I am so blessed and thankful to have a few days away from home with my family. We are enjoying the cooler weather in San Diego. It is 64 degrees this morning as I am writing this and at home, in Arizona, it is already over 100! So amazing that we can drive 6 hours in the car and be by the ocean and drop 40 degrees in temperature! I love making this 4th of July Dessert in individual sizes or in one big trifle dish depending on who I am making it for! If we are traveling on the 4th of July, I like the individual sizes for ease of transportation! Some of my family members like to freeze theirs as well, so individual sizes allow for some to be frozen and some to be not frozen. This year we are in San Diego and if you haven’t been there for the 4th of July, I highly recommend it! San Diego is an amazing place for the 4th of July fireworks!If you have never experienced the fireworks in San Diego on the beach you need to. There are many locations that set off fireworks at the same time so you can see them go off all around the harbor. It is one of the most spectacular fireworks shows that I have ever seen. We are really looking forward to seeing it again today! This creamy and delicious gluten free Canada Day dessert is a crowd pleaser! It is super easy to make and it doesn't require you to turn on the oven! This creamy delicious fruit-filled dessert is perfect for Canada Day or any day for that matter! Change up the fruit depending on what is in season or what you are celebrating! Happy Canada Day! I lived in Canada until I was 18 and celebrated a lot of Canada Days! My family is still mostly there so I thought I would make this dessert in their honor (honour) There are a lot of things I love about Canada besides my family! Some of them being in no particular order: hockey, ketchup potato chips (my hubby’s favourite), Cheezies, Poutine, no pennies, Bob and Doug McKenzie, Nanaimo bars, butter tarts, Saskatoon berries, Ice Wine, Tiger Tiger ice-cream (not sure if that is gluten-free or not but I used to love it as a kid!), Flax fields in bloom, canola fields in bloom, and many other things that I cannot think of right this second. Don’t get me wrong I love the country that I live in but there are a few things you just can’t get here. Canada turns 150 years old! Happy Birthday Canada! I can’t imagine what it was like 150 years ago! I bet people got together with their families for food and conversation, just like we do now. Your family will love this dessert just like mine does. If you make it all for yourself no one will judge you since it has lots of healthy fruit in it. The best part about this dessert is that it takes just a few minutes to whip together. I love this version because I can cook it in my instant pot or pressure cooker! This gluten free flourless chocolate cake is dense and delicious. Only three ingredients and you are ready to whip this together! I cooked it in my instant pot. I bought a 7 inch springform pan and it fits perfectly inside on top of the wire rack. This allows you to add a small amount of water below the rack so your chocolate cake doesn’t get wet. Put the finished cake in the fridge for a few hours and you are ready to eat! I like to sprinkle the top with powdered sugar before serving it. It is delicious paired with berries too! So yummy!
IS GLUTEN FREE FLOURLESS CHOCOLATE CAKE LIKE FUDGE? I have been asked this before and my answer is no. I don’t really like fudge. It is always to sweet and sticky for me. However, this cake is not as sweet, especially when you use dark chocolate! You can use milk chocolate or a mixture of chocolates to make this cake. But, my favorite is dark chocolate! TIPS AND OPTIONS: You can also make this flourless chocolate cake recipe in the oven using a baking dish and a Springform pan wrapped in foil. WHY I ONLY USE PURITY PROTOCOL GLUTEN FREE OATS: I choose to only use purity protocol gluten-free oats because I think they are the safest oats for a person with Celiac Disease. They are farmed on only gluten-free equipment which helps reduce the risk of cross-contamination while harvesting. You can see the list of purity protocol oats on the Gluten Free Watchdog site. I grew up in a family that mostly had farmers in it. I have been around during harvest and seen the risk of cross-contaminating oats when you also farm wheat, barley, or rye. This is why I mostly use Montana Gluten Free Oats. They are purity protocol and farmed close to where my hubby and I grew up! I love the coffee flavor and all the decadence the whipped cream has to offer. I use Schar gluten-free ladyfingers to make the delicious cake layers. Original Post was written 08/30/2013 and updated 1/24/22 WHAT IS TIRAMISU? Tiramisu is an Italian dessert made from whipped eggs and cream, layered with ladyfingers soaked in coffee and liquor topped with cocoa powder… I am seriously drooling right now thinking about it! Tiramisu in Italian means cheer me up or pull me up, which I can totally understand since I feel happy every time I eat it! WHAT DO I NEED TO MAKE THIS RECIPE? First, you need to brew some espresso. I use Schar Gluten Free ladyfingers to soak with espresso and coffee liquor for the cake layer. In a bowl, put the espresso and coffee liquor. Allow it to cool a little so you don’t burn your fingers. Next, whip the heavy cream in a bowl. Set aside. Then whip the eggs in a new bowl. Combine them together by carefully folding them with a spatula so the whipped cream doesn’t flatten. Soak the ladyfingers in the coffee liquor mixture until they are infused but not soggy. Layer them on the bottom of your pan. Pour a layer of the cream mixture over the top of the cookie layer. Continue until you have 2 cookie layers and 2 cream layers. Dust the top with cocoa powder and shaved chocolate if you desire. Voila! The Gluten Free Tiramisu is ready to put in the fridge for a few hours before serving.
