Our lemon trees have produced a lot of lemons this year and I am busy trying out ways to use them in recipes before I juice the rest of them. This lemon roasted chicken is a wonderful light tasting comfort dinner. We picked our lemon trees and had over 500 lemons! Some other ideas I have for the lemons are lemon ice cream, lemon pie, lemon bars…(I feel like I am starting to sound like Forrest Gump hehe!) …. maybe for water, margaritas or lemon drop martinis It has been a busy season at our house. Our oldest daughter is a senior in high school. We have been helping her narrow down colleges. She is I think, down to 2 schools! Insert party horns and clapping. We are blessed that she has worked hard in high school and has some awesome schools to choose from. We are so excited for her! She is waiting on scholarship information to make her final decision. Hopefully by the end of March she will know where she is going to go. I am praying everyday for her and I know that she will do great wherever she goes. I’m feeling a little sad with the process but have come to realize that we have prepared her well and she is ready to go out on her own. I will miss her like crazy but know it’s the progression that needs to occur. I am thankful that there is 3 years before we transition our youngest daughter to college. Then the empty nest phase… So, comfort dinners and enjoying every bit of time we have until August when we move her into a dorm room where her next chapter will begin! Gluten-Free cabbage roll soup reminds me of growing up in Canada. My family always had cabbage rolls at every holiday! DID YOU KNOW I GREW UP IN CANADA?
I Grew up in Canada with a Polish Great Grandma! She loved to cook has influenced a lot of my comfort foods. Pierogies and Cabbage rolls were a part of ever holiday dinner. When I made this soup it reminded me of the pierogi eating contests we had as a kid, sitting at a big table with my family. I am working on perfecting my gluten free pierogi dough, so hopefully in the near future I will have a recipe for that. My Grandma is from Icelandic decent so she made delicious foods from there. I am planning on making a gluten free Vinatarta for Christmas this year. Sadly, not many of my family members like prunes but I one of my friends does so I will share the cake with her. MEMORIES: It has been 10 years ago today that my Mom passed away. I was wanting some comfort food but didn’t want to blow the clean eating trend I have going. My Mom was as great cook. She was an inspiration in the kitchen and many other areas of my life. I miss her and wish I would have gotten more time to spend with her. I am trying to eat Paleo/Keto to get ready for the holidays so I am not sad that my pants don’t fit. LOL. I recently had to go off of my thyroid medicine after finding out that it had gluten in it. I had been taking it a long time. So, I have been dealing with the sluggish everything so decided to make food my medicine and cut out all food that was not helping my thyroid. GLUTEN FREE CABBAGE ROLL SOUP: So, I decided to make a cabbage roll soup using cauliflower rice instead of white rice to save the carb count. Everyone in my family loved it! It will definitely be a new staple in the recipe rotation for the winter. I used my multi cooker to make it one pan and easy. You can cook the meat on the stove if you do not have a multi cooker. It would also work perfectly in an Instant Pot or Pressure Cooker! I hope this soup brings you warmth and is comforting. I am enjoying eating it remembering all of the fun memories of holidays or times in the kitchen with my Mom as well as my Grandmas. Who can believe it is Wednesday already! School gets out in 7 more school days for winter break! Yay! This week is a crazy week of Choir concerts, softball games, pre-finals and Christmas Parties!
