These easy gluten free stuffed Jalapenos are the perfect appetizer when you want a little spice and lots of flavors! Three Ingredients is All YOU NEED! Are you looking for a quick side dish, appetizer, or meal? My 3 ingredient stuffed jalapenos are just the thing if you like a little or a lot of spice! The only three ingredients you need are jalapenos, cream cheese, and honey. If you want this to be your meal I would add one more ingredient and that would be cooked chicken. Just because I like to have protein at every meal. How Do I Make Stuffed Jalapenos? That’s the best part! It’s super easy to make these stuffed jalapenos. I recommend wearing rubber gloves when you are taking the seeds and ribs out of the peppers so you don’t burn your hands or accidentally rub your eye. It’s very painful and takes a while to stop hurting. I am giving this advice from experience! You will need to buy some jalapenos. If you want a whole meal, buy big ones. If you want an appetizer or side buy regular sized ones. You can also use Anaheim or Poblano peppers if you don’t want it as spicy. They are also larger so you can stuff more in them. Use your best judgment on which peppers you would like to use. Let one package of cream cheese come to room temperature for about 15 minutes. This makes it easy to stuff into your pepper and mix in the honey. In a bowl, mix the cream cheese with about 1/3 cup of honey. You can adjust the sweetness to your preference. I roasted my jalapenos over my gas stove because it was raining outside, but you can blister them using the grill or your oven on broil. I wanted to char them a little so they soften and are easier to remove the ribs without cutting them all the way open. This is where I put on my gloves. Cut the end off of the pepper. Carefully cut the ribs out and remove the seeds. You want to do this to cut some of the spice. If you want it really warm, leave the ribs and just remove the seeds. Stuff each pepper with the cream cheese mixture. I used a small spoon and tried to push it all the way to the bottom so each bite had some filling. Bake in the oven at 400 degrees for about 15 minutes or until the cheese is melting. I like the pepper still a little crunchy so I don’t overcook it. Serve and enjoy! This gluten free Cranberry Maple Pecan Baked Brie is a perfect holiday appetizer! It’s perfect any day of the week too! lol! Need a Holiday Appetizer? This Cranberry Maple Pecan Baked Brie is Perfect! The Holidays are about to be upon us and that means we need a great appetizer to take to parties or serve at our party. There are so many great options out there but I love baked brie so I chose to share this one with you today! I made three appetizers in a Facebook and Instagram live video this week with my friend Aimee. The first one is this Cranberry Maple Pecan Baked Brie. The second one is my Bacon Wrapped Cranberry Goat Cheese Stuffed Dates. The last one is a Charcuterie board. I hope you like the video and it helps you up your holiday appetizer game. I love having appetizers for dinner sometimes when life gets busy. They are a bunch of easy to make things that go great together. If you have an impromptu get together it is always good to have a few things on hand to serve your guests. This recipe would be perfect for a last minute happy hour or invite to a get-together. It solves the question “what can I bring?” Pin This NOW...Make It Later! I love this recipe so much because the Brie is perfectly melty and the toppings are a little sweet but not overpowering. There is nothing better than melty gooey cheese! Here’s what you need for this baked brie recipe: 1 Round of Brie 1/4 Cup Pecans 1/4 Cup Organic Dried Cranberries 2 TBSP Organic Maple Syrup A baking dish to cook the brie Crackers, veggies or toasted bread to serve it with. To make this recipe extra delicious, toast the pecans in a pan and season with salt. Stir until brown but don’t burn. As soon as you smell them they are close to being done. Once they are toasted, put them on a cutting board. Rough chop them and add to a bowl. Add cranberries to them. Drizzle with maple syrup and mix. Cut the top off of the Brie. Be careful not to cut too much of the future cheesy deliciousness off. I made a small cut along the top side then scraped the top layer off. Put the Brie into the baking dish and top with the pecan mixture. Cover and bake at 375 degrees for about 15-20 minutes. You want to serve it when the inside is gooey. If you overbake it and it runs out, it won’t look as pretty but will still taste yummy! You can use a spatula and scoop it back together if needed. Serve with veggies, crackers or toasted bread. This healthy harvest salad is the perfect main dish or side dish. To make it a main dish just add your favorite protein. I like to pair it with either roasted chicken, baked salmon or a yummy steak. This harvest salad contains a lot of my favorite in season fall veggies. I try to eat different fruit and veggies based on when they are in season, or grown and harvested during that time of the year. I love to roast veggies in the oven and then put them together in a salad with a really yummy dressing. There is just something about roasted veggies! The crispy Brussels sprouts are probably my favorite! Why I eat what is in season:I eat what is in season for a variety of reasons. I like to shop for organic produce and local if it’s available. So- when I use fruit and veggies that are grown and harvested at that time of the year they are available and easy to find. They taste better and have more nutrients because they haven’t been stored for a long time. Here’s an article by Mind Body Green that lists 10 reasons you should eat in season. Try a new Seasonal Veggie or FruitHave you tried anything new lately? Growing up I did NOT like Brussel sprouts, parsnips, or turnips. I still don’t like turnips, but I did retry them a few years back, just to check. However, I love Brussel sprouts and parsnips now! My point is that your taste changes. Just like one season you love leopard print and the next you love floral print. Things change, so try something new or again. Try cooking veggies in a different way! Who doesn’t love food on a stick? It reminds me of going to the state fair except they are not deep fried! We were invited to go to our friend’s boat on a sunset cruise with some food and cool drinks. It was still really hot in AZ so cool drinks are a must! The lake was beautiful and our friends are always a great time. We had fun snacks on board like charcuterie, hummus and veggies, assorted cheese and crackers and BLT sandwich skewers! The water was cool and we floated for a few hours laughing and talking. There might have been some singing too! Haha!
