Hey there! Today’s recipe is pressure cooker / instant pot gluten free Irish stew just in time for St. Patty’s day. Super easy and yummy.
HERE’S THE INGREDIENTS TO MAKE THIS Pressure Cooker / Instant Pot Gluten Free Irish Stew:
2 TBS Olive Oil 3 LBS Beef Stew Meat 1 c Onion, coarsely chopped 1 TBS Garlic, minced 1/4 c Gluten Free Cup 4 Cup Flour 1 can Gluten Free Irish Stout Beer- I used Holidaily 4 c Beef Broth 1/4 c Tomato Paste 2 LBS Small Potatoes, halved 1 c Celery, chopped 1/2 TSP Italian Seasoning 1 c Carrots, peeled, halved, and cut into 1-inch pieces Salt and Pepper to taste Parsley for garnish HERE’S HOW TO MAKE Pressure Cooker / Instant Pot Gluten Free Irish Stew: Turn your instant pot onto the Sear setting with the lid off. Add the Olive Oil and allow it to heat. Season your Beef with Salt and Pepper. Coat your Beef with Flour on all sides. Add half the Beef cubes to the pot in a single layer, and allow them to cook for 3-4 minutes per side or until browned. Remove the Cooked Beef from the pot and repeat with the rest of the Uncooked Beef. Remove the rest of the now seared Beef from the instant pot. Add the onions to the instant pot and cook until tender. Place the garlic in the pot to cook for ~30 seconds. Pour the gluten free beer into the pot. Scrape the bottom to get all of the delicious bits off the bottom. Add the Beef Broth, Tomato Paste, Potatoes, Carrots, Italian Seasoning, Salt, and Pepper to the pot. Turn off your Sear setting and stir to combine all your ingredients. Put your lid on and seal it, then turn your instant pot to Meat Stew Mode. After it’s done, release the pressure, remove the lid, sprinkle with Parsley, and serve. Enjoy! What is Irish Stew? According to Wikipedia, Irish Stew is a stew made of mutton or lamb or goat or beef and root vegetables native to Ireland. Apparently, there’s little consistency to the ingredients in the stew. However, potatoes, onions, and parsley seem to be consistent. Traditionally, it’s called “stobhach gaelach”. PIN NOW and make it later!
What is 100% Gluten Free beer?
Some beers try to be gluten free by removing the gluten from their beer but this is not safe for celiac. Some beers are made without gluten at all and these are celiac safe. This easy instant pot hash brown soup is super easy to make and gluten free! I made it for a family get-together and there was none left! Definitely a crowd-pleaser!
Here are the ingredients you will need to make this easy instant pot hash brown soup:
1- 20 oz bag of Shredded Hash Browns- Gluten Free 32 oz Chicken Stock 10 Sliced of bacon- cook and dice. Save 1/2 for topping the soup. 1 pinch of salt and pepper A small yellow onion diced 1 block of cream cheese 2 cloves of garlic- minced or 1 tsp garlic powder 3 TBSP Gluten free flour substitute TWO Cups Heavy Cream 2 Cups Shredded Cheddar Cheese plus additional for garnish on top of the soup 2 Green Onions- chopped for garnish Here’s how to make this delicious Instant Pot Hash Brown Soup: Turn your Instant Pot onto Saute mode. Chop and cook the bacon in the Instant Pot until Crispy. Remove half of the bacon and place on a paper towel lined plate. Set aside for later. 4 Cups Chicken Stock- The broth is important because it adds so much flavor! 2 TBS Cornstarch (optional for keto) 1 TSP Ground Ginger 1/2 TSP Garlic Powder 3 Eggs A drizzle of Toasted Sesame Oil 3 Green Onions, thinly sliced, plus extra for garnish 1/4 c Lemon Juice or Juice From a Lemon if you like it lemony Salt and Pepper to taste Here’s how I made this recipe:Whisk the Broth, Cornstarch, Ginger, and Garlic Powder in a medium saucepan until smooth. Bring to a simmer, stirring occasionally. Add Sesame Oil. Stir. Add Lemon Juice. Stir. Whisk your Eggs in a bowl. Once the broth is at a simmer, create a whirlpool with a fork or whisk and slowly pour your Eggs into the Soup as you stir to create egg tendrils. Remove the pan from heat. Stir in Green Onions, Salt, and Pepper. Serve with sprinkled Green Onions. Enjoy! Is Egg Drop Soup Keto? Other recipes use corn and sugar in their Egg Drop Soup but if you omit it like we are in this recipe, it’s perfect for keto. I only used 2 TBSP of cornstarch for this recipe which is a total of 14 carbs. You also have the option of leaving it out. The soup will not be as thick but it will still be delicious! Cornstarch AlternativesEven though I only used 2 TBS, the cornstarch is the most keto unfriendly part of this recipe so here are a few alternatives, you can read more about them here! Glucomannan Powder- it’s tasteless and has only 5 carbs. Xanthan gum- great for soups, smoothies, and more and it’s 0 net carbs! Coconut Flour-you’ll need to make it into a slurry in order to add to this soup but it’ll add a sweetness and slight coconut flavor when you’re done if you’re looking to remix the recipe. Is Egg Drop Soup good for when you’re sick? Yes! I love it as an alternative to Chicken Noodle or Chicken Zoodle soup! It’s a great way to get nutrients from broth, lemon juice, and eggs. Hey there! White Chicken Chili is perfect for cold days. I just made this for my daughter’s graduation from college and it was a crowd-pleaser! It’s super easy to make in your Instant Pot or Crockpot!
