Gluten Free Fathead Dough is a keto diet lover’s best friend! It can be made to replace quite a few “bread” or “crust” foods but with lower carbs! I love to use it for bagels, pizza crust, cinnamon rolls and so many more options! My kitchen smells so good right now! This Fathead dough smells like bread baking. I might be salivating. I am currently fasting in the mornings until around 10 or 11 to add to my ketogenic diet results. We are going to Mexico in a few weeks and I wanted to kick it up a notch for bathing suit wearing. Not to mention, we had 6 weeks of company and I wasn’t strict with my keto. Ugh, the struggle is real! Anyways, back to keto and feeling better. Fathead Dough-Fathead dough can be used as a delicious substitute for bread while on a ketogenic or low carb diet. I have been craving a bagel with cream cheese and smoked salmon so I made bagels today. You can shape the fathead dough into any shape you want. I made one big thin sheet so I can break it up into crackers later. You can use it as a pizza crust, wrap, taco shell, burrito wrapper, etc etc etc. You can find variations of this recipe all over Pinterest, Instagram, and Facebook. It is super easy to make and goes together really fast. I find that using my hands to mix in the egg and almond flour make it go the easiest. You will often see me using my hands to mix things though, but if that grosses you out feel free to use a spoon! I am not sure who first made this dough, but I am definitely not the original on this one. I think I got the recipe from www.ditchthecarbs.com but have tweaked it slightly. Scotch Eggs are hard boiled eggs wrapped in sausage and then fried or baked in the oven. You get your eggs and sausage for breakfast all in one cute ball! Need an Easy Make Ahead Breakfast? Look no further! Scotch Eggs are my go-to quick make-ahead breakfast! I sometimes buy pre-hardboiled eggs from Costco to make the process even faster. These are perfect for weekday breakfasts when you are in a hurry or need portable protein. I also use them during the holidays. They are awesome for Christmas morning so I am not stuck cooking while everyone is waiting to unwrap the gifts. I am starting to plan my Christmas morning menu, as it is only a couple of weeks away. I know these will for sure be included in it because of their ease of preparation! That is as far as I have gotten though….. hehe…. I am a planner at heart but we had a crazy week so didn’t get as much done as I had hoped. Family and the Holidays: I am reflecting on our week and I am reminded to enjoy every day in your life. You never know when it’s your time or a loved ones time to go. My Sister In Law’s Step Dad passed this week as well as my Cousin’s almost wife’s Dad. My heart hurts for them to lose a loved one near Christmas, but there really isn’t ever good timing. I pray that the love they had and great memories will flood over them. If you don’t like pork, turkey sausage will work, it’s just sticky and harder to roll around the egg. You might have to add some extra fat to the pan so it doesn’t stick as well. Raw milk yogurt has been my fascination lately! I made another pot of it today! It is currently in the fridge waiting for me to make a delicious sauce to top it!
Instant pot yogurt can be intimidating the first time you make it. I promise you that it is worth it! Once you have it homemade you will never want store bought again. The additives in store bought yogurt hurt my belly, so I decided to make my own. I have an older Instant pot, but it does the job perfectly. I highly recommend the glass lid to go with it too! Use mason jars to store your yogurt once it is ready. I made a blueberry sauce with this batch but strawberry sauce is up next I think! I saw the original recipe from The Castaway Kitchen and had to make it! It was so yummy! I love everything about it. I am not a good recipe follower so I made up my own version. The best thing is, that it is totally customizable and you can put whatever works for your diet and whatever you have in the fridge in this. We loved these breakfast egg roll ups and hope you do too! I made these when we went sailing in California, because they are easy to make ahead and you can eat them hot or cold. Everyone on board loved them! So that was a blessing! I was so excited making this recipe! It is definitely a crowd pleaser! If you have company or want to make something that will give you leftovers for another day this is the perfect breakfast! I really wanted something that I could assemble and cook while I was getting ready. I also really wanted it to be delicious! This gluten free blueberry cheesecake french toast only takes about 15 minutes to assemble then you bake it for about 45 minutes and it is ready to eat! That is perfect timing to prep and get ready for the day! It is also a great way to use up a loaf of bread that might be slightly hard. The egg mixture really soaks in and creates a delicious custard like texture. I have also made this the night before and let it soak overnight in the fridge, then baked it in the morning. It turns out delicious that way too! It’s great for holiday brunches or Christmas morning! Espeically with mimosas and bacon! We have family coming into town soon and I will definitely