Pair this delicious Obatzda, a German Beer Cheese Spread that I made gluten free, with my three ingredient gluten free soft pretzels and you have the perfect snack! We make them as part of our Gluten Free Octoberfest dinner! It is full of flavor and can be made ahead of time so you can pull it out when you are ready!
What is Obatzda?
Obatzda is a delicious beer cheese spread that is popular in Germany and around that area. You can find it in restaurants and is the perfect pairing for Octoberfest! It is super easy to make and you can find the ingredients easily in most stores... no specialty stores needed! I love that you can make this ahead of time and pull it out when you are ready to eat.
What ingredients are needed for this recipe?
The best thing about the ingredients for this recipe are that you can find them easily in most grocery stores! You can customize them to your liking. These are the ingredients I use:
7 oz of Brie or Camembert Cheese 6 oz of Spreadable Swiss cheese like Laughing Cow 1/3 Cup of Good quality room temperature butter. I like Kerry Goldor Kirkland Grass-fed Organic. 1/4 Cup of Gluten free beer. I have used Holidaily, Ground Breaker or Glutenberg. 1/2 tsp Smoked Paprika 1/2 tsp Caraway Seeds 1 Pinch S N P 1/4 Cup Chopped Chives or Green Onions 1 Small White Onion Chopped I don't think it is traditionally spicy, however it is delicious if you add in some Truff hot or hotter sauce :) Here's how to make it:
Cut the "skin" off of the Brie or Camembert. Cut it into small chunks.
Add the Brie/Camembert, Spreadable Swiss, GF Beer, Caraway seeds, Paprika, Salt and Pepper to a blender or food processor. Mix until combined. Put in a container with a lid. You can make it the night before or at least 4 hours in advance. Before serving, mix in the minced onions. They add a lot of delicious flavor :) Top with the chopped chives or green onions. Serve with gluten free soft pretzels, gluten free "rye" bread, and gluten free crackers! It's perfect for Octoberfest! Check out the video on how I make it!

My favorite thing to pair this cheese spread with is the soft pretzels because they are delicious. However, here are some other favs: cucumber slices,Schar Sourdough Bread, Kim and Jakes Peasant Loaf, and UnBun Baguettes.
