This gluten free lamb roast is so flavorful and delicious! Put all of the ingredients into a roasting pan and bake then sit back and relax until it's time to enjoy it! I happen to love Lamb. It is so delicious and has the most beautiful smell while it’s cooking. It does smoke up a bit while you are searing it so be prepared to have your house smell delicious but also look like you could invite the fire department over! Haha! I usually open a window and make sure my vent hood is going.
This lamb roast came in my holiday Butcher Box. I am so happy with all of the meat they offer. It’s very convenient to have it shipped right to the door! They have an option that you can choose what you want or an option that they choose what you are going to get. I like the “they choose”, option because it’s kind of like Top Chef and I have to figure out the best way to cook the food that is in there. I served this lamb roast with potatoes and onions that cooked in the pan with the lamb. They were so crispy and yummy with the ghee and lamb fat. I highly recommend it. I also made green beans and mushrooms for a low carb veggie option. When we have lamb I always make my Mascarpone honey sauce. You can find the recipe here. Gluten Free herb stuffed pork roast in the instant pot is a quick and tasty meal! I love using my instant pot to cook foods in because it does all of the work! I love a fast meal that is delicious and makes you feel warm and comfy. It only takes a few minutes to prepare this recipe then you put it in your Instant Pot and Voilla! It’s ready to eat in a short time. The best part is that you don’t have to babysit it. You can throw it in your Instant Pot in the morning and it will keep it warm until you are ready to eat. So Easy!

Look no further! Scotch Eggs are my go-to quick make-ahead breakfast! I sometimes buy pre-hardboiled eggs from Costco to make the process even faster. These are perfect for weekday breakfasts when you are in a hurry or need portable protein. I also use them during the holidays. They are awesome for Christmas morning so I am not stuck cooking while everyone is waiting to unwrap the gifts. I am starting to plan my Christmas morning menu, as it is only a couple of weeks away. The garlic is sweet and delicious after it is roasted with this chicken.. no vampires were harmed in the making of this recipe! Gluten free 40 cloves of garlic chicken is a delicious way to ward off vampires that are hanging around! lol! The garlic actually turns deliciously caramelized when you cook it and it’s not going to drop your date dead with your breath! However, I recommend that you both eat it lol!
Halloween is next week and this recipe full of garlic is guaranteed to ward off Vampires! Haha! The garlic carmelizes and gets soft. It is perfect to smash into the chicken or mashed cauliflower that I paired it with. You could also smear it on some bread with butter and that would be delicious. I actually have one friend that doesn’t love bacon, but I love her anyway! This bacon braised cabbage and onions is seriously my favorite side dish! It goes great with any protein you are serving and is delicious! People who don’t like cabbage will like this. It is Paleo, Ketogenic and tasty! It goes together super fast and is really easy to make. When my friend Christine comes over, she requests this as a side dish to whatever we are having! I love that she enjoys it! Here’s what you need to make this recipe! You will need one head of either red or green cabbage or a mixture of both. One package of bacon- you need 4 slices. One Yellow Onion. Garlic Seasoning Salt and Pepper That’s it! This recipe is super simple! This is how we do it.. sung to the tune of the Montell Jordan lol! Slice the bacon into bite-sized pieces. Cook them in a skillet over medium heat. You want them to get nice and crispy! Then add in the onion(chopped) and saute it for a few minutes. Add in the cabbage(chopped) and saute it until it starts to get soft. Sprinkle in the garlic powder and salt and pepper. It is ready when the cabbage isn’t too soft or too crunchy. Voila! Gluten free Paella- low carb version is naturally gluten free and delicious! Paella is traditionally made with rice, seafood, chicken and sausage in a delicious tomato sauce. Saffron sets it apart and is floral. This one pot meal cooks quickly and you can easily adjust the amounts of ingredients to feed 2 – 50 people. You just need a bigger pan!
I love cooking Paella because it fills my house with a delicious aroma and that makes me happy! I use cauliflower rice for this version to keep it low carb and keto, but you can add paella rice if you like. It will take longer to cook and more liquid so prepare to adjust for that! You can be adventurous with your ingredients. I have seen paella with muscles, squid, octopus etc. I keep this simple with shrimp, chorizo, and chicken because frankly, my family is a little cautious of squid, muscles, and octopus. If I had my choice to eat it on my own, I would probably add some fun stuff! I recently tried grilled octopus and loved it! I expected it to be chewy but it was perfect! You can cook it in a multi cooker, crockpot (you have to cook the meat first) or Instant Pot! Bolognese sauce is so delicious! Eat it with pasta, zoodles or just by itself. I make this in my multicooker in the morning so it simmers all day. It fills our house will delicious aromas all day. This recipe makes a big batch so I usually freeze half of it for a later date or give it to a friend or family member. This is often my go-to meal to deliver to friends or family when they need a meal. You can also make this recipe in your Instant Pot. The steps are the same except instead of simmering all day, you cook it under pressure and Voila it’s done after 30 minutes! You can put all of the ingredients into your crockpot in the morning and when you are ready to eat shred the pork. You can also cook it in the Instant Pot or a Pressure Cooker! I serve it with cauliflower rice or rice and veggies. Another option is to serve it with grilled veggies or a big salad! It is so versitle! We eat it like a burrito bowl. XO, Michelle Gluten-Free Smoked Tri-Tip with Chimichurri Sauce is one of my favorite smoked meals to make! It was perfect for Father’s Day! I get excited every time I turn my smoker on! I love the big billowing smoke cloud that comes off of it in preparation for cooking! Smoking tri tip is one of my favorite things to smoke! I want to love brisket but I just can’t get it to go the way I like it and I find that tri tip is more tender and my family loves it. This recipe is perfect for Father’s Day! Let’s Cook! Any Dad will love this smoked tri-tip with chimichurri cooked for him with his favorite side dishes! This is how we do it: I cook tri tip for about 1 hour 30 minutes for a 3 lb roast. It’s about 30 minutes per pound. We use a thermometer and take it off when it reaches 125 degrees F hours total. I leave it unwrapped and flip it over once at about the half way point. I also spray it with a mixture of apple cider vinegar, water and coconut aminos. After that, you have a choice. You can crank up your smoker to 450 degrees to create a sear to the outside, or finish it in a pan in the oven under the broiler, or could also sear it on your BBQ grill to keep the heat outside! You just want to sear it enough to get a yummy crust on it. Let it rest for a few minutes then slice it up and serve it with chimichurri sauce and your favorite side dishes. Do you want to make your neighbors jealous with this gluten free smoked tri-tip like I do? XO, Michelle Gluten-Free Seared Duck Breasts are a treat at our house! I love to make them in a hot pan so they sear the skin to crispy perfection! This is usually a special occasion meal, however it happened on a random Saturday with nothing specific to celebrate except family and good friends! I had some awesome duck breasts in my fridge from Hudson Valley Duck Products and was craving seared duck breast wraps. DINNER was so delicious and lots of fun! We swam in the pool with glasses of Rosé, had some appetizers, played with the babies (not ours but our niece and like our nephews), cooked food, drank wine and had a lovely time. We tried a bottle of brandy that had a pear grown inside of it! I imagine the pear tree covered in bottles! What a sight it must be! This was a lovely gift! WHAT DO I SERVE WITH GLUTEN-FREE SEARED DUCK BREASTS? We Julienned veggies and served it with gluten free hoisin, duck sauce and Sirach. If you would like a side dish, rice would be a good addition or cauliflower rice. We used lettuce to wrap the seared breast and veggies in instead of steamed buns to keep the carb count down.