What Do I Need To Make This?
1 Small Yellow Onion, diced 1 TBS Olive Oil 2 cloves of Garlic, finely minced (2) 14.5 oz cans of Chicken Broth (1) 7 oz can of Diced Green Chiles 1 1/2 TSP Cumin 1/2 TSP Sweet & Smokey Paprika 1/2 TSP Fresh Cilantro 1/4 TSP Cayenne Pepper 1/2 TSP Dried Oregano Salt & Pepper to taste (1) 8oz package of Cream Cheese cut into small cubes 1 1/4 c of fresh Corn or frozen corn (2) 15 oz cans of Cannellini Beans 2 1/2 c of Shredded Cooked Rotisserie Chicken 1 TBS Lime Juice Here’s How To Make This Recipe: Put your Olive Oil, Onions, and Garlic in your Instant Pot on “Saute” mode or ~5 minutes until the onion and garlic start to turn soft. Add Chicken Broth, Green Chilies, Cumin, Paprika, Oregano, Cayenne Pepper, Salt, and Pepper. Turn the Instant Pot off of saute mode. Put the lid on and start it on Manual Pressure but turn the time down to 10 minutes. Once it is finished, release the pressure carefully. Drain and rinse Beans in a fine mesh strainer or colander. Measure out one cup of the beans and set aside. Puree the one cup of beans and a little broth from the soup until nearly smooth. This will thicken the soup. Add it to the instant pot with the non pureed beans. Add Cream Cheese, Chicken, Corn, and Lime Juice to the instant pot. Stir. You can serve the soup now, or close the lid and keep on the warm setting until you are ready to eat! Serve with toppings of your choice. How to make White Chicken Chili Dairy Free? This recipe calls for cream cheese but you can substitute it for dairy free cream cheese if you need to. Top it with your favorite shredded dairy free cheese as well! Can I make this White Chicken Chili with frozen chicken? Yes, just increase the time you cook it in the instant pot but I don't recommend it. I think the flavor is better with rotisserie chicken and highly recommend it! Pin it for later!

I love this spicy Sicilian chicken soup when I am craving comfort food or if I am not feeling well! There’s something about eating a little spice if you have a stuffy nose that helps IMO!
I used to love getting this soup before I knew that I had Celiac Disease! It was perfect on a cold day or if I was feeling under the weather!
I no longer eat at Carrabba’s because I have been glutened there twice! So, I no longer trust them. This lead me to create my own version from my memory of what it tasted like! What do I need to make this Spicy Sicilian Chicken Soup? You will need the following ingredients to make this recipe: 1 bag of frozen mirepoix or fresh mirepoix olive oil red pepper 2 medium sized red potatoes or 1 cup of diced radishes if you are eating keto. Tomato paste chicken stock- homemade or from a store. chicken breasts or rotisserie chicken can of chopped tomatoes parsley pepper salt Italian seasoning red pepper flakes garlic cloves and an instant pot or a crockpot.
How do I cook it in the Instant Pot VS the Crockpot? I cooked it on the soup mode of my instant pot. I made it with raw chicken and it turned out perfectly. If you use the rotisserie chicken you would not need to cook it as long. Probably only 10-15 minutes. If you are using a crockpot or slow cooker, I would cook on low for 8 plus hours. Tips for making this Spicy Sicilian Chicken Soup- If you are using raw chicken, it will take longer to cook. I removed the chicken after it was finished cooking and shredded it and returned it to the pot. If you use rotisserie chicken, it will cook faster. You can shred it before adding it to the instant pot or crockpot. If you want it spicier, add more red pepper flakes and black pepper. I did not add pasta to mine as we are eating keto, however, you could add pasta to your soup if you like. I also substituted radishes for the potatoes to make it keto friendly. This gluten free avgolemono soup is creamy and delicious and a perfect comfort food!
Do you crave soup when it’s cool and rainy? I do! This Avgolemono soup was perfect for the cool and wet weather we have been having in Phoenix lately!
