These gluten free spider eggs are a spooktacular treat for Halloween! How do I make these cute spider eggs? I love making this for an appetizer on Halloween! It is super easy to make and the eggs are a nice protein addition to the sweet filled day! Most kids that I have made these for think it’s pretty fun to eat a spider egg too! You could add eyes to the spiders to make them even more spooky! To make this recipe, you can follow my recipe for Gluten Free Deviled Eggs n Bacon, then just add the black olive spiders to the top! How do I make the spiders? To make the spiders, you will need some extra large black olives. I cut them in half. The half is the body of the spider. The other half was cut into 4 legs. These will be the 4 legs to one side of the spider since spiders have 8 legs. Assemble them on each egg until they all have one body and 8 legs on each egg. I like to roast my spaghetti squash in the oven and cook the bacon at the same time. While it is roasting, I make the alfredo sauce and chop my veggies so it’s all done at about the same time! Here’s what you need to make this gluten free spaghetti squash alfredo: You will need the following ingredients: chicken or shrimp bacon tomatoes spinach a spaghetti squash cream cheese heavy cream garlic powder salt and pepper shredded parmesan cheese fresh basil to garnish if you’d like Here’s how to make it: I like to cut my spaghetti squash in half (remove the seeds) and put a little olive oil on a sheet pan and roast it cut side down in the oven. Roast it at 350 degrees for about 30-45 minutes. It’s done when you can easily poke a fork in it. Set it aside to cool. While the squash is roasting, make your alfredo sauce. You can find my ALFREDO SAUCE recipe here. Chop up the other veggies. When the bacon is finished cooking, chop it up as well. I like to use rotisserie chicken in this recipe, but you can precook some chicken and chop it up too. If you are using shrimp, you will want to precook it too. Carefully, scoop the hot spaghetti squash into a large bowl. I like to use a fork to shred it so it looks like spaghetti. Put the other veggies into the bowl. Add your chicken or shrimp. Pour the sauce into the bowl. Use as much of as little as you’d like. Crumble the bacon on top… I’m drooling now! Garnish with fresh basil! Voila! You are ready to eat! This easy shrimp ceviche is quick to make and is a fantastic appetizer or lunch! It has a yummy citrus flavor with a kick of spice to even things out! You won’t regret making this!
What Is Ceviche? Ceviche is a delicious shrimp or fish and vegetable dish that originated in Peru! You can use raw fish or shrimp that is cured with citrus juice or cooked shrimp or fish like I did in this recipe. I decided to make this cooked shrimp ceviche for the pure ease and convenience of not having to take the time to cure the fish. lol Here is the Wikipedia definition of Ceviche in case you wanted to know more. What Do I Put in Easy Shrimp Ceviche? The best thing about ceviche is that you can add or remove ingredients based on your preference! Here’s what I used in my easy shrimp ceviche: Shrimp- I like medium peeled and deveined with the tails removed. I always check them as I rinse the shrimp to make sure all the poo has been removed. If it hasn’t I remove it. Lime Juice Lemon Juice Orange Juice Roma Tomatoes Red Onion Cilantro Jalapeno- Depending on the spice level of your jalapeño you can add more or less depending on your spice desire. Cucumber- I remove the peel and seeds from the cucumber then chop it up. I find that a teaspoon slid down the cucumber seeds are the easiest way to remove them. Avocado Directions: First, we need to cook the shrimp, since this is a cooked shrimp ceviche. Fill a pot with water and bring it to a boil. Have a bowl with ice water standing by to put the shrimp in once it’s cooked. Put the shrimp in the boiling water until it turns pink- only about a minute- you don’t want to overcook it as it turns rubbery. Once it turns pink, scoop it out with a slotted spoon and put it in the ice water to stop the cooking. Drain the shrimp from the ice water and dry it off with a paper towel. Chop the shrimp into small bite size pieces. Place into a glass bowl large enough to hold all of the ingredients. Add the juices to the mix and stir to combine. Chop up all remaining items and add to the bowl if you are serving immediately. If you want to let the flavors marry do not add the avocado right away as it can turn brown. Add the avocado just before serving. Serve immediately or put in the fridge for about an hour. Serve it with tortilla chips, Cucumber Slices, Tostada, Mini peppers that have been cut in half with seeds removed to scoop it with or whatever your favorite scoopers are. This gluten free creamy broccoli salad is a delicious lunch, dinner or side dish!
