This super easy gluten free chicken salad is one of my favorite summer lunches! It is quick to make and doesn’t require you to turn on the oven! Which I love since I live in AZ!
HERE’S WHAT I LIKE TO PUT IN MY GLUTEN FREE CHICKEN SALAD:
This version of my chicken salad is also keto but I have included optional add-ins if you like! 4 Cups of diced gluten free rotisserie chicken or precooked chicken 1/2 Cup diced pecans 1 Cup Mayo 1 TBSP Mustard 2 Stalks of Celery that are diced. 1 Pinch Salt (or seasoned salt) and Pepper 1 Pinch Herbs de Province 3 Green onions chopped Here are some other ingredients you might like to add: chopped grapes, dried cranberries, or chopped peppers. You can be creative and add any other ingredients you like! If you add a lot more items, you might have to add more mayo. Especially if you are like me and like it creamy! HERE’S HOW EASY IT IS TO MAKE THIS DELICIOUS CHICKEN SALAD: Chop all of the ingredients that need to be chopped. Put them all in a bowl. Add in the rest of the ingredients. Stir to combine. You can chill it in the fridge for a while if you like. However, you can also eat it right away too! Serve it with some gluten free bread for a sandwich, in between two big pieces of pepper for a lower carb sandwich, with sliced cucumbers to keep it low carb, or on it’s own in a bowl with a fork. ?

I have this guacamole saver and it works perfectly! INGREDIENTS
I originally had a variation of these wings at my BIL and SIL’s houses. They are my favorite gluten free and keto wings! I love to cook them on the grill! They have lots of flavor and are very mild. This is an easy recipe and the best part is that you can marinate them ahead of time and then grill, bake or air fry them later!
HERE ARE THE WAYS TO COOK THESE GLUTEN FREE AND KETO WINGS:
You can cook these wings in an oven on a sheet pan, in an air fryer basket in the air fryer or on a bar b q grill. The cooking time will vary depending on which way you choose to cook them. HERE’S THE INGREDIENTS TO MAKE THESE WINGS: You will need the following ingredients to make these delicious gluten free chicken wings . 3 lbs of wings- I like to mix drummettes and flats. 2 TBSP Italian Seasoning 1/3 cup of Tamari or gluten free soy sauce. 1/3 cup of Coconut Aminos 1/2 cup EVOO 3 TBSP Apple Cider Vinegar A TSP of Onion Powder 1 TSP Garlic Powder 1 Handful Fresh parsley Salt and Black Pepper to taste ARE THESE WINGS KETO, LOW CARB OR PALEO? Yes, they are! There is no added sugar in this recipe so they are keto and low carb. To make them paleo, switch out the tamari for extra coconut aminos. HERE’S HOW TO MAKE THESE GLUTEN FREE CHICKEN WINGS: The first step is to buy fresh wings or make sure they are thawed. Pat the raw wings dry with a paper towel and set them aside. Sprinkle them with Salt and Pepper. Combine all of the marinade ingredients into a bowl. Stir to combine. Put the wings into a large resealable plastic bag or a large glass dish with a lid. Pour the marinade over the wings. They can marinate for up to 24 hours. When you are ready to cook them, start your grill on medium heat to medium-high heat if you are grilling. You will need to watch them constantly because they can burn quickly. Turn them frequently to prevent burning. Once they are cooked you can move them off of the grill grates and keep them warm by covering them with aluminum foil until you are ready to serve. If you are cooking them in the air fryer, place chicken wings on a single layer. Fry them in batches to not over crowd the basket. Heat the air fryer to 350 degrees. Cook the wings for 20 minutes turning them every 5 minutes. If the air fryer chicken wings still have soggy skin, crank the temperature up to 425 and air fry them for an additional 2 minutes. If you are baking them in the oven put them on a sheet pan with nonstick foil lining at 400 degrees. They will cook in about 40 minutes. Turn them halfway through cooking. To get the chicken skin crispy, you can use a wire rack inside the baking sheet. Regardless of your cooking method, cook them to an internal temperature of 165 degrees Fahrenheit.
I hope you love my favorite wings as much as I do!

