You can make the chili ahead of time and then assemble for a quick dinner. I used my recipe from my Paleo Elk Chili and made it in the instant pot. This cooks it quite quickly. I microwaved a few small sweet potatoes and cut up some veggies for toppings and voila dinner is served. These stuffed sweet potatoes are a perfect weeknight meal because you can prep ahead and have dinner ready fast! I love using my Instant Pot to cook meals like soups and stews. Next you want to microwave enough sweet potatoes to feed your people. Chop up vegges to use as a garnish. I like: peppers, cilantro, green onions and olives. Cut your sweet potato so there is a slit in the top and squeeze it slightly so there is room to put the chili. Put the chili in your sweet potato and garnish! Gluten-Free Seared Duck Breasts are a treat at our house! I love to make them in a hot pan so they sear the skin to crispy perfection! This is usually a special occasion meal, however it happened on a random Saturday with nothing specific to celebrate except family and good friends! I had some awesome duck breasts in my fridge from Hudson Valley Duck Products and was craving seared duck breast wraps. DINNER was so delicious and lots of fun! We swam in the pool with glasses of Rosé, had some appetizers, played with the babies (not ours but our niece and like our nephews), cooked food, drank wine and had a lovely time. We tried a bottle of brandy that had a pear grown inside of it! I imagine the pear tree covered in bottles! What a sight it must be! This was a lovely gift! WHAT DO I SERVE WITH GLUTEN-FREE SEARED DUCK BREASTS? We Julienned veggies and served it with gluten free hoisin, duck sauce and Sirach. If you would like a side dish, rice would be a good addition or cauliflower rice. We used lettuce to wrap the seared breast and veggies in instead of steamed buns to keep the carb count down. We are lucky enough to have friends that hunted last fall for an elk and shared some meat. Even thought the weather today in Phoenix is in the 90’s I thought Elk Chili sounded yummy. A cold front with rain is supposed to move in so this will be great as left overs this week. I did not grow up eating wild game so sometimes I am a little afraid of how it will taste. Let me tell you that this was delicious! Our friends had it mixed with pork so I didn’t have to add any extra fat to it since elk is so lean. My hubby, BIL, FIL and daughter went along to help them spot the elk. Sadly, we all had to go home before he shot it. Thankfully we still got to share the experience and family bonding time together. I am not a big wall mount girl. My hubby just hung a giant Wahoo mount on our wall and I have to say that I am glad he didn’t shoot the elk or our Wahoo would have had a friend! Haha! Tested the elk meat since it was mixed with pork at the processing facility. I just wanted to make sure there was no gluten in it. I have been testing a lot of food with my Nima Sensor. It’s a handy little device that detects gluten in food. It has been eye opening to the amount of gluten I find in foods labeled gluten free. Today is our 20th wedding anniversary! I know we look like we were 12 when we got married! Marraige has it’s up times and down times. It always takes effort, but it is an effort that is so rewarding! I love that each person gets to choose what they want in each bun of delicious duck and sauces and veggies! If Costco doesn’t have the gluten free duck there, I have also ordered it online through Hudson Valley Foie Gras. Theirs is also delicious and easy to make! You need a bamboo steaming basket that fits in a wok. Whole duck or duck breasts. Cucumber Green Onions Red Peppers Gluten Free buns that are frozen so you can steam them. You can also use rice paper wrappers and soften them in hot water and wrap all of the ingredients inside of them.