It is a wonderful time of the year! I love the opportunities to gather with family and friends! I also look forward to the pajama days of watching movies and playing games once school break starts! Last night our youngest daughter had softball practice with 15 minutes to change and eat before her choir call time. I fed her pasta and shrimp in the car as I drove from one location to the other! Some days are just like that. I wanted to share a meal that is comforting and nutritious! Crazy nights make me think of the quiet ones I am able to sit and eat with my family! I hope you enjoy these green chili chicken thighs! GREEN CHILLI CHICKEN WITH ROASTED ROOT VEGGIES AND QUINOA: Let’s start with the Quinoa- I make mine in the rice cooker the same way I make rice. 1 cup Quinoa to 2 cups of water. You can size up the amounts from this ratio. You can also make it in your rice cooker! Second- The root veggies- I washed and peeled the multi colored carrots and parsnips then tossed with evoo and herbs de province and baked in a 375 oven for about 30-45 min. Green Chilli Chicken: 1. Put a little EVOO (Extra Virgin Olive Oil) in the bottom of a baking dish. 2. Arrange your chicken pieces in the pan. Sprinkle with S & P. 3. Pour Organic Green Chilli sauce over your chicken. I used organic chicken thighs and whole foods green chilli sauce. 4. I sprinkled a little grass fed shredded cheese over the chicken. You can omit if you don’t like cheese. 5. Bake Chicken in the oven with the veggies for about 45-60 min. If you want to make this in the crockpot, add all of the ingredients to the crockpot and cook on low for 6-8 hours. Enjoy! I am counting the days until Fall Break arrives! We are looking forward to spending time with friends and family! I am hoping my random case of walking pneumonia is gone by then! Wow! Where did that come from? However, I am on the mend! We are heading to the beautiful island of Kauai for fall break! Yay!!! We look forward to grilling fresh caught fish and enjoying some Luau fun! I will try to post some photos as we go! Today, I made some home-made gluten free Almond milk. I thought I would try it a few months ago and now my girls love it soooo much better than the store-bought stuff! Also, I do not like that there is carrageenan in the store-bought stuff. You can add vanilla bean if you like vanilla almond milk. I am also making some snacks for the plane and using the almond left overs to make Against All Grain’s Almond Cookies. There are 10 of us going to Hawaii so I thought we might need a snack on the 6.5 hour flight. Almond Milk: 1 cup organic raw almonds- soak 6 hours or overnight. Rinse well. 4 cups water Place all items in a blender and blend for about 30 seconds until almonds are blended. Strain through a cheesecloth and metal strainer to remove almond pieces Enjoy!!! I love the smell of cinnamon and spices combined with coffee… yummy! It’s like eating pumpkin pie with coffee but it’s in one cup! Let fall come because I am ready for all of the pumpkin treats! Original Post was written 09/03/2014 and updated 1/24/22. WHY DO I MAKE MY OWN PUMPKIN PIE COFFEE CREAMER? I recently had to break up with a seasonal icon that signified fall for me. For many years when this latte came out, I knew it was fall! AKA- Starbucks. Due to the ingredients used by said company and because they possibly contain gluten (in some flavors) and not to mention gross chemicals I had to call it quits. See Food Babe. HOW DID THIS PUMPKIN PIE OR PUMPKIN SPICE TREND START? According to Corporate Coffee Systems, the trend started over a hundred years ago with Pumpkin Pie or Pumpkin Spice things but the Pumpkin Spice latte craze started here in the USA in 2003. Pumpkin Pie Coffee flavors started popping up at cafes in the late ’90s and it took off from there! I can’t say that I disagree with the trend that keeps on trending! I used to get a Pumpkin spice latte or Pumpkin spice Frappuccino often in the early 2000s! Pin me NOW make me LATER! Here is my take on Pumpkin Pie Coffee Creamer. It is not as sweet as said company’s but I don’t like sweet coffee. If you like your coffee sweeter you can add more honey. Happy Pumpkin Season! WHAT DO I NEED TO MAKE PUMPKIN PIE COFFEE CREAMER? Gluten Free Pumpkin Pie Coffee Creamer: 1 can coconut milk (full fat) 2 cups unsweetened almond milk 1/2 can pure pumpkin 3 – 4 teaspoons pumpkin pie spice 1/2-1/3 cup honey 2 vanilla bean pods split and eseeded with a knife. HOW DO I MAKE THIS? Heat all ingredients in a pot until warm. The honey should melt and the vanilla should fragrance the milk mixture. I whisked to combine as it got warm. Place in a BPA Free container and store in your fridge! Mason Jars work great for storing coffee creamer. I made enough for 2 mason jars. I decided to keep one and give one to a friend for taste testing. Thankfully, she does not like sweet coffee as well! Split the vanilla beans and scrape the seeds into the heated milk.
