Here’s The Ingredients to make this Gluten Free Bacon and Pineapple Fried Rice:4 Cups of cooked Jasmine Rice- you can use leftover rice or make it fresh!
1 Pork Chop 3 Green Onions- sliced 1 Pineapple- Cut in half and scoop out the center. Remove the core and cut up the flesh. You need about 1 cup of chopped pineapple for the rice 3 Slices of thick cut Bacon- Sliced into small pieces. 3 Eggs- Whisked in a bowl 1 Cup Mixed Frozen Veggies of your choice- I used peas, carrots, and beans. 1 Yellow or White Onion- Chopped 1/3 Cup of Gluten Free Soy Sauce, Tamari, or Coconut Aminos- You can add more if you like 1/4 Cup Sesame Oil- Once again, add more if you like 1 TSP Ground Ginger 1 TSP Garlic Powder EVOO to cook it all in S & P Here’s how to make this recipe: Let’s start out by turning the wok or large frying pan on medium high heat. Add a drizzle of olive oil. Add the bacon. Fry until it is crispy. Add in the diced pork. Stir. Cook until the pork has reached 145 degrees F. Add in the diced white or yellow onion. Stir. Sautee until the onion is soft. Add in the Frozen Veggies. Add in the chopped Pineapple. Stir. Add in the Garlic Powder and Ginger. Stir. Add in the cooked Rice. Stir fry the rice for a few minutes. Make a Well down to the bottom of the pan. Add in the whisked Eggs. Scramble them in the pan. Stir the cooked eggs into the rice mixture. Add Salt and Pepper. Add in the Soy Sauce. Stir. Add in the Toasted or Plain Sesame Oil. Stir. Garnish with Sliced Green Onions. Put the rice back into the Pineapple Shells. Enjoy! What makes fried rice flavorful? IMO (In My Opinion) the flavor comes from the ingredients such as bacon and pineapple in this recipe! As well as the addition of toasted sesame oil and gluten free soy sauce! Did you know that it is thought that people from Thailand invented Pork and Pineapple Fried Rice? Our local Thai restaurant has it on the menu and I love it! I created this version as a copycat and I loved the idea of having Bacon in it as well because it adds so much delicious smokey flavor! Yummy!

I love to pair this stuffing with turkey on Thanksgiving! It is also really yummy in the middle of a pork crown roast! Heck, we like to just eat it on its own too since it has sausage in it! If you are following a ketogenic diet, I have added an option for how to make it lower carb! I know that I don’t want to feel like I am missing out on holiday foods, but I don’t want to be sad looking at the scale in January! What do I need to make this recipe? For this gluten free savory stuffing, you will need the following ingredients: Gluten free bread or keto bread, such as Unbun or fathead dough made into bite sized squares or my keto cornbread. Pork sausage- gluten free Baby portobella mushrooms Dried Cranberries- leave out for keto. Yellow Onion Garlic cloves Italian seasoning Red Pepper Flakes Parmesan Cheese- add extra for keto White Wine- use a low carb wine like Secco Wine Club for keto. Chicken Stock Salt and Pepper How do I make this recipe? The first thing is to toast the bread. (If you are using my keto cornbread, you would want to make it the day before) You can butter it or drizzle it with olive oil and toast it under the broiler. Flip it over so both sides are toasty. Cook the sausage so it is crumbled like ground beef. Add the other ingredients to the pan except for the bread, wine, cheese, butter, and chicken stock. Saute until the onions are soft. Add red pepper flakes to taste. In a large bowl, combine the warm ingredients with the bread. Pour the wine and stock over and stir to combine. Butter a large baking dish. Pour the bread mixture into the baking dish. Cube butter and put squares over the top. Sprinkle parmesan over the top. Bake in a 375 degree oven for about 45 minutes. This gluten free and keto cornbread is delicious to eat on its own with butter, or dunk it in soup, or to make my gluten free savory stuffing!
What makes this gluten free cornbread keto?
Truthfully, there is no corn in this cornbread! However, it tastes like cornbread to me and it works perfectly for my gluten free savory stuffing recipe! We also like to pair it with soup or have it as a breakfast with butter and keto syrup! I can remember my Mom making cornbread for breakfast with lots of butter, syrup, or honey. So yummy! This grain free version takes me back to those mornings! My favorite was a mixture of all three- butter, syrup on some, and honey on some. It was even better if you microwaved it after adding the toppings to create a crusty sugary edge….. my things have changed in the way I eat since then lol! Since there is no corn in this cornbread, I use lower carb ingredients to make it keto friendly
What do I need to make this gluten free and keto cornbread?
