Lamb chops are so flavorful and delicious! They smell amazing while they are cooking. Lamb has an almost sweet smell to it and is so juicy and tender. My family loves lamb, except my Dad, he is not a fan. My Uncle’s family used to raise lambs and we would get to see them as babies before they were shaved for wool or made into dinner. Sorry- but that is where lamb chops come from. One time we had a lamb roast at their house and its name was written on the package. We were eating dinner and my Aunt said, Molly wasn’t a very good lamb and is not a very good roast either! We all started laughing. I imagine that is what farm life is like sometimes.
Most of my Aunts and Uncles are farmers or live in a rural area of Saskatchewan. I grew up in town so only got to visit and experience farm life vicariously through weekend visits. My kids, now almost both adults, still remember fond visits to their farm family’s homes. These seared lamb chops are a fast meal for dinner or an appetizer. They cook really quickly and are so yummy. I pair them with my Mascarpone Honey sauce and it marries with the lamb flavor so well. I cooked these on our BBQ but you could also use a grill pan inside your house and sear each side, then finish in the oven on a baking sheet until your desired doneness. Medium rare is delicious! We like to pair our lamb with a nice Zinfandel or Cabernet. They can handle the big bold flavors. Seared Lamb Chops Seared lamb chops are flavorful and delicious. They are a great appetizer or meal. Beef tips with coconut cream mushroom sauce is a one pot gluten free and dairy free meal! This was my first time making beef tips with coconut cream mushroom sauce. I have a go-to way of making my sauce for other meats so I incorporated it here! We ate it over arugula, but you can serve it with mashed potatoes, sweet potatoes or rice if you like.
It only took one pan to make this meal so dishes were a snap! I love when that happens. Beef tips are parts of the steak, but not necessarily all the same cut of meat. I was concerned it would be chewy so I marinated it during the day in a quick sauce of coconut aminos, avocado oil, garlic, Italian seasoning and balsamic vinegar. I honestly didn’t measure the ingredients, I just poured it into a ziplock bag and put the meat in. Once I sealed it I squished the liquid onto the meat and put it in the fridge. You can substitute your favorite marinade ingredients if you would like. The marinade made the steak sear a pretty color of brown as the vinegar carmelized in the pan. I love the tangy flavor it gave this dish. This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. We just got back from vacation and I was craving a meal made in my own kitchen! IT was nice not to have to cook as much but I honestly missed it. I love that our families try so hard to cook safely when we visit. It is so nice to enjoy everyone and have safe food to eat too! So thankful! Plus they are mostly just really great people. We miss them since we live so far away so try to enjoy every minute with them when we are there. This dish makes me think of our trip to Italy. Creamy sauce with fresh green and red. Yum! Pro Tips for this Tuscan Chicken: If you want to make it with dairy, you can substitue the coconut milk for heavy cream. You would use about 1 cup of heavy cream. Since I am doing the two week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! It's seriously so good! Who doesn’t love bacon? I actually have one friend that doesn’t love bacon, but I love her anyway! This bacon braised cabbage and onions is seriously my favorite side dish! It goes great with any protein you are serving and is delicious! People who don’t like cabbage will like this. It is Paleo, Ketogenic and tasty! It goes together super fast and is really easy to make. When my friend Christine comes over, she requests this as a side dish to whatever we are having! I love that she enjoys it! Here’s what you need to make this recipe! You will need one head of either red or green cabbage or a mixture of both. One package of bacon- you need 4 slices. One Yellow Onion. Garlic Seasoning Salt and Pepper That’s it! This recipe is super simple! This is how we do it.. sung to the tune of the Montell Jordan lol! Slice the bacon into bite-sized pieces. Cook them in a skillet over medium heat. You want them to get nice and crispy! Then add in the onion(chopped) and saute it for a few minutes. Add in the cabbage(chopped) and saute it until it starts to get soft. Sprinkle in the garlic powder and salt and pepper. It is ready when the cabbage isn’t too soft or too crunchy. Voila! You can cook it in a multi cooker, crockpot (you have to cook the meat first) or Instant Pot! Bolognese sauce is so delicious! Eat it with pasta, zoodles or just by itself. I make this in my multicooker in the morning so it simmers all day. It fills our house will delicious aromas all day. This recipe makes a big batch so I usually freeze half of it for a later date or give it to a friend or family member. This is often my go-to meal to deliver to friends or family when they need a meal. You can also make this recipe in your Instant Pot. The steps are the same except instead of simmering all day, you cook it under pressure and Voila it’s done after 30 minutes!
