Who needs a bucket of beer when you can get a bucket of Prosecco popsicles? Have you tried ADULT popsicles? I’m not going to lie… I have been on an adult popsicle trend lately! It’s been so hot here in Arizona, and all I want to do is cool down. I have been experimenting with all kinds of boozy popsicles! They are so fun to eat and such a great after dinner drink…I mean dessert! Haha! These Prosecco popsicles are perfect for the 4th of July with the Red White and Blue theme! RED WHITE AND BLUE Everything! I love celebrating holidays and the 4th is no exception to that. This year it is going to be a little different with Arizona putting more restrictions out again. It will also be the first year our girls won’t be with us to celebrate a holiday. I’m trying to hold back the tears….. This year we are keeping it simple and small and getting together with our family aka our covid bubble. Swimming-food-boozy popsicles…. what more can a person ask for? well, I am sure there are some things, but right now it seems pretty good. You can make them as boozy as you’d like by controlling the amount of vodka you add to them. 1 bottle of Prosecco or champagne (substitute with lemon-lime soda for a nonalcohol version) 1/4-1 Cup of Vodka (leave out for a nonalcohol version) 1 Cup of cut up Strawberries 1 Cup of blueberries A Bottle of Lemonade 1 Cup of cut up Blackberries 1 Cup of Raspberries 1/4- 1/2 Cup Simple syrup or honey simple syrup if you want them sweet. These gluten free boozy balls are fun to make for holidays and dinner parties! You can make them ahead of time and pull them out of the fridge when you are ready to enjoy them! I had so much fun making these boozy balls with my friend Jamie today! I am not a huge sweet eater, but I do like to have little bites of deliciousness around during the holidays when company comes over. These FOUR recipes are really easy to make and go together pretty easy. The truffles are a little labor intensive with having to cool them in between each step. If you want the fastest and easiest of the recipes I would recommend the cake balls over the truffles, only because you need to use a double boiler for the truffles. What are some of your favorite holiday desserts? Do you like quick and simple desserts like these or more elaborate ones like Buche De Noel? One of my favorites is Panettone but I have yet to master a gluten free version of it! Which Alcohol Should I Use? You can flavor your dessert balls with any alcohol as long as it’s gluten free! I chose the flavors for my boozy balls because we enjoy those combinations but please feel free to experiment with your boozy ball combinations! It is the same recipe as my Taco meat pie, only you add the pastry crust to the top and omit the bacon. If you want to keep it lower carb, use the Fathead dough recipe to make the crust on the top! Halloween is a busy day if you have littles to take trick or treating and you can make this ahead of time then bake it when you are ready. A big salad or zoodles would be perfect with this. I love having a big protein before candy lol! Mummy Meatloaf is loaded with protein so it will fill you up before the sugar brings you down. Our kids are 19 and 16, so we won’t be taking them trick or treating tonight. Our oldest lives on her own and the youngest doesn’t go trick or treating anymore. She will help us hand out the candy in our neighborhood. I have an exciting Halloween puzzle to do and the Blackhawks play hockey, so that is no doubt what will be going on at our house. We have hosted Halloween parties and Halloween night at our house with food, family, and friends but now that our girls are older, we enjoy handing out candy to the cute princesses and Marvel characters that come by. T- 2 days until Turkey Day arrives! Wether we are ready or not it’s here! I am not cooking the main meal this holiday… So weird, but I am excited about my SIL and BIL hosting! They have 2 big dogs so I am always waiting for one of them to run off with the meat! Thankfully they are pretty well trained. If you are looking for a quick party appetizer or just something delicious to go with some wine look no further! It is the holiday season and sometimes you need an appetizer to share with other people, and sometimes you need something delicious to eat and drink some wine with. Whichever occasion, these cranberry goat cheese stuffed dates wrapped in bacon are perfect! They are, start to finish out of the oven and ready to serve in about 20 minutes! I