This Instant Pot Fajita Chicken can be served over rice, cauliflower rice, zoodles or a salad or eaten as a soup! It is very versatile based on your needs. I love that it is made in one pot and the pressure cooker makes it cook quickly. And only one pot to wash is awesome! I don’t’ really like washing dishes so the less to wash is better!
We had Bible study last night and this is the dish I made this fajita chicken for our potluck. Some people ate it over a salad and others ate it like soup and added rice. It was cool and rainy here so comfort food hit the spot. The Phoenix area had more rain in the last 3 days that it has all year! We didn’t get much flooding in our part of the Valley, but other parts have lots of flooding. I love having a break from the hot weather and hope the fall temperatures are here to stay! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle This gluten free breakfast frittata is made with spinach, mushrooms and onions! You can customize the ingredients to whatever you have on hand. I am doing a 21-day sugar detox “cleanse” before the holiday season is here and now that the summer pool parties are winding down, it’s a perfect time. Sugar is a powerful drug and man oh man my body wants carby snacks and wine right now, well not right now because it’s not even 8 a.m. but you get what I am saying.
I am looking forward to next week when I am past the cravings and in the routine of detox. We don’t eat a ton of carby snacks and junk food, but I do enjoy wine more than I probably should and occasionally popcorn. I can turn down chips, chocolate, and other snacks but popcorn gets me every time! haha! I think it is good to reset your body and eat a certain way for a time. We usually eat paleo/keto most of the time. Recently, I have been having an issue with dairy and so have cut it out of my diet, unless I am somewhere where gluten free and dairy free are not available. I am always gluten-free. If you can eat dairy I recommend adding feta cheese to this breakfast frittata and it would be ah-mazing! Feta has that delicious salty taste that would make this frittata pop! Are you a breakfast person? Breakfast is probably my favorite meal of the day. I have tried fasting but my body really enjoys breakfast and the energy I get from eating it. We are usually mostly protein and some fruit or veggies in the morning people. We don’t usually eat a pastry or other sugary breakfast items unless it’s Christmas morning. Gluten Free donuts are a thing on Christmas morning. It’s a tradition. Here are some other ingredient ideas for a breakfast Frittata! Denver- green pepper, ham, onion Sausage and Cheese Bacon, Spinach and tomato Caprese Use your imagination! That’s the best part about having a frittata for breakfast! Mushroom Spinach Onion Fritatta Easy and delicious breakfast frittata that’s ready in just a few minutes. INGREDIENTS

XO, Michelle Lamb chops are so flavorful and delicious! They smell amazing while they are cooking. Lamb has an almost sweet smell to it and is so juicy and tender. My family loves lamb, except my Dad, he is not a fan. My Uncle’s family used to raise lambs and we would get to see them as babies before they were shaved for wool or made into dinner. Sorry- but that is where lamb chops come from. One time we had a lamb roast at their house and its name was written on the package. We were eating dinner and my Aunt said, Molly wasn’t a very good lamb and is not a very good roast either! We all started laughing. I imagine that is what farm life is like sometimes.
Most of my Aunts and Uncles are farmers or live in a rural area of Saskatchewan. I grew up in town so only got to visit and experience farm life vicariously through weekend visits. My kids, now almost both adults, still remember fond visits to their farm family’s homes. These seared lamb chops are a fast meal for dinner or an appetizer. They cook really quickly and are so yummy. I pair them with my Mascarpone Honey sauce and it marries with the lamb flavor so well. I cooked these on our BBQ but you could also use a grill pan inside your house and sear each side, then finish in the oven on a baking sheet until your desired doneness. Medium rare is delicious! We like to pair our lamb with a nice Zinfandel or Cabernet. They can handle the big bold flavors. Seared Lamb Chops Seared lamb chops are flavorful and delicious. They are a great appetizer or meal. Pair them with my Marscapone honey sauce FTW! SERVINGS 6 INGREDIENTS