Whenever I make this Creamy Broccoli Salad I think of my Auntie Jo Ann. I can remember her making a similar version of this when we would visit her. I think it has the perfect flavor combo of salty and a little sweet! Salty from the bacon and sunflower seeds and sweet from the grapes. MMMM
I like to make extra bacon when I am cooking it in the morning so it’s ready for this salad at lunch or dinner time. I know who has extra bacon right…..It’s a struggle for sure to save 8 pieces! This salad is one of the only ways I can get my hubby to eat broccoli! He really isn’t a fan but loves it in this creamy broccoli salad! Which is a bonus reason to make it! What You Need To Make This Creamy Broccoli Salad: You will need the following yummy ingredients to make this salad: Red onion Red Wine Vinegar Mayonaise- I use Sir Kensington’s or Primal Kitchen Broccoli Florettes Bacon Grapes- omit for keto. Sunflower Seeds Shredded Cheddar Cheese- omit for paleo and use dairy free cheese if desired for dairy free. Salt and Pepper Plus a bowl to mix it in, a pan to cook the bacon in, a spoon to stir it with, and a knife and cutting board to chop things with.
Here’s How I Make It:
In a bowl large enough to hold all the ingredients, start by making the dressing. The dressing is 1/2 cup of Mayo and 2 TBSP Red Wine Vinegar plus a little Salt and Pepper. If you mix the salad ingredients together and want it creamier, simply mix more mayo and red wine vinegar together and stir into the salad. If you haven’t pre-cooked the bacon, cook it now. It needs to be crispy for this salad. I think it should always be crispy, as I don’t love soggy bacon, but that’s my opinion. Hehe! I cook my bacon in the oven on a foil-lined baking sheet so I have easy clean-up. I like to buy the already chopped and washed broccoli florets in a bag. You can use either the whole broccoli or the bagged variety it’s totally up to you! I am mostly just lazy and like convenience most days. Haha! Open the bag and chop any really big pieces of broccoli. Once they are the size you like, put them in a bowl. You need about 3 cups. Chop the red onion into small pieces. You only need about 1/4-1/2 cup. Place them in the bowl too. Wash and cut the grapes in half. You need about 1/2 of a cup. Into the bowl as well. (If you want to keep it keto, leave the grapes out of the salad. It is just as delicious with it!) Measure out 1/4 cup of sunflower seeds. Put them into the bowl. Break up the bacon into small pieces, or chop with your knife. It can join the rest of the ingredients in the bowl. Stir it all together and Voila! That’s it! I love this salad because it keeps well in the fridge and I love it even the next day.

The holidays are quickly approaching! If you are looking for holiday side dishes try my air fryer bacon Brussel sprouts! They are crispy and delicious. Not to mention easy to make.
If you are cooking for a large crowd, try my oven-baked Brussel sprouts that are equally delicious and you can make a larger amount at once. You can add the mushrooms to this recipe or leave them out… it’s up to you! What You Need to Make These Air Fryer Bacon Brussel Sprouts: Brussel sprouts Thin cut bacon Balsamic Vinegar or reduction An Air Fryer. I have the air fryer lid that goes on top of my Instant Pot! I love it especially for just 2 people! Air fryer bacon Brussel sprouts, I refilled the air fryer basket twice to make sure they all got crispy! How Do I Make These? Start by washing and drying your Brussel sprouts. Cut them in half. Chop up the package of thin cut bacon. I like medium sized pieces because the bacon gets crispier in the air fryer. Put the Brussel sprouts in the air fryer basket. Put the bacon in the air fryer basket. Drizzle a little balsamic vinegar over the top. Sprinkle with Salt and Pepper. Turn the air fryer on for 4 minutes at 400 degrees. After it is done, use tongs to flip the food around. Turn the air fryer on for 4 more minutes at 400 degrees. After it is done, they should be crispy and delicious! Serve with your favorite protein. Here’s The Easiest Way To Clean Your Instant Pot Air Fryer: I love my instant pot and the air fryer lid that goes with it. The best part is it cleans up really easily! You can soak the basket with a little soap inside the instant pot bowl. Or you can put them all in the dishwasher! This Gluten Free Mediterranean Chicken Salad makes me dream of eating it overlooking the Mediterranean Sea! My daughter requested a recipe for my mediterranean chicken salad so this is for her. As a foodie Mom it makes my heart happy that both of my girls like to cook and are pretty darn good at it! It’s super fun to watch what they make and honestly we send each other food pictures… totally nerdy I know! But I love it. I know most of the world is eating everything pumpkin but it’s still almost 100 degrees in Arizona and it doesn’t feel like fall yet… unless you are up at the crack of dawn and then it’s beautiful outside. Just ask my hubby! lol I love this Mediterranean chicken salad because it is a fast lunch or dinner and most of the ingredients are staples in my kitchen so that makes it easy. What Ingredients Do I Need To Make This Mediterranean Chicken Salad? This is what I love to put in my salad, however if you don’t like anything you can leave it out or substitute it for your favs! Chicken breasts Greek Seasoning S & P EVOO Balsamic