden! I love their Favorite Blonde as well as the Adventure Series one! Their Stout is also delicious… too many good ones to really choose a favorite! And we tried one of each when we were there to visit…they are sample sized and I shared! lol
If you are in Portland you need to try Ground Breaker Brewing! We have gone to Oregon every year for the past 5 years for a wine trip! I know this is about beer, not wine… I am getting to the point lol. We wanted a break from wine tasting, so we went to Ground Breaker!
We got to devour some of their delicious food as well as sample some tasty beers!

Gluten Free Bacon and Pineapple Fried Rice is so flavorful and delicious! Plus it’s fun to serve in the outside shell of the pineapple!
Here’s The Ingredients to make this Gluten Free Bacon and Pineapple Fried Rice:4 Cups of cooked Jasmine Rice- you can use leftover rice or make it fresh!
1 Pork Chop 3 Green Onions- sliced 1 Pineapple- Cut in half and scoop out the center. Remove the core and cut up the flesh. You need about 1 cup of chopped pineapple for the rice 3 Slices of thick cut Bacon- Sliced into small pieces. 3 Eggs- Whisked in a bowl 1 Cup Mixed Frozen Veggies of your choice- I used peas, carrots, and beans. 1 Yellow or White Onion- Chopped 1/3 Cup of Gluten Free Soy Sauce, Tamari, or Coconut Aminos- You can add more if you like 1/4 Cup Sesame Oil- Once again, add more if you like 1 TSP Ground Ginger 1 TSP Garlic Powder EVOO to cook it all in S & P Here’s how to make this recipe: Let’s start out by turning the wok or large frying pan on medium high heat. Add a drizzle of olive oil. Add the bacon. Fry until it is crispy. Add in the diced pork. Stir. Cook until the pork has reached 145 degrees F. Add in the diced white or yellow onion. Stir. Sautee until the onion is soft. Add in the Frozen Veggies. Add in the chopped Pineapple. Stir. Add in the Garlic Powder and Ginger. Stir. Add in the cooked Rice. Stir fry the rice for a few minutes. Make a Well down to the bottom of the pan. Add in the whisked Eggs. Scramble them in the pan. Stir the cooked eggs into the rice mixture. Add Salt and Pepper. Add in the Soy Sauce. Stir. Add in the Toasted or Plain Sesame Oil. Stir. Garnish with Sliced Green Onions. Put the rice back into the Pineapple Shells. Enjoy! What makes fried rice flavorful? IMO (In My Opinion) the flavor comes from the ingredients such as bacon and pineapple in this recipe! As well as the addition of toasted sesame oil and gluten free soy sauce! I love making fried rice when we have leftover rice. You can definitely make it with a fresh batch of rice, however, it always comes to my mind with leftover rice! Did you know that it is thought that people from Thailand invented Pork and Pineapple Fried Rice? Our local Thai restaurant has it on the menu and I love it! I created this version as a copycat and I loved the idea of having Bacon in it as well because it adds so much delicious smokey flavor! Yummy!