As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Beef tips with coconut cream mushroom sauce is a one pot gluten free and dairy free meal! This was my first time making beef tips with coconut cream mushroom sauce. I have a go-to way of making my sauce for other meats so I incorporated it here! We ate it over arugula, but you can serve it with mashed potatoes, sweet potatoes or rice if you like.
It only took one pan to make this meal so dishes were a snap! I love when that happens. Beef tips are parts of the steak, but not necessarily all the same cut of meat. I was concerned it would be chewy so I marinated it during the day in a quick sauce of coconut aminos, avocado oil, garlic, Italian seasoning and balsamic vinegar. I honestly didn’t measure the ingredients, I just poured it into a ziplock bag and put the meat in. Once I sealed it I squished the liquid onto the meat and put it in the fridge. You can substitute your favorite marinade ingredients if you would like. The marinade made the steak sear a pretty color of brown as the vinegar carmelized in the pan. I love the tangy flavor it gave this dish. If you love this beef tips recipe, you might also like: Instant Pot Terriyaki beef Wine Braised Beef Short Ribs I hope you love this recipe as much as we did. As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Gluten Free Tom Kha Gai is a comforting creamy and delicious Thai soup. You can use chicken or shrimp or a combo if you like! This is one of our favorite quick to make meals. It is so creamy and tangy, just typing this makes me want to whip up a pot of it! We first had this delicious soup with friends at a Thai restaurant 5 or 6 years ago. We had never really had Thai food because the first time we tried it as a married couple, my husband got food poisoning and swore off Thai food. Fast forward 15 years later and we got invited to dinner and tried it again! I am so thankful we did try it because so many of the options in Thai cooking are gluten-free.
When I make Tom Kha Gai, we usually arm wrestle a little over who gets the leftovers. I also love that you can change the protein you add to the soup based on what you have and or are in the mood for. I always put chicken breast in the soup and that is how I have had it at restaurants too. This time I added pink shrimp. I have also added scallops or crab meat. If you add scallops, be sure not to overcook them as they get rubbery. Sometimes we like to pair this with Jasmine Rice or Cauliflower rice. The History of Tom Kha Gai:Tom Kha Gai means Chicken Galangal soup according to Wikipedia. In Thailand, most tom kha gai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. I hope you love this soup as much as we do. You can adjust the spice by adding or subtracting the chili paste or by adding in fresh chopped Thai Chilies. I usually make ours to a 2/5 heat level. But we don’t love super spicy food so feel free to spice things up a bit! Tom Kha Gai One Pot Meal! Creamy and delicious. Tangy and comforting Thai soup. INGREDIENTS

It’s Tuesday today and that makes me think of Tacos! This Instant Pot Pork Carnitas recipe will make your taco game stronger! They are fast to make and delicious! I broiled some of the meat in the oven to crisp it up after it is done cooking then put it back into the juice in the Instant Pot. Everyone loved the citrus flavor of the pork. I did not eat any of this delicious pork carnitas because I am still following a vegan diet. I am craving crab and lobster the most…. what does that say? If there was any of this pork left over I would be eating it for sure! I love the way the citrus smells while it is cooking with the pork. So yummy! I hope you like this recipe as much as we did! It will definately be on repeat at our house! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle Cha Cha Cha Chia! I love pumpkin anything! This pumpkin chia puddin’ is delicious! It tastes like the inside of a pumpkin pie! I love eating it for breakfast with my coffee because it tastes just like I am having pumpkin pie and coffee! So yummy and filling. I had to call it puddin’ because that is how I say it in my head…. with a very Southern accent. It makes the pudding taste better.. promise!
If you would like you can change out the coconut milk for any milk you would like. I know that this photo isn’t super pretty, but I promise it tastes so much better than it looks! Usually, it is the other way around with beautiful desserts- they don’t taste as yummy as it looks! But sometimes they do! Why?I made this recipe because I am doing a two week trial of being vegetarian/vegan and wanted a breakfast option that I could make ahead for a fast breakfast. It’s also awesome that you can make a big batch at once. Once my trial is over I will keep this in the breakfast rotation because it is so yummy! I am on day 6 of no meat/animal products and I am surprised at how my body is responding. I thought I would be crabby and hungry all the time, and that is not the case! So happy to feel good and hoping for the best blood work ever.. cause I might still miss bacon. Even if you don’t eat vegeterian/vegan this is a delicious breakfast or dessert option! My Dad really liked this recipe and I think he still makes it now. You can also use other fruit with the chia seeds to make the pudding. You might also like these easy breakfast options! I hope you like these inside out egg rolls! As always, Best Wishes for Gluten Free Dishes! XO, Michelle This gluten free mascarpone honey sauce is perfect for dipping lamb into! I also have included a keto version as well! This sauce made from mascarpone cheese, honey and spices is so delicious! I serve it with lamb, but you could make it to serve with any meat! It is smokey and sweet. The perfect balance of taste! Mascarpone is one of my favorite cheeses. I use it to make sweet dishes like Tiramisu and savory sauces like this one. It is beautifully creamy and mild. It is the perfect choice to go in this sauce because it melts slowly into the warm lamb that I am going to serve it with. Mascarpone cheese is an Italian cheese. You can find different varieties of it in the store. It tastes like a very creamy mild cream cheese. Don’t buy the variety that is used for desserts because it melts faster! I actually use the same one in my Tiramisu as I do in this sauce. This gluten free mascarpone honey sauce recipe is based off of Giada De laurentis’ recipe. I hope you love this deliciously creamy sauce as much as we do! My hubby could eat it all by itself haha! Here are my favorite Lamb Recipes to pair it with: Lamb Chops Lamb Roast Crown Rack of Lamb Mascarpone Honey Sauce INGREDIENTS
If you would like to make a keto version, substitute the honey for a few drops of Monkfruit liquid sweetener! It tastes just as good and less carbs! As Always, Best Wishes for Gluten Free Dishes! XO, Michelle |