We love being on the water and coming up with fun food that is easy to eat is always a good time. I think Arizona has some of the most beautiful sunsets I have ever seen. I thought I took one of the canyons with the sunset, but I guess I didn’t. That gives me an excuse to go back… photo opp lol! Not the fact that I love boating and our friends haha! If you have never been to the lakes near Phoenix, you should definitely check it out! There is a steamboat that runs on Canyon Lake and gives tours as well as dinner cruises. It’s a pretty cool experience if you don’t have your own boat. Here’s the link to the Dolly Steamboat. These BLT sandwiches took a few extra minutes to assemble due to the size and the skewer, but I hope you love them as much as we did. Plus they have bacon… and I love bacon. Lamb has an almost sweet smell to it and is so juicy and tender. My family loves lamb, except my Dad, he is not a fan. My Uncle’s family used to raise lambs and we would get to see them as babies before they were shaved for wool or made into dinner. Sorry- but that is where lamb chops come from. One time we had a lamb roast at their house and its name was written on the package. We were eating dinner and my Aunt said, Molly wasn’t a very good lamb and is not a very good roast either! We all started laughing. I imagine that is what farm life is like sometimes.
Most of my Aunts and Uncles are farmers or live in a rural area of Saskatchewan. I grew up in town so only got to visit and experience farm life vicariously through weekend visits. My kids, now almost both adults, still remember fond visits to their farm family’s homes. These seared lamb chops are a fast meal for dinner or an appetizer. They cook really quickly and are so yummy. I pair them with my Mascarpone Honey sauce and it marries with the lamb flavor so well. I cooked these on our BBQ but you could also use a grill pan inside your house and sear each side, then finish in the oven on a baking sheet until your desired doneness. Medium rare is delicious! We like to pair our lamb with a nice Zinfandel or Cabernet. They can handle the big bold flavors. Seared Lamb Chops Seared lamb chops are flavorful and delicious. They are a great appetizer or meal. This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. Since I am doing the two week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! They taste delicious and gave me all the feels of regular crab cakes! These crab cakes taste just as wonderful as the full-on carb version. Since Crab Cakes are one of my favorite foods so I needed to make a low carb version to satisfy my craving. I love the flavors you can add to the crab to make it just pop!
I used a combo of almond flour and coconut flour. It really didn’t take too much to hold these babies together. We like to eat them with Sir Kensington’s spicy mayo. So yummy! I think their Special Sauce would also be delicious! But, I didn’t’ have any on hand. You could also make a tartar sauce with mayo and pickles to serve with these low carb crab cakes. It would add tang and zip! Side note: You could eat all of the ingredients mixed together without any of the flours as a crab salad and it would be perfect! I really debated adding any of the flour and just serving it that way, but I had already gotten up the hopes of my family for crab cakes! haha! I may make the salad version next week and serve it in lettuce wraps. I definitely have crab on the brain! It can be made to replace quite a few “bread” or “crust” foods but with lower carbs! I love to use it for bagels, pizza crust, cinnamon rolls and so many more options! My kitchen smells so good right now! This Fathead dough smells like bread baking. I might be salivating. I am currently fasting in the mornings until around 10 or 11 to add to my ketogenic diet results. We are going to Mexico in a few weeks and I wanted to kick it up a notch for bathing suit wearing. Not to mention, we had 6 weeks of company and I wasn’t strict with my keto. Ugh, the struggle is real! Anyways, back to keto and feeling better. Fathead Dough-Fathead dough can be used as a delicious substitute for bread while on a ketogenic or low carb diet. I have been craving a bagel with cream cheese and smoked salmon so I made bagels today. You can shape the fathead dough into any shape you want. I made one big thin sheet so I can break it up into crackers later. You can use it as a pizza crust, wrap, taco shell, burrito wrapper, etc etc etc. You can find variations of this recipe all over Pinterest, Instagram, and Facebook. It is super easy to make and goes together really fast. I find that using my hands to mix in the egg and almond flour make it go the easiest. You will often see me using my hands to mix things though, but if that grosses you out feel free to use a spoon! I am not sure who first made this dough, but I am definitely not the original on this one. I think I got the recipe from www.ditchthecarbs.com but have tweaked it slightly. Here's The Recipe: Fathead Dough Low Carb Ketogenic dough that can be used as a bread substitute. Add toppings, use as a wrap, pizza dough, cinnamon rolls, or however you can imagine it! INGREDIENTS