be making this again! My family is all from Canada so they like to come and enjoy our pool and beautiful Arizona weather! I always get so excited for their visits and love making memories with them. If you are looking for some other brunch foods check out this delicious breakfast pizza and this fantastic egg roll up! Here's how to make it: Cube the bread and put into a pan that was sprayed with oil. Add pieces of cream cheese to bread. Pour blueberry mixture over bread and cream cheese. Mix blueberries all over the bread. Pour eggs and cream and push bread into it to allow it to soak in. Bake in the oven for about 45 minutes or until a knife inserted comes out clean. We had a wonderful day that started with our family snuggling on the couch and ended with our family snuggling on the couch! I treasure those times as it won’t be long until our children have families of their own! We had family and friends over for brunch yesterday. I made my meaty egg casserole, gluten free donuts ( I purchased from Gluten Free Creations Bakery and Sprouts), fruit, and mimosas! It was a delicious start to our Christmas day! I love making egg casseroles because they are wonderful to warm up as leftovers and feed a crowd! MEATY EGG CASSEROLE: 18 eggs- cracked and beaten One box organic egg whites- beaten 1 organic ham steak- cubed 1 pkg organic sausage cooked and crumbled. One pkg hash browns. I used Oreada as they are gf. I didn’t get organic as I couldn’t find any. 1 pkg shredded cheddar cheese. A stick of butter. 1. Spray your deep baking dish with coconut oil spray. 2. Preheat the oven to 350 degrees. 3. Layer hash browns in a baking dish. Put small pieces of butter over the hashbrowns . Be your own judge on how much butter you would like to use. 4. Bake hash browns until browning slightly. 5. Remove hash browns and top with meat and evenly distribute it over the area. 6. Pour eggs over the meat and hash browns. 7. Top with cheese. 8. Bake in 350 degree oven for about 45 min- 1 hr. The eggs will get fluffy. You should be able to insert a knife in the center and it will come out clean when the eggs are cooked. You can add whatever you would like to this egg casserole. I have made a vegetarian version, a combo meat and veggies, and used sweet potato hash browns instead of potato. I made my Gluten Free Breakfast Pizza for brunch yesterday! I used a Pesto Pizza from Against the Grain. Added chopped ham and eggs. You could add whatever toppings you have in your fridge. I even broke 2 yolks and it was still delicious! First I pre-cooked the pizza until it was almost all the way done. Then I added my toppings. I wanted to make sure it has a crunchy crust without overdoing the eggs. Gluten Free Breakfast Pizza: 1. Preheat the oven to 425 degrees. I put my stone in the oven so it is nice and hot for the pizza to go on it! 2. Bake pizza for about 15-18 minutes. 3. Add your toppings. Crack eggs and drop on the pizza however you would like them arranged. 4. Bake pizza until eggs are firm but not over done. I was impatient so I turned the broiler on for a few minutes to finish them. 5. Slice and enjoy! I hope you have a great Monday! This year I am smoking a turkey as well as roasting one. I am also making Bacon brussel sprouts, mashed potatoes, stuffing, pumpkin, and pecan pie as well as pumpkin cheesecake with a gingersnap crust! Stay tuned for those recipes! I am very excited about smoking a turkey as I have never done that before, however, I love to smoke Chicken so I am sure it is similar. This morning I made my Gluten Free Salmon and Sweet Potato Hash with a poached egg for breakfast. I had made my Orange Cedar Plank Salmon over the weekend so I wanted to add some protein to breakfast and use the leftover salmon. I hope you enjoy it! Salmon Sweet Potato Hash: 1 large Sweet Potato cooked and chopped 1 yellow onion chopped 8 oz salmon cooked and chopped Garlic Italian Herbs Eggs cooked to the desired doneness in a poacher 1. It’s beautiful outside but scary to drive! I made it to the gym and back with little problems but other parts of the valley have motorists stranded in standing water! Some schools are closed and people are being advised to just stay home! It reminds me of the first big snowstorm of the year growing up. It is always crazy here when we get a lot of rain because we just don’t have the drainage on our streets for it. People drive into large amounts of water and get stuck or washed away. I am sure there will be someone in need of a helicopter rescue from driving into a flooded area… I hope everyone stays safe out there today! I’m going to stay home and make soup for supper… Stay tuned for that recipe:) Since we had a weekend of eating carbs I decided to make a healthy protein-packed breakfast to start off our week on the right track! It is fast to make so a perfect breakfast on a work or school day! HERE’S HOW I MADE THESE DELICIOUS EGGS FLORENTINE: 1. Mince 1 garlic clove. 2. Chop 1/2 yellow onion. 3. Saute garlic and onion in a pan with coconut oil. 4. Chop fresh spinach (about 2 handfuls) and add to garlic and onion. 5. Beat 8 eggs and add 1 TBSP water. 6. Once Spinach is soft add eggs and cook until scrambled. 7. Sprinkle with Feta Cheese. 8. Season with Salt and Pepper. 9. Enjoy!!
