Everyone was super hungry for dinner. I whipped up a quick batch of my fathead dough and filled it with my bolognese sauce, sauerkraut, and cheddar cheese! Voila! Keto calzones! This filling combination reminds me of when my hubby and I were dating. He used to deliver pizzas and one of the combinations was beef, onion, and sauerkraut. When they abbreviated it, it was BOK. Our last name is BOCK… So maybe you had to be there, but I think it’s a little funny. You can fill these with any pizza toppings you want depending on your dietary needs. I love that this dough is ready to bake in literally 5 minutes. No need for takeout here! Grab some mozzarella cheese, cream cheese, almond flour, and eggs and you have your ingredients for the dough. To make the calzone shape, I took small balls of dough and made them flat in my hand like a mini pizza. I put the filling in my palm area and folded the dough around it so it became crescent moon shaped. Place the calzones on a Silpat lined baking sheet and bake for 15-20 minutes at 425 degrees. They were the perfect thing to solve our pizza craving without all of the carbs! I served them with a big green salad! I hope you like these calzones as much as we do! As Always,

Gluten Free Fathead Dough Cinnamon Rolls are a super good stand-in for regular cinnamon rolls! Especially, if you are eating a low carb diet! Who doesn’t love hot gooey sweet cinnamon rolls right out of the oven! However, if you follow a ketogenic or low carb diet you haven’t had these delicious carby treats in a while! Not to worry! My Fathead dough cinnamon rolls to the rescue! These are delicious and have an amazing consistency! You can’t even tell that the main ingredient is cheese! I tested this recipe out on my inlaws on Sunday after church. Alas, They couldn’t guess that they were basically eating cheese dough. When pulled apart the dough even looks like the real deal. I was impressed that the swerve sweetener made the cinnamon butter mixture taste just like the one with sugar! My favorite part of cinnamon buns when my Mom would make them was the crusty sugar and cinnamon on the bottom, and I was super happy this recipe had that too! What is fathead dough? Fathead dough is dough made from basically cheese, almond flour, and eggs, and it has a lower carb count than traditional dough. Fathead dough is so versatile, and I am in love with it. Sorry honey- I might be in love with this dough. You can make this basic cream cheese frosting to go on top of them using swerve sweetener to keep the carb count low. Plus it is delicious and I could honestly eat it on its own. I doubled my Fathead dough recipe because one batch wasn’t going to be enough! Everyone in my family, including my in-laws, loves cinnamon rolls. They are the perfect bunch to recipe test with. Kitchen Aid veggie slicer attachement uses:I was super excited to try my new toy, which is a KitchenAid mixer attachment that slices veggies into thin sheets for pasta, wraps or sushi. It was my friend’s birthday and I was going out with the girls for dinner, so I wanted to make something easy and yummy for my family to have while I was gone. The zucchini in my fridge was starting to look a little sad so I landed on using the zucchini as the noodle in my lasagna! So Yummy! The attachment for my mixer took a few minutes to figure out but once I got it assembled I was off and running. It has two blades, one for thick and one for thin slicing. So, I used the thin blade for the zucchini noodles. Now I am trying to figure out what veggie I want to use it on next. It would make super fun french fries from potatoes or sweet potatoes so, I might have to make some different veggies and air fry them and see how they turn out. Carby veggies for the family and low carb veggies for me. You could make my Fathead dough recipe into garlic bread to go with it! They taste delicious and gave me all the feels of regular crab cakes! These crab cakes taste just as wonderful as the full-on carb version. Since Crab Cakes are one of my favorite foods so I needed to make a low carb version to satisfy my craving. I love the flavors you can add to the crab to make it just pop!
I used a combo of almond flour and coconut flour. It really didn’t take too much to hold these babies together. We like to eat them with Sir Kensington’s spicy mayo. So yummy! I think their Special Sauce would also be delicious! But, I didn’t’ have any on hand. You could also make a tartar sauce with mayo and pickles to serve with these low carb crab cakes. It would add tang and zip! Side note: You could eat all of the ingredients mixed together without any of the flours as a crab salad and it would be perfect! I really debated adding any of the flour and just serving it that way, but I had already gotten up the hopes of my family for crab cakes! haha! They taste sweet and delicious with lower carbs! Chocolate covered strawberries are one of my favorite desserts! They are so pretty and delicious! You can pair them with champagne, red or white wine, and sparkling cider and they taste wonderful! Or no wine at all! They are the perfect two-bite desserts that don’t make you feel like you overindulged.
I made this version of keto chocolate covered strawberries using Choczero chocolate pots. They come in a cute container and you microwave them to melt. I have also mixed a little cream cheese and strawberry right into the cup and made a two-bite cheesecake. I had to hide these strawberries from my family so they would wait until dinner to eat them. There is something so romantic about chocolate and strawberries. I think it’s the beautiful color combination. Plus the fresh taste of sweet strawberries is so refreshing! Don’t get me wrong, I love flourless chocolate cake too, but this dessert is light and the perfect end to any meal. It is lower carb and fantastic for Valentine’s Day or any day! This keto chocolate cheesecake trifle comes at the perfect time for Valentine’s Day! It is fast to make and delicious! Plus you don’t have to break your diet by eating it! I made this recipe ketogenic so it would be a part of the ketogenic eating plan I have been following. I am not exactly sure how many carbs are in it but I am guessing around 7 – 10. That’s a little high but it is dessert and not to be eaten every day.
I used pretty red champagne glasses to layer this keto chocolate dessert in that I found at Ross for fifty cents! Super great deal! You can put this in any pretty dish you have and layer it. This sauce made from mascarpone cheese, honey and spices is so delicious! I serve it with lamb, but you could make it to serve with any meat! It is smokey and sweet. The perfect balance of taste! Mascarpone is one of my favorite cheeses. I use it to make sweet dishes like Tiramisu and savory sauces like this one. It is beautifully creamy and mild. It is the perfect choice to go in this sauce because it melts slowly into the warm lamb that I am going to serve it with. Mascarpone cheese is an Italian cheese. You can find different varieties of it in the store. It tastes like a very creamy mild cream cheese. Don’t buy the variety that is used for desserts because it melts faster! I actually use the same one in my Tiramisu as I do in this sauce. This gluten free mascarpone honey sauce recipe is based off of Giada De laurentis’ recipe. I happen to love Lamb. It is so delicious and has the most beautiful smell while it’s cooking. It does smoke up a bit while you are searing it so be prepared to have your house smell delicious but also look like you could invite the fire department over! Haha! I usually open a window and make sure my vent hood is going.
This lamb roast came in my holiday Butcher Box. I am so happy with all of the meat they offer. It’s very convenient to have it shipped right to the door! They have an option that you can choose what you want or an option that they choose what you are going to get. I like the “they choose”, option because it’s kind of like Top Chef and I have to figure out the best way to cook the food that is in there. I served this lamb roast with potatoes and onions that cooked in the pan with the lamb. They were so crispy and yummy with the ghee and lamb fat. I highly recommend it. I love using my instant pot to cook foods in because it does all of the work! I love a fast meal that is delicious and makes you feel warm and comfy. It only takes a few minutes to prepare this recipe then you put it in your Instant Pot and Voilla! It’s ready to eat in a short time. The best part is that you don’t have to babysit it. You can throw it in your Instant Pot in the morning and it will keep it warm until you are ready to eat. So Easy!