I love almost anything with lemon in it and my friend gave me some lemons from her tree. I was debating making lemon bars or this avgolemono soup and with the weather the soup won! According to Wikipedia: Avgolemono (Greek: αυγολέμονο or αβγολέμονο)[1] or egg–lemon is a family of sauces and soups made with eggyolk and lemon juice mixed with broth, heated until they thicken. They are found in Greek, Arab, Sephardic Jewish, Turkish, Balkan and Italian cuisine. I can’t actually remember when I had this soup for the first time, but I find it so comforting. What Do I Need to Make This Soup? I used homemade chicken bone broth that I had frozen, if you do not have that on hand, chicken broth is just as yummy. Jasmine Rice or cauliflower rice Carrots Onion Celery Chicken breasts or rotisserie chicken Green onion Parsley as a garnish Lemons Eggs Olive Oil Salt and Pepper Directions: I am going to give you two options to make this soup. I have done it both ways. They are equally delicious. Use a medium-sized pot and turn the stove on to medium heat. Add a drizzle of olive oil. Saute your chopped onion, celery, and carrots until tender. Add the broth to the pot. Stir. Juice 1 lemon into the broth. Add the chicken breasts to the liquid. Simmer until they reach an internal temperature of 165 degrees. Remove them from the pot and shred the meat with a fork. Add it back into the pot. OR This is where you get to choose a different option if you would like! You can add in shredded rotisserie chicken meat if you would like to save time! Stir in the rice. Let it simmer for about 15-20 minutes until the rice is tender. OR You can keep it low carb and use cauliflower rice. If you use cauliflower rice you only need to simmer for a few minutes until the cauliflower is soft. In a separate bowl, scramble the eggs. Add the lemon juice to them and whisk to combine. Temper the eggs by adding a ladle full of broth to the eggs while whisking. Pour the eggs into the soup while whisking. Remove from heat. You are ready to garnish with chopped green onions and parsley. The eggs will make it thick and creamy. So yummy! ENJOY! Pin THIS now Make it Later!

Chili in my instant pot is a quick and easy dinner! We recently went to Flagstaff to visit our daughter who lives there. The evenings were cool and it got down to 30 degrees at night! Burr… So I decided to make my Instant pot chili.
My daughter who lives in Flagstaff, has a goofy sense of humor. She was totally on board to help me shoot the video to go with the chili. I hope you watch it to get a little giggle! This chili is perfect for year-round but I especially love it in the fall and winter. It is comfort food and it is delicious! You can add whatever toppings you like to it to make it your own. What Do I Need To Make This Chili? This chili is super easy and it all is made in the Instant Pot! I use the sauté button to cook the hamburger. Dump all the ingredients in, give it a good stir, then I switch the mode to chili and seal the lid. Once it beeps, dinner is ready! You will need the following ingredients: 1 Red, Yellow and Green Pepper chopped. A Yellow Onion, chopped. 2 Stalks of Celery, chopped. S & P 2 Cans of Chili Beans. 1 small Can of Tomato Sauce. 1 large Can of Roasted Chopped Tomatoes. 1/2 Can of Tomato Paste. 1 Box of Beef Broth. 2 LBS of Ground Beef. Chili Powder. Cumin. Sweet Paprika. Smoked Paprika. Garlic. Chipotle Pepper if you want it a little spicy or you can also add Cayenne. Any toppings you would like. I like: sour cream, shredded cheese, green onions, black olives and sometimes serve it over rice or cauliflower rice. It’s been cool in the morning and evening in AZ so I was craving my Bacon Corn and Potato Chowder. It’s the perfect comfort food. I made this version dairy free because our oldest daughter can’t eat dairy and I am giving her some of it to take home Our whole family has been cutting back on dairy actually. I find my seasonal allergies are better when I don’t eat a lot of it, and since I cook everyone else gets to follow along.
I love chowder when the weather is cool. It is so filling and warm. My Dad used to make a version of this when I was growing up. It stands out in my mind because my Mom did most of the cooking when I was younger, but I remember him making chowder. So, part of my love for it is nostalgic and part of it is just because it tastes so yummy. If you are feeding a crowd, this is a great recipe to double and you can feed a lot of people. Pair it with a big green salad and or hot biscuits and voila you have a perfect meal. In fact, let me know when you are making it and I will come over. haha! XO, Michelle This gluten free pressure cooker or Instant Pot creamy spicy soup should have a more creative name but I didn’t feel well enough to come up with one. The theme of my week was spicy foods since I have this darn sinus cold. I made this pressure cooker creamy spicy soup for dinner because it was warm and felt like comfort food and two because it is spicy and I can taste it. I am still sounding like I smoke 23 packs of cigarettes a day but I think I am on the upswing!
This creamy spicy soup was invented with basically what I had in my fridge lol. I didn’t really feel like cooking so I threw a few ingredients into my Instant Pot and voila! Soup that is yummy! I have the older version of the Instant Pot but it works amazingly so I probably won’t upgrade until I have to. When I am not feeling well I always crave spicy soup. My Mom always said Chicken Soup is good for you when you are sick. I always keep frozen chicken bone broth in the freezer to heat and sip on too.