Hey there! Today’s recipe is Gluten Free Keto Irish Cream, perfect for putting in your coffee or for St. Patty’s Day coming up. It is so good! I love this Keto Copycat version of Bailey’s Irish Cream!
HERE’S THE INGREDIENTS TO MAKE THIS Gluten Free Keto Irish Cream:
3 c Heavy Cream 1 c Irish Whiskey, I like Jameson because it has very low carbs. 40 drops of Lakanto liquid Monkfruit original flavor 1 1/2 TSP Instant Expreso Granules 3 TBS Unsweetened Cocoa Powder 1 TSP Pure Almond Extract 1 TBS Pure Vanilla Extract- have you seen my easy homemade gluten free Vanilla Extract recipe? HERE’S HOW TO MAKE Gluten Free Keto Irish Cream: Combine all of the ingredients and pulse until well blended. Store in the refrigerator for up to 1 month. Be careful not to over blend it because it can become super thick. The whipped cream will whip just like you are making whipped cream. If you make it super thick, which I have by not paying attention, it is delicious as a “soft top” for coffee. Is Bailey’s ok for keto? Short answer: no. It contains 11 grams of carbs per shot. If you pour it into your coffee, you could easily have more than 20 grams of carbs. Thankfully most hard alcohol is low in carbs. However, that doesn’t mean there are no keto safe options. Here is a list of keto friendly options available to us. Does Irish Cream Expire? Yes but not for about a month or so. Make sure to store it in the fridge. Does Peanut Butter ruin ketosis?
If you eat peanut butter regularly on keto, you may not be successful staying in ketosis. However, if you have peanut butter every once in awhile, you can stay in ketosis. For this recipe, you’ll be using 40 total carbs of peanut butter which is about 3 carbs per cookie. Eggs are only 1 carb so in total it’s about 3.5 carbs per cookie. I based this recipe on the one from Kirbie’s Cravings. Why do my keto peanut butter fall apart? When making a # in your cookies, be sure to do so gently or they may fall apart. If you don’t allow your cookies to cool after taking them out of the oven, they may fall apart. I had this happen to me when they were hot and I was trying to shove one in my mouth before it cooled! They stick together once they are cool! LOL! PIN NOW and make it later!

Do you bake Pork Chops covered or uncovered?
For this recipe, we are baking them uncovered. Because we already pan-fried them and are baking them in a sauce, they won’t dry out. That’s part of what makes this recipe so great. Is this recipe also keto? Yes it can be! You would need to choose a lower carb tomato sauce and add the cheese for added fat! I love eating this recipe on the keto diet! Hey there! Crockpot Mississippi Pot Roast is super easy to make and full of flavor! I think you are going to love it!
HERE’S THE INGREDIENTS TO MAKE THIS Crockpot Mississippi Pot Roast!
(1) 3-4 LBS Chuck Roast Flavor God Ranch Seasoning- or any other gluten free ranch you like such as Hidden Valley. (1) 1 oz packet gluten free Brown Gravy 1/2 c Butter (1) 16 oz jar whole or sliced Pepperoncinis, drained 1 Yellow Onion, sliced Pepper to taste. Note: the gravy and ranch are salty so you will not need salt for this recipe. Here’s How to Make it:Add the sliced onions to the bottom of your crockpot. Put the roast on top of them. Pour the ranch and gravy on top of the roast. Add the butter on top in cubes. Pour the drained Pepperocinis in there. Cover and cook on low for 8 hours. Shred it and serve it with your favorite sides! Why is it called a Mississippi Pot Roast? Robin Chapman created this recipe by modifying a recipe from her aunt in the 1990s to make it less spicy for her kids. Her family loved it then she gave it to a friend where it became famous. Both of them called it “pot roast” but it got passed around by a couple of bloggers. One of them called it Mississippi Roast and the name stuck. You can read more about it here. What makes this gluten free? Most dried gravy packages have flour in them as a thickener. I used an organic one that is certified gluten free. Also, I chose to use Flavor God Ranch Seasoning, because it has cleaner ingredients and it is also gluten free. Hidden Valley Ranch dried seasoning is also labeled gluten free and can be used in this recipe if you like. What to serve with Mississippi Pot Roast?