You will need the following ingredients to make this cornbread: Almond flour Baking Powder Eggs Butter Swerve or your favorite Keto sweetener I have seen other recipes that use Artificial Corn Flavoring, but I don’t think it needs it and it sounds gross to me. Just throw everything into a bowl and mix it together and voila you are done! Super easy! I like to let mine sit in the fridge for a few hours before we eat it to let the flavors marry! You can even add extra veggies like bell peppers if you want to get fancy about it! Here are some other recipes you might like: I am a big fan of smoked tomatillo salsa. It is a beautiful green color and you can control how sweet you make it, which I love. Sometimes at restaurants, the tomatillo salsa is too sweet for me. Here is the recipe for my texas caviar. The holidays are quickly approaching! If you are looking for holiday side dishes try my air fryer bacon Brussel sprouts! They are crispy and delicious. Not to mention easy to make.
If you are cooking for a large crowd, try my oven-baked Brussel sprouts that are equally delicious and you can make a larger amount at once. You can add the mushrooms to this recipe or leave them out… it’s up to you! What You Need to Make These Air Fryer Bacon Brussel Sprouts: Brussel sprouts Thin cut bacon Balsamic Vinegar or reduction An Air Fryer. I have the air fryer lid that goes on top of my Instant Pot! I love it especially for just 2 people! Air fryer bacon Brussel sprouts, I refilled the air fryer basket twice to make sure they all got crispy! How Do I Make These? Start by washing and drying your Brussel sprouts. Cut them in half. Chop up the package of thin cut bacon. I like medium sized pieces because the bacon gets crispier in the air fryer. Put the Brussel sprouts in the air fryer basket. Put the bacon in the air fryer basket. Drizzle a little balsamic vinegar over the top. Sprinkle with Salt and Pepper. Turn the air fryer on for 4 minutes at 400 degrees. After it is done, use tongs to flip the food around. Turn the air fryer on for 4 more minutes at 400 degrees. After it is done, they should be crispy and delicious! Serve with your favorite protein. Here’s The Easiest Way To Clean Your Instant Pot Air Fryer: I love my instant pot and the air fryer lid that goes with it. The best part is it cleans up really easily! You can soak the basket with a little soap inside the instant pot bowl. Or you can put them all in the dishwasher! I love french fries that are crispy on the outside and fluffy on the inside! They are my favorite! I don’t really have a thickness preference, I like them thin or THICCCK (my daughters would say thick with two c’s if they are really thick.. lol)! How do you like your fries? Sweet Potato or Regular Potato?I usually go back and forth with our potato choices when it comes to french fries. We like them both! Sometimes, I even do a combo of potato types. Sweet potatoes come in a few different colors, however, it doesn’t affect the taste of the potato. Sometimes I like to mix up the colors just for the aesthetic. If you are like me and love potato products, just make sure to season them well to bring out their delicious flavor. What do you need to make these awesome french fries? You will need some potatoes or sweet potatoes or a combo of both. 1-2 baking sheets, depending on how many french fries you want to make. Olive or Avocado oil to drizzle them in. Salt and Pepper as well as your favorite dipping sauces. A bowl to wash them off in. An oven to cook them in. A clean kitchen towel to dry them with. A knife to chop them up with. (The link is my favorite knife) And last but not least a cutting board to chop them on. Here’s My Method to make them fluffy in the middle and crisp on the outside:
When I make pretty standard-sized french fries, I bake them at 375-400 degrees. It usually takes about 20 minutes or so. Honestly, I usually forget to set a timer because I start on other parts of dinner and they are done! lol. If you are going to reheat your fries the next day you might not want to put them in the microwave. If you do they will be soggy. It’s super weird to start thinking of only cooking for 2 people in a few months! We are about to be empty nesters.. crazy thought! What do you need to make this cauliflower rice recipe? This cauliflower rice recipe is super easy to make! You only need a few ingredients and it is ready really fast too! You will need 1 bag of frozen cauliflower rice. I used pre-made for the speed this time. 1/4-1/2 tps of Chipotle Pepper Seasoning. If you don’t like it spicy I would use less. If you like it spicy you can add more! 1 lime- juiced and zested S&P A little drizzle of EVOO or Avocado oil. Boom- super easy!
