BLT sandwich skewers are a fun way to eat your typical BLT. Who doesn’t love food on a stick? It reminds me of going to the state fair except they are not deep fried! We were invited to go to our friend’s boat on a sunset cruise with some food and cool drinks. It was still really hot in AZ so cool drinks are a must! The lake was beautiful and our friends are always a great time. We had fun snacks on board like charcuterie, hummus and veggies, assorted cheese and crackers and BLT sandwich skewers! The water was cool and we floated for a few hours laughing and talking. There might have been some singing too! Haha!
We love being on the water and coming up with fun food that is easy to eat is always a good time. I think Arizona has some of the most beautiful sunsets I have ever seen. I thought I took one of the canyons with the sunset, but I guess I didn’t. That gives me an excuse to go back… photo opp lol! Not the fact that I love boating and our friends haha! If you have never been to the lakes near Phoenix, you should definitely check it out! There is a steamboat that runs on Canyon Lake and gives tours as well as dinner cruises. It’s a pretty cool experience if you don’t have your own boat. Here’s the link to the Dolly Steamboat. Gluten Free Tom Kha Gai is a comforting creamy and delicious Thai soup. You can use chicken or shrimp or a combo if you like! This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. I served it with spaghetti squash “noodles” and it was perfect! You could serve it with rice or pasta as well. It is comfort food that is healthy too!
We just got back from vacation and I was craving a meal made in my own kitchen! IT was nice not to have to cook as much but I honestly missed it. I love that our families try so hard to cook safely when we visit. It is so nice to enjoy everyone and have safe food to eat too! So thankful! Plus they are mostly just really great people. We miss them since we live so far away so try to enjoy every minute with them when we are there. This dish makes me think of our trip to Italy. Creamy sauce with fresh green and red. Yum! Pro Tips for this Tuscan Chicken: If you want to make it with dairy, you can substitue the coconut milk for heavy cream. You would use about 1 cup of heavy cream. Since I am doing the two week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! We love it as a main dish, but you could also serve it with lettuce cups as an appetizer! Very versatile and delicious! They taste delicious and gave me all the feels of regular crab cakes! These crab cakes taste just as wonderful as the full-on carb version. Since Crab Cakes are one of my favorite foods so I needed to make a low carb version to satisfy my craving. I love the flavors you can add to the crab to make it just pop!
I used a combo of almond flour and coconut flour. It really didn’t take too much to hold these babies together. We like to eat them with Sir Kensington’s spicy mayo. So yummy! I think their Special Sauce would also be delicious! But, I didn’t’ have any on hand. You could also make a tartar sauce with mayo and pickles to serve with these low carb crab cakes. It would add tang and zip! Side note: You could eat all of the ingredients mixed together without any of the flours as a crab salad and it would be perfect! I really debated adding any of the flour and just serving it that way, but I had already gotten up the hopes of my family for crab cakes! haha! I may make the salad version next week and serve it in lettuce wraps. I definitely have crab on the brain! It can be made to replace quite a few “bread” or “crust” foods but with lower carbs! I love to use it for bagels, pizza crust, cinnamon rolls and so many more options! My kitchen smells so good right now! This Fathead dough smells like bread baking. I might be salivating. I am currently fasting in the mornings until around 10 or 11 to add to my ketogenic diet results. We are going to Mexico in a few weeks and I wanted to kick it up a notch for bathing suit wearing. Not to mention, we had 6 weeks of company and I wasn’t strict with my keto. Ugh, the struggle is real! Anyways, back to keto and feeling better. Fathead Dough-Fathead dough can be used as a delicious substitute for bread while on a ketogenic or low carb diet. I have been craving a bagel with cream cheese and smoked salmon so I made bagels today. You can shape the fathead dough into any shape you want. I made one big thin sheet so I can break it up into crackers later. You can use it as a pizza crust, wrap, taco shell, burrito wrapper, etc etc etc. You can find variations of this recipe all over Pinterest, Instagram, and Facebook. It is super easy to make and goes together really fast. I find that using my hands to mix in the egg and almond flour make it go the easiest. You will often see me using my hands to mix things though, but if that grosses you out feel free to use a spoon! I am not sure who first made this dough, but I am definitely not the original on this one. I think I got the recipe from www.ditchthecarbs.com but have tweaked it slightly. Here's The Recipe: Fathead Dough Low Carb Ketogenic dough that can be used as a bread substitute. Add toppings, use as a wrap, pizza dough, cinnamon rolls, or however you can imagine it! INGREDIENTS
