This recipe for Bacon Wrapped Stuffed Chicken Breasts is quick to make and delicious. If you want to make it as an appetizer, just cut the chicken into smaller pieces and then stuff and wrap. I would also secure the bacon with a toothpick to hold it together. Here’s How you make this recipe: You will need chicken, bacon, riccotta, parmesan, Italian seasoning, garlic, pesto, arugula and spinach. I like to mix the filling in a bowl then stuff the chicken. Once the chicken is ready to be stuffed, you have to cut the breast in half to put the stufffing in. Then wrap it in bacon and secure it with a toothpick to bake it. Bake it in a deep baking dish, in case some of the filling melts out. Scoop it back in when you go to serve it! Once the chicken is 165 degrees F you are ready to eat! Our lemon trees have produced a lot of lemons this year and I am busy trying out ways to use them in recipes before I juice the rest of them. This lemon roasted chicken is a wonderful light tasting comfort dinner. We picked our lemon trees and had over 500 lemons! Some other ideas I have for the lemons are lemon ice cream, lemon pie, lemon bars…(I feel like I am starting to sound like Forrest Gump hehe!) …. maybe for water, margaritas or lemon drop martinis It has been a busy season at our house. Our oldest daughter is a senior in high school. We have been helping her narrow down colleges. She is I think, down to 2 schools! Insert party horns and clapping. We are blessed that she has worked hard in high school and has some awesome schools to choose from. We are so excited for her! She is waiting on scholarship information to make her final decision. Hopefully by the end of March she will know where she is going to go. I am praying everyday for her and I know that she will do great wherever she goes. I’m feeling a little sad with the process but have come to realize that we have prepared her well and she is ready to go out on her own. I will miss her like crazy but know it’s the progression that needs to occur. I am thankful that there is 3 years before we transition our youngest daughter to college. Then the empty nest phase… So, comfort dinners and enjoying every bit of time we have until August when we move her into a dorm room where her next chapter will begin! XO, Michelle Jalapeno chicken cordon bleu is super easy to make as you just layer all of the ingredients into a deep baking dish and bake until everything is cooked and the cheese is melted! Happy Wednesday! Hope all of you are staying warm and healthy! My “under the weather” ended up being the flu. Our oldest daughter also got it two days after I had it. It was a nasty one! We had a fever for 8 days! Along with the other lovely flu symptoms. We are both still coughing which I found out can last a few weeks. Yuck! I pray that you and your family does not get the flu! However, we are on the mend and back to great health! Yay!! Our first winter visitors from Canada have arrived. I am being diligent in my cooking to not contaminate it with my germs. I have been washing my hands like crazy as well as Cloroxing our house! We should own stock in Clorox at this point! Hehe! I made this delicious Jalapeno Chicken Cordon Bleu dish while I was sick. I threw everything into a deep pan and baked it in the oven. My family loved it. It wasn’t too spicy so if you like heat, go ahead and increase the jalapeños or leave the ribs in the pepper for heat. JALAPENO CHICKEN CORDON BLEU: 8 chicken thighs. Boneless and skinless. 1 package Canadian Bacon or Ham. 1 package goat cheese. 2-3 Jalapeños- cleaned with seeds and ribs removed and diced. Pecorino Romano shredded cheese- to taste. S & P. 1. Layer Chicken in bottom of a deep baking dish. Sprinkle a little EVOO or Coconut oil on the bottom to prevent sticking. S & P the meat. 2. Layer the goat cheese on top of the chicken. 3. Sprinkle the Jalapeno peppers over the top. You can sprinkle a little Pecorino Romano now if you like it extra cheesy! 4. Layer a piece of Canadian Bacon or Ham over the top. 5. Sprinkle Pecorino Romano over the top. 6. Cover with foil and bake in a 370 degree oven until cooked. 