asked my friends what they would like me to post recipes about, for a fresh perspective, and my friend Jolyn asked for appetizers. So, here is an easy appetizer that is addictive and delicious. I love how fast it goes together and of course, it has bacon. Thanksgiving and Christmas and ….. New Years… appetizers are needed! The holidays are upon us and it feels like non stop entertaining or parties to go to! It’s a busy time of year and no matter what you celebrate, it is always awesome to get together with friends and family. I feel super blessed to have both friends and family close by and I am looking forward to getting to spend time with them. I am waiting to pick up family who are on a delayed flight as I write this! If you are eating low carb and want a delicious, creamy side dish this is for you! This will make you think you are eating the most creamy and cheesy mashed potatoes ever! However, no potatoes just cauliflower and fewer carbs. Hooray! This recipe is the starter version of this side dish. You can add whatever you want to fancy this up. Sometimes, I add bacon, green onions, chives, more cheddar, blue cheese etc…etc…..etc….. Whatever you would add to a potato dish you can add to this yummy mashed cauliflower. Boom! I am starting to sound like Bubba from Forrest Gump…. mashed cauliflower with bacon, mashed cauliflower with chives, mashed cauliflower with gravy, mashed cauliflower with red wine reduction, mashed cauliflower with blue cheese and bacon. Alas, you get the point, the options are as good as your imagination. Now, I want to go and watch that movie! haha! Make This for the Holidays: The holidays are approaching and low carb and keto diets are easily thrown out the window. This is such a fast side dish to whip up and bring with you to parties. It takes the temptation out of the steamy bowl of delicious potatoes. I love me some potato products, but I am just as satisfied by eating this and no guilt afterward. Most parties have a protein source that fits into a low carb or keto diet. You can get cauliflower in the frozen section of most stores, pick some up so you are prepared for the next get together. Pop it into the microwave to steam and you are half way to this side dish being done. Make it Fancy, add some toppings, check your outfit and you are out the door! Holiday party slayed! Halloween has so many fun opportunities to get together with friends and family. We have hosted front porch get-togethers all of the years our kiddos were little. I made everything from deadman over worms (meatloaf in the shape of a body over spaghetti), chili and cornbread, Spooky Spider bean dip, Eyeball meatballs,Mummy Meatloaf, and other fun desserts to start the party off on the right foot. Fun cocktails and Vampire blood wine were also served. This is the first year in a lot of years that we are staying home and handing out candy. Our oldest daughter is in college and our youngest is 15 and not going trick or treating. We are going to have some fun food at home and enjoy the memories of another Halloween. The excitement of the neighborhood kiddos coming to ring the doorbell will have us all going to the door. Our friends will probably arrive with an empty cup for trick or drink lol. We are blessed to live in a neighborhood with lots of awesome people we call friends. Allergen Friendly Treats: There will be full-size gluten-free candy bars at our house for awesome costumes as well as allergen friendly treats and toys. A Teal pumpkin is on our porch so families know their kiddos can get a safe treat here! We may hide in our yard and scare some passerby trick or treaters…. hehehehe! I hope you are having a very relaxing Fourth of July with friends and family. I am so blessed and thankful to have a few days away from home with my family. We are enjoying the cooler weather in San Diego. It is 64 degrees this morning as I am writing this and at home, in Arizona, it is already over 100! So amazing that we can drive 6 hours in the car and be by the ocean and drop 40 degrees in temperature! I love making this 4th of July Dessert in individual sizes or in one big trifle dish depending on who I am making it for! If we are traveling on the 4th of July, I like the individual sizes for ease of transportation! Some of my family members like to freeze theirs as well, so individual sizes allow for some to be frozen and some to be not frozen. This year we are in San Diego and if you haven’t been there for the 4th of July, I highly