Vinegar Garlic Cucumber Tomato Red Onion Roasted Red Peppers Feta Arugula Kalamata Olives Artichoke Hearts To start off this recipe, you will need to cook the chicken. Put the chicken breasts in a baking dish that you have drizzled with olive oil. Lay the breasts in the pan. Drizzle with a little balsamic vinegar. Sprinkle with greek seasoning and S & P. Bake in a 350-degree oven for about 30 minutes or until they reach an internal temp of 165 degrees F. While the chicken is cooking, I like to start on the chopping of my salad. I start with kitchen shears and the arugula, so the pieces aren’t so big. Lay the arugula in the bottom of a bowl. Use kitchen shears to chop it up a little. Arrange the rest of your chopped ingredients into sections on top of the arugula. Make a simple dressing in a bowl of EVOO, red wine vinegar, greek seasoning, garlic powder and S & P. Whisk it all together. Once the chicken is cooked, slice it into pieces and arrange it on your plate. Serve with the salad. You can toss the salad so you get a little bit if each topping…. unless you are like me and just want to eat feta lol. Are you looking for a low carb or keto side dish? Look no further than my Chipotle Cilantro Lime Cauliflower Rice! This is so flavorful and is a great addition to any main dish. I just made this a few days ago and paired it with my Honey Chipotle Lime Shrimp! It was so yummy! I made enough so I could have it for lunch the next day and it was gone! No ready to go lunch for me! HAHA! I love when I find recipes that my family devours! This will for sure be on our regular rotation! It’s super weird to start thinking of only cooking for 2 people in a few months! We are about to be empty nesters.. crazy thought! What do you need to make this cauliflower rice recipe? This cauliflower rice recipe is super easy to make! You only need a few ingredients and it is ready really fast too! You will need 1 bag of frozen cauliflower rice. I used pre-made for the speed this time. 1/4-1/2 tps of Chipotle Pepper Seasoning. If you don’t like it spicy I would use less. If you like it spicy you can add more! 1 lime- juiced and zested S&P A little drizzle of EVOO or Avocado oil. Boom- super easy! This gluten free medium-rare strip loin rost is full of flavor and perfectly cooked- IMO! I had never heard of a strip loin before it came in my Butcher Box, but that is because I am not really good with what different cuts of meat are called. I decided to cook it in the oven, similar to how I make my oven prime rib roast and it turned out perfect! Use an internal meat thermometer so you can take it out as soon as it is medium rare.
I have been making a lot of holiday treats with more sugar than we eat all year, so I try to balance out our day with a nice protein for dinner with some lower carb veggie. For our family it’s all about balance! Why Do I order my meat? I order our meat because I want high quality, no hormones or antibiotics and humanely raised. I think grass fed is better tasting and better for our bodies because there are more nutrients and there is less risk of e Coli and other things. You can read all about it from Bulletproof Blog. They wrote a series about the benefits. How Did I make this roast?This strip loin roast was pretty easy to make! If you didn’t want it as a roast you can cut it into steaks to and BBQ them. I think it’s the same as a New York Strip then? Here’s how I did it: Take the meat out of the fridge for about 30 minutes before cooking. Turn your oven on to 450 degrees F. In a shallow baking pan drizzle a little Avocado oil. Rub your roast with Salt, Pepper, herbs and Garlic. You can use what ever seasonings you like. Insert an oven thermometer so you know when to remove the roast. I will post the one I use in the Amazon section below. Place in the roaster fat side up. This helps keep everything juicy while cooking as the fat can drip onto the meat. Can you say YUM!!! Place the roast in the oven and cook at 450 for 15 minutes. This will form a nice crust and make it really yummy! Reduce the heat after 15 minutes to 350 degrees. Continue to cook until your meat thermometer reads 130 degrees for medium rare. Remove from heat and let the meat rest for 15 minutes before slicing. Remember to slice against the grain of the meat to keep it tender. Serve with your favorite side dish! Enjoy! It also has a delicious sauce to go with it! I had so much fun making this sheet pan salmon with delicious sauce today! I was blessed to cook with my friend Terah Lake! You can check out her fashion blog! She’s so beautiful inside and out. I just love her. This salmon is so easy to make, you literally just throw it on a sheet pan lined with foil, so you don’t have to do dishes, and bake it. The DELICIOUS sauce is fast and easily made in the blender! If you have leftover sauce save it for your salad dressing. I love salmon and veggies with yummy white wine, garlic, and lemon sauce. It’s so light and delicious. I am so ready for fall but meals like this have me hanging onto the last of summer. I am thankful to live in Arizona, we have awesome weather when it’s not summer, but I miss cool crisp fall mornings just a little. So this salmon dish is perfect if you are like me and teetering between wanting to give up summer for fall! Our temperatures are in the mid to high 80’s this week so that is the motivation for the summer feels.