7. EATING OUT CAN BE SHITTY! I ‘m not feeling super well today after being “glutened” last night at Carrabbas. I ordered off of the gluten free menu, told the server I had Celiac and made sure she knew it was to be gluten free. The kitchen staff however, did not cook my food gluten free. They cooked the broccoli in the pasta water and gave me a hidden piece of pasta under the broccoli to boot! So- my Christmas dinner out with my ladies was not very Merry for the rest of the evening! I had a food baby and gurgling belly. Frequent trips were made to the bathroom. I had a headache and felt airy headed. The manager apologized and said it’s hard to cook for people like me. He gave me a $25 gift certificate for my next visit. That was nice but I was still upset about the comment. If they don’t want to cook for people like me they shouldn’t offer a gluten free menu! PERIOD! If they do offer a gluten free menu they should make darn sure the kitchen staff know what that means! Needless to say my evening was spent in discomfort. HUMOR HELPS ME THROUGH CRAPPY SITUATIONS! I love my friends though as they have a sense of humor about it! When asked if the restaurant could get me anything, my one friend said 2 ply toilet paper lol! I have eaten at Carrabbas many times and not gotten sick however it will be a long time before I venture back again… Here’s What I do when I get “glutened“. I must be on a roll with comfort food this week! Here is my recipe for Chicken Bacon Mac Mac. It is a family favorite mostly because who doesn’t love mac n cheese with Bacon! This was a quick meal I through together with some leftover fridge items. It has now become a requested meal! Haha! CHICKEN BACON MAC MAC: 2 packages Annie’s Gluten Free Mac and Cheese- You can make your own homemade if you want, however this has been a crazy week so I used boxed. It is not organic and that makes me sad but I haven’t found a gluten free organic mac n cheese yet…I am still looking! 1/2 lb bacon- slice into bite sized pieces 1 yellow onion chopped 1 precooked chicken breast or 2 thighs. Chopped into bite sized pieces. Or you can use rotisserie chicken! I also had some ham steak so I added that too. 1. Cook mac n cheese according to the box. 2. Cook bacon in a frying pan. Add onion once bacon is nearly cooked and brown. Put chicken into pan to warm it up. 3. Combine Mac n Cheese once finished and the bacon, onion and chicken mixture. Enjoy! It is a wonderful time of the year! I love the opportunities to gather with family and friends! I also look forward to the pajama days of watching movies and playing games once school break starts! Last night our youngest daughter had softball practice with 15 minutes to change and eat before her choir call time. I fed her pasta and shrimp in the car as I drove from one location to the other! Some days are just like that. I wanted to share a meal that is comforting and nutritious! Crazy nights make me think of the quiet ones I am able to sit and eat with my family! GREEN CHILLI CHICKEN WITH ROASTED ROOT VEGGIES AND QUINOA: Let’s start with the Quinoa- I make mine in the rice cooker the same way I make rice. 1 cup Quinoa to 2 cups of water. You can size up the amounts from this ratio. You can also make it in your rice cooker! Second- The root veggies- I washed and peeled the multi colored carrots and parsnips then tossed with evoo and herbs de province and baked in a 375 oven for about 30-45 min. Green Chilli Chicken: 1. Put a little EVOO (Extra Virgin Olive Oil) in the bottom of a baking dish. 2. Arrange your chicken pieces in the pan. Sprinkle with S & P. 3. Pour Organic Green Chilli sauce over your chicken. I used organic chicken thighs and whole foods green chilli sauce. 4. I sprinkled a little grass fed shredded cheese over the chicken. You can omit if you don’t like cheese. 5. Bake Chicken in the oven with the veggies for about 45-60 min. If you want to make this in the crockpot, add all of the ingredients to the crockpot and cook on low for 6-8 hours. Enjoy! It brings all the fall flavors of pumpkin and spice with delicious creamy ricotta cheese in one dish! Yummy! Happy Veteran’s day! I am very thankful for the men and women who have served! This year we had the privilege of visiting Pearl Harbor. It was a very humbling experience. We watched the movie first and after seeing the area first hand I could not imagine what it was like on that December day! So once again Thank you! Today I made Pumpkin Lasagna. It is soooo yummy! It is easy to throw together and cook when you need it. I premade mine in the morning and cooked it in the evening for supper. I hope you enjoy it as much as we do! HERE’S HOW TO MAKE GLUTEN FREE PUMPKIN LASAGNA:
Gluten Free Pumpkin Lasagna: 1 box of Gluten Free Lasagna noodles. 3 jars of Pumpkin Pasta Sauce. 1 large bag of shredded mozzarella. 1 large container of Ricotta Cheese. 2 Chicken Breasts Chopped. (you can omit this if you want a vegetarian option. I used a rotisserie chicken :)) 1. Pour a small amount of sauce on the bottom of your deep dish pan. 2. Layer the noodles in the bottom of the pan. 3. Top with Ricotta, Chicken, Sauce and Cheese. 4. Repeat noodle layer. 5. Repeat Filling layer. 6. Repeat noodle layer. 7. Repeat Sauce layer and top with cheese. I also add about a cup of water over the top since I didn’t pre cook my noodles. Bake in a 375 degree oven for 45 min- 1 hour. I served this with a fall salad and some red wine:) Enjoy! I made this delicious Gluten Free Chicken Cacciatore last night! We had friends over for dinner and this is the meal that they requested! I love the creaminess of the sauce and how the chicken just falls apart! I hope you love it too! GLUTEN FREE CHICKEN CACCIATORE: INGREDIENTS: 12 Boneless Skinless Chicken Thighs 3 Boneless Skinless Chicken Breasts- cut into smaller pieces (about the same size as the thighs) 1 cup Gluten Free Flour- I used Glutino (It is non GMO) 1 Bottle White Wine 2 Cups Chicken Stock 1 Yellow Onion 1 Red Pepper A Jar of Capers 3 Cans Diced Tomatoes 3 Cloves Garlic A handful Fresh Basil 2 TBSP Italian Seasoning S & P HERE’S HOW TO MAKE IT: 1. Heat some coconut or olive oil in a Deep Pan. 2. Mix flour, Italian Seasoning and S&P together on a plate. 3. Dredge Chicken in flour mixture until all covered. 4. Brown Chicken pieces in oil. Set aside on paper towel lined plate. Work in batches as to not over crowd the pan. 5. Add garlic, onion and pepper to pan. Cook until soft. 6. Add 3/4 bottle of white wine. Reduce wine by 1/2. 7. Add Chicken stock, cans of tomatoes and jar of drained capers. 8. Dunk chicken pieces back in the sauce. Try to cover all pieces. 9. Simmer with the lid closed for about 45 minutes to an hour to finish cooking the chicken. Stir occasionally so it won’t burn. Add Fresh Basil that is thinly chopped to garnish. 10. Enjoy! I like to make a bigger batch of it so we have leftovers. You can pair it with a big green salad, rice, noodles or any kind of potatoes. Original Post was written 09/12/2014 and updated 1/24/22. WHAT DO I NEED TO MAKE HONEY MUSTARD CHICKEN? 8 Chicken thighs or 4 Chicken breasts – I used boneless and skinless 1/4 cup local honey 2 tsp mustard powder- If you don’t have the mustard powder you can just use yellow mustard but increase to 1/4 cup (just make sure the label says gluten-free) 1 tsp garlic powder 1/2 tsp ground ginger HERE’S HOW TO MAKE THIS GLUTEN FREE HONEY MUSTARD CHICKEN: Arrange chicken pieces in greased baking dish. (I used a little coconut oil) S&P Chicken. Mix other ingredients together. It is easier to mix honey if you warm it slightly first:) Spread mixture over chicken. Bake in the oven at 350 degrees for about 30-40 min, or until cooked. Enjoy!! This is one of my family’s favorite dishes! I think they love the sweetness of the honey and tang from the mustard. The pan sauce that occurs with this recipe is delicious drizzled over any potatoes or rice. You can even make this ahead in the baking dish and keep it in the fridge all day and bake it right before dinner time. I have also made it in the crockpot and it was fantastic as well. I like to put all of the ingredients in the crockpot in the morning and cook it on low all day. The delicious smell in the house, while it is cooking, makes me drool waiting for dinner time! Haha! HERE’S HOW TO MAKE THIS CHICKEN MEATBALL AND ZOODLE SOUP: 1. Chop all vegetables 2. Place chopped veggies (minus a few parsley leaves to put in the broth) and cumin in a bowl. Mix in ground chicken. 3. Heat some olive oil in a pot. Make mini meatballs and cook in olive oil until brown on all sides. 4. Add chicken broth and parsley. Bring to a simmer. 5. Peel and spiralize zucchini. 6. Allow meatballs to simmer for about 15-20 min to cook and absorb the juice. 7. add zucchini noodles and cook for 3-5 minutes. 8.