recommend it! San Diego is an amazing place for the 4th of July fireworks!If you have never experienced the fireworks in San Diego on the beach you need to. There are many locations that set off fireworks at the same time so you can see them go off all around the harbor. It is one of the most spectacular fireworks shows that I have ever seen. We are really looking forward to seeing it again today! If you are still using up your Thanksgiving leftovers here is a great dish to combine all of the flavors of Thanksgiving into one! It is quick to make and everyone loves a one-pot dinner! I hope you all had an amazing Thanksgiving with Family and Friends! We had a great time! I will post my recipe of the Pumpkin Cheesecake with Gingersnap crust later, however, I didn’t get any photos before it was all gone! Darn it! That means I will have to recipe test it again. I hope you have a Wonderful Wednesday!! Thanksgiving Casserole: Leftover Stuffing. Leftover Mashed Potatoes. 1 bag Organic frozen mixed veggies. 1 large container of gluten free mushroom soup. Leftover Turkey and Ham (or whichever you have). 1. Layer stuffing in a greased deep dish baking pan. 2. Pour some of the mushroom soup evenly over the stuffing. 3. Layer the meat chopped into small pieces over the stuffing layer. 4. Layer the veggies over the meat. 5. Pour some mushroom soup over that layer. 6 Spread mashed potatoes over the top. Pour the last of the mushroom soup over the top. I sprinkled parmesan cheese over the potatoes. You can do this if you like extra cheese. 7. Bake in a 350 degree oven for 45 min or until heated through and bubbly! Enjoy!!! Layer turkey and mixed veggies and potatoes. The finished product! Ready to bake and eat! I am originally from Canada. So- this past Monday was Canadian Thanksgiving! Our family celebrated with some yummy dishes! I hope you enjoy them as much as we did. I made a traditional roasted turkey as well as a Spiral Ham. YUMM!!!
Here are the some of the side items I made for our Gluten Free Thanksgiving! GLUTEN FREE STUFFING: We like a meaty stuffing. I used a gluten free bread as my base. I cut it in cubes and toasted it in the oven with a little olive oil. 3 loaves gluten free bread 1 lb pork sausage- cooked and crumbled. One pkg baby portabella mushrooms- chopped as fine as you like them. 1 cup dried cranberries One yellow onion chopped 1 clove of garlic chopped Italian seasoning Red pepper flakes to taste Parmesan Cheese 1/2 bottle white wine 1/2 box chicken stock Cube and toast bread. Drizzle with olive oil and toast in oven. Cook sausage. Add other ingredients except wine and chicken stock. Combine with bread. Butter a deep baking dish and put ingredients into dish. Pour wine and stock over bread. Sprinkle with Parmesan Cheese. Bake in oven for about 45 min. Enjoy! Gluten Free Stuffing IF YOU LIKE THESE RECIPES, YOU MIGHT ALSO LIKE: Gluten Free Thanksgiving Casserole Gluten Free Salmon and Sweet Potato Hash BACON BRUSSEL SPROUTS: Most people I know don’t like Brussel Sprouts. However most people who eat these do like them! They are salty and delicious! 1 large bunch of brussel sprouts A package bacon- chopped 1 yellow onion- chopped 1. Wash and chop brussel sprouts. 2. Lay on baking sheet. 3. Add the chopped onion to the brussel sprouts. 4. Drizzle with olive oil and balsamic vinegar. Sprinkle with S & P. I like to use my hands to make sure everything gets coated evenly. 5. Bake in oven at 375 degrees until they get a little brown and crispy. 6. Enjoy! Gluten Free Bacon Brussel Sprouts If you think you don't like brussel sprouts, give them another try using this recipe! They are delicious! INGREDIENTS
CRANBERRY SAUCE: I know some folks only eat cranberry sauce that is shaped like a cylinder, however my home-made sauce is super yummy! Gluten Free Cranberry Sauce This homemade gluten free cranberry sauce is delicious over turkey as well as in your mimosa! INGREDIENTS
GLUTEN FREE PUMPKIN PIE: I usually buy the Whole Foods premade gluten free pie crusts, however I didn’t have time to drive to Whole Foods. So I tried to make the Bob’s Red Mill pie crust. It worked out ok but it was a little labor intensive compared to just filling premade crusts lol! For the Pie filling I followed the recipe on the can of Organic Pumpkin. Pie Filling: 1 can Organic Pumpkin 1 Can Organic Sweetened Condensed Milk 2 eggs Pumpkin Pie Spice Mix and pour into crust GF Pumpkin pie I hope you enjoy these side items for a Gluten Free Thanksgiving